Even moms need a back to school prep! My oldest goes to First grade tomorrow. Normally I would be a total stress ball with balancing my toddlers schedule and my sons. I also need to stay on track while finishing summer strong. I prep my hard time meals meaning the time I would be hungry and need to reach for something quick. Also if I’m out I can grab one sad and go. Do you prep your meals? I know I’m not that cute bento or pretty container kind of girl. I also like to prep as I make. So I make on salad and divide it up into two more or one more depending on the freshness that it can hold.
How to make a salad complete.
1. Pick your base: greens- spinach, arugula, romaine, or spring greens
2. Pick your veggies greens: bell peppers, cucumbers, or carrots, etc.
3. Pick your protein: legumes, meat, or veggie patty.... 4. Healthy Fat: Cheese, hummus, avocado, or even nuts
5. Make it sexy: add some great seasoning, dressing, salsa, guacamole and seeds.
Sometimes making it look pretty is what makes you want to eat it that much more!
A huge cup of chai and fried veggie rolls is the perfect way to end a great sun set . These veggie rolls are great to sneak in some healthy vegetables 🌶🥦🥒🥑🍆🥕🥔🍠🍅 🌽 ... prepare it ahead and freeze them ... and there you have a quick snack.
Spending my Sunday attempting the 1000 calorie challenge again with @timmstime. It’s been a while since I put myself through this but trying to make my workouts fun and challenging in anyway I can at the moment. Sometimes you can walk into the gym with all the best intentions but then just feel like your walking around trying to find your plan. Pre planning, just like meal prepping is key to me having routine. I need to have a plan for the week to make sure I prioritise myself, workouts and progress. Otherwise I’m sat having ‘just one drink’ after work and eating badly through the week. .
Fail to prepare, prepare to fail! .

Low Cal Beef Noodles Stir-fry
Serves 4 people
Prep Time: 5min
Cooking & Serving Time: 10 min
*note cooking time may vary
1 x Tbs Coconut Oil
500gm x Beef Strips (Purchase pre – sliced)
½ Tbsp x Garlic (Sliced)
½ Tbsp x Ginger (Sliced)
½ Tbsp x Chilli (Sliced)
1 x Small Onion (Sliced)
1 x Small Red Capsicum (Sliced)
300gm x Asian Greens (Purchase pre – sliced)
2Tbsp x Coriander (Chopped)
½ Cup Spring Onions (Sliced)
100gm x Bean Shoots
1 x Cup Seasoned Soy (Lee Kum Kee Brand)
2 x Lo-Cal Noodles (Wok Ready – Drain and Rinse)
1Tbsp Sesame Seeds
1. Heat a Wok pan (or Fry Pan) till steamy hot, add ½ of the coconut oil and sear the beef. Put beef aside to rest.
2. Keep pan on the heat and add the rest of the coconut oil. When hot begin to add garlic, chilli and ginger, follow with onions, capsicum, Asian greens. When all ingredients are well sautéed add the beef strips, coriander, spring onions, bean shoots and soy sauce.
3. When all ingredients have cooked well add the noodles and sesame seeds and serve!
