Chinese Lettuce Wraps (生菜包)
Normally Chinese prefer to quickly stir fry vegetables keeping their crunchiness instead of eating them raw. However this unusual dish originally from Hong Kong uses fresh lettuce. It brings together a tasty combination of textures and flavours: tender minced pigeon, soft roasted pine nuts, savoury-sweet spiced hoisin sauce and crunchy deep fried mung bean noodles, all wrapped in crisp iceberg lettuce leaves. Since pigeons are not easily sourced at grocery stores and I did not feel like hunting pigeons outside, I adapted the recipe replacing the pigeon by chicken meat… which proved to be equally delicious!

This Southern Chinese dish is perfecly paired with a Pommard Premier Cru 2013, a superb red Burgundy: medium bodied, round and fruity, disclosing ripe raspberries, red cherries, oak and liquorice notes, framed by silky tannins and a pleasant, longlasting finale.

Two wines from each of Meursault, Beaune, Pommard, Volnay and Vosne-Romanee. For me, the V-R showed the best here (Montille and Cathiard).🍷

Maison Leroy Pommard 1er Cru Les Epenots 1984....i got the vintage quite well...but i am thinking of 85 Gervrey Chambertin 1er cru....so earthy, black tea, very piedmonte nose but silky mature texture....more sweet berry palate.
A pair of Sylvain Cathiard NSG Thorey 08, 14. Actually both bottle more advanced.then i expected...when i know the answer...i expect more sharp acidity from these 2 vintages....but they show more ripeness and maturity then i expected the 08...i am thinking of 99 Chambolle, the 14 i am thinking of 05.....both give me the more maturity then i expected.
A pair of Vogue Chambolle 1er Cru, 97, 13. 13 was.very.floral, very delicate and feminine chambolle during my first taste, but gain a lot of weight after breathing.....more oaky, ripe cherry....cant get the right direction coz of the first impression....the 97, very signature.greeness from weak.vintage, nice oakiness weight, aftertaste...a superb weak vintage......still i am never fan of Vogue Chambolle...but this is really nice.
Dugat Py Gevrey 1er Cru VV 2012, I bring a monster...old school, intense earthy and ripe fruit favor, my friend get the very nice answer from the 1st.try...a unique character, just fall in love with this intensity, but yet approchable!

Comte Armand Pommard 1er cru Clos de Epeneaux monopole 2011. Drinking beautifully now. Soft and gentle. Red fruited bouncy round juice that is berry elegant! Lovely tonight.
Berthaut-Gerbet Vosne 2015. Big and warm... a ‘15 indeed! Needs time we think.
