It’s very hard for me to ever follow a recipe exactly. If anything, they can always be major sources of inspiration. For example, today I decided to make cauliflower steaks after being inspired by the most recent recipe booklet I got from @purplecarrotxo. I kind of took my own path but stuck to the core principles of the recipe. The major difference, subbed in more whole food ingredients and added a few of my favorite spices. Feel free to take the following recipe to inspire your own meal or feel free to find the original recipe on the Purple Carrot website. 🙌🏽 I paired my cauliflower steaks with some brown rice, sautéed spinach, asparagus, and butter beans (cooked with some garlic powder and red pepper flakes). Topped this all off with a drizzle of my favorite tahini. ❤️
1 head of cauliflower, 1 inch of stem removed and cut into 1 inch slices
3 tbsp tahini
2 tsp soy sauce
1/2 tsp garlic powder
1 tsp smoked paprika
3-4 tbsp water
Fresh cracked pepper🌱
Set oven to broil on high. Prepare glaze for cauliflower by combining tahini, soy sauce, garlic, paprika and water. Mixture should be thick enough to cover the back of a spoon. If too thick add an additional tbsp water. Using a spoon or brush, cover cauliflower slices with sauce in both sides. Set pieces on a lined baking sheet and top with a few cracks of black pepper. Place baking tray in the oven and allow to cook for 20 minutes (do not open oven during this cooking time). Once done, remove from oven and allow to cook for 5 minutes before serving (though this waiting part was really tough for me). 🤤
Painting in the apartment and a broken stove = take out. Sushi as always. Cucumber avocado rolls are my favorite. Going away for a few days tomorrow so I’ll be able to get back into the kitchen and get some recipes up. It just seems like one bad thing after another and ugh Summer just needs to be over!!! However, these sushi rolls seem to hit the spot 💯 hope you all have a great day!
🌱💪🏼 As a medical doctor Garth Davis sees first hand the devastating effects meat and dairy have on our health and advocates a whole food plant-based diet. But a plant-based diet isn't only the best diet for our health.
We know a plant based diet is the only diet ever proven to prevent and reverse heart disease [Ornish/Esselstyn], the number one killer in the Western World, causing an average of one death every 40 seconds in the US alone [American Heart Association data], as well as vastly reducing our risk for diabetes, hypertension and cancer.
But it's also the best diet for the environment - Studies indicate that a varied vegan diet requires about a third of the land needed for conventional Western diets [UN FAO]. And a recent UN report stated "A global shift towards a vegan diet is vital to save the world from hunger, fuel poverty and the worst impacts of climate change."
"As the global population surges towards a predicted 9.1 billion people by 2050, western tastes for diets rich in meat and dairy products are unsustainable." said the report from the United Nations Environment Programme’s (UNEP) international panel of sustainable resource management.
Emissions from the production of beef and lamb are 250 times higher than those from legumes, per gram of protein, and pork and poultry are 40 times higher than legumes. A large amount of methane and nitrous oxide, gases that are more than 20 times and 250 times more powerful than carbon dioxide as a greenhouse gas, are generated through livestock-raising activities. [UN FAO]
And it's a lifestyle that seeks to minimise the impact on the fellow Earthlings we share the planet with as much as is possible and practicable - i.e. avoiding eating them.
If we could be lead healthier lives without causing unnecessary suffering to other animals, then why wouldn't we? It's pretty simple - and more and more people are catching on - veganism is rapidly growing around the world.
lunch today was a serve of this quinoa with a tomato based sauce, mushrooms and olives. I also decided to serve it with a simple salad consisting of mixed greens, tomato, olives, avocado 🥑, cucumber and capsicum ☺️
Trying to get my pasta game strong before winter comes and hibernation starts! For this recipe, I used @eatbanza chickpea pasta, it’s high in fibre and protein and is gluten free for those of you that must adhere to a gluten free diet! ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
For the sauce I sautéed some onion and garlic together. To that I added a diced tomato, nutritional yeast, red chilli flakes, Italian seasoning, s+p and a little bit of vegetable stock and let that cook down. I added zucchini and spinach to the mix, added my pasta and topped it with some fresh basil!
Tip: don’t rinse your pasta! And save some cooking liquid to add to sauces, it helps to make the sauce stick better to the pasta!!
Often times I get asked...do you eat only fruit? Absolutely not! I LOVE fruit for the VIBRATION, LIVING WATER AND ASCENDING ENERGY and definitely have streaks of only eating fruit for detoxification and SUPER HIGH VIBES! But don’t get me wrong a lot of my nutrition comes from a few choice superfoods, whole food type supplements and epic salads like these! 32 ounces of PURE LIFE! Nicole & I have been having a Lemon Ginger Blast (recipe below), which is over 15 servings of veggies/herbs, for the last 4 weeks & the results have been such a blessing.
Not only are we detoxing & hydrating our bodies with living water & minerals, but we’re even experiencing physical (aesthetic) benefits as well. For example, I was starting to get really bad liver spots on my face due to a ridiculously toxic past life & an overtaxed liver. Now, after lots of green juice, living foods, & almost cutting alcohol out completely, the sun spots are almost gone now! And this is just the beginning. I honestly never knew the extent to which food could be used as medicine. Now it’s my firm belief that food IS medicine. These living foods literally reverse aging and regenerate the entire body.
Trendy diets will have you believing that foods that carry almost no vibration at all (dead meat, dairy, processed/highly cooked foods) can heal you the same way, but they CAN’T! They never will. I work at a yoga studio and last night I met Jim. Jim is a sweet man in his 70s devoting his life to climate change. He works lobbying the government to begin subsidizing clean energy and penalizing fossil fuels and co2 emissions. He invited me to some of the groups he meets in and said "Don't feel obligated to go, I know you're probably too busy." That struck me because, honestly, I am but I'll still go. But I realized everyone I try talking to seems too busy to care. Sometimes we feel like everything is moving too fast to slow down and care about something, learn about something, think thoughtfully about something. Jim and I mentioned how destructive that is in this new condition we as humans have created for ourselves.
🌍 I told him being #vegan is one of the things I do to fight climate change because animal agriculture is the most polluting industry on this planet. Raising animals and producing dairy emits more greenhouse gases (50%+) than all of the transportation on the planet combined (13%).
🌍 By 2050, scientists estimate that the oceans will be fishless, as well as other disastrous things. If you think, "we need to fish sustainably" or "oh no, I won't be able to eat fish," think bigger. Animals, fish, plants, clean water, healthy soil, clean air is all essential for an ecosystem. We need to leave nature be. Stop raising animals for food. But most importantly, stop purchasing these products that are so blatantly destructive. Take a stand! This is your home. OUR home. 💚

I keep taking these big gaps of forgetting all about this account and then getting super excited about it again — i don’t really know why, maybe i get distracted easily! but alas, i found you again and i’m glad i did because this is MY version of sunshine! — you and plant based food and sharing ideas and suggestions from things I’ve found and loved :) so i hope you’ve been well, and here we go again!!
