My kitchen has been almost closed last two weeks because of my little one's 'half-day' summer camp. I didn't have time to cook, do laundry and even look at the phone. 😆 I realized again I am not young any more.
My go-to easy, quick and filling dish for busy day is using grains.
I mixed rice with red bean, mushroom, and hemp seed and caramelized eggplants and my last bean sausage on the side.

I added a few drops of my Peppermint vitality oil to the dough 💙

Summer Veggie Bowl

I call this my summer veggie bowl. No hot broths, just a bowl of colorful veggies, pan fried tofu & mung bean noodles serve at room temperature w/ sesame tahini vinaigrette. The tartness in the vinaigrette serves to stimulate ones appetite in this hot weather.

When you’re taking a morning selfie cause you’re 6 weeks out and excited! But then your hair falls in your face, feeling like The Ring or The Grudge 😂
So many don’t know but I have always been pretty obsessed with running (5ks to ultras) and living in the gym for conditioning work since before high school. I have posted about my diagnosis with Spina Bifida Meningocele, which use to make me self conscious of showing my lower back. Through fitness, I have found a different type of confidence. I will not be limited. I will step on stage in New Zealand and I will not let my diagnosis define me. I will work hard if not harder to show I am capable, and I will not give up because of a birth defect that was out of my control.
I am also excited to represent @teamedge1 in the Southern Hemisphere and I have actually got people telling me they are happy to see more Team Edge on this side of the world!

First ever baby white sage volunteer! This little guy lifted my spirits above the nasty smoke inversion that's got us all choked up from the #fergusonfire Reminding me life is so resilient and pushes through; even through clay soil, no irrigation and against all odds. We've also had a mama deer with two fawns hanging around throughout the fire and I'm so glad they are finding some peace with us. As things are chaotic and uncertain all around, I keep coming back to the peace within. ⠀⠀

I had a coconut chia jar and a cardamon brownie as well as bottomless coffee. Everything was so delicious but I def had too much coffee as I was SUPER buzzed 😂

We ordered this ridiculously good looking Antipasto plate, Italian "meat" balls in a rich tomato sauce, pumpkin risotto, spinach and "ricotta" ravioli and a mixed salad.

🍑 Peach and Arugula Salad 🥗
🥜1/3 cup walnut halves, toasted
🍑1 ripe peach, peeled and cut into bite sized pieces
🍃4 cups of Arugula
🧀1/3 cup Goat cheese, crumbled
🌱Handful of fresh mint leaves, torn into pieces
🥣1/4 cup extra-virgin olive oil
🥄1 1/2 tbsp Balsamic vinegar
🍯1 tbsp organic raw honey (Trader Joes)
Salt & Pepper to taste
Place Arugula is medium size bowl and toss with enough dressing to coat. Sprinkle with fresh mint leaves. Top with peaches, walnuts and goat cheese. Enjoy!

Tried @minimalistbaker recipe for coconut curried golden lentils & I’m really thinking this is about to become one of my staples because it’s so good & so quick & easy! 👍🏼🤩 it’s also super tasty with a dollop of plain vegan yogurt on top 👌🏼
I call this one Eazy Cheezy Capreeze. Whole wheat rotini, sauteed spinach and grape tomatoes (In coconut oil) with my favoritest: NOOCH 🧀🧀🧀 salt, peppa, and garlic powder to taste 😎✔ I am ALL about simplicity. Macros in the first comment if you're interested!
In part ✌️of making veggies taste nothing like their original form: I present to you the the savory zucchini galette. I filled some leftover GF dough with zucchini, ricotta, a touch of mozzarella (to keep I melty and cheesy) and garlicy olive oil and I’d say it might be even better than its savory counterpart. Easy to make ahead of time and serve with cocktails for weekend entertaining! 🥧 🧀 🥒 .
