As a child, I loved going to the local diner. One of my favorite sandwiches to order was the BLT. Since embracing vegetarianism in 2003, I haven’t had my favorite. Here is the classic BLT with vegan twist! Vegan mayo, tempeh bacon, lettuce, and tomato. Nostalgic and delicious!

dEATs: instant oatmeal pack + 2 tbsp ground flaxseed + blueberries + banana + peanut butter⠀
Happy Thursday! I've been eating all the cozy oatmeal bowls lately and it couldn't make me any happier 😍 ⠀ .⠀ .⠀ What are your favorite cozy morning breakfasts?⠀ .⠀ .⠀ dEATs: instant oatmeal pack + 2 tbsp ground flaxseed + blueberries + banana + peanut butter⠀
Home made black bean falafel on a bed on salad 🥗💪🏻.
Recipe (makes about 12-15 falafels): Ingredients:
1. 1 (400g) can black beans, drained and rinsed
2. 1/2 red onion diced
3. ½ cup coriander leaves
4. ½ tsp garlic powder
5. ½ tsp cumin powder
6. ½ tsp chili powder
7. ¼ lime, juiced
8. A pinch of salt and pepper

Instructions:
1. Preheat the oven to 175 deg C.
2. Pop all the ingredients into your food processor and blitz until the mixture is combined but still slightly chunky.
3. Form small balls, flatten and place on a greased baking tray (you can use an ice cream scoop if you want, but I just used my hands).
4. Bake for 15 mins on each side.
5. Serve on a bed of salad and top with your favourite salad dressing.

The evidence: Seventy-five overweight adults randomised to eat a healthy whole food plant-based diet or to continue on their standard diet for 16 weeks. During the 16 weeks, they were very carefully monitored for dietary intakes, body weight, body composition and insulin resistance

The group who continued as before did not lose weight, no surprise there! But the plant-based dieters lost an average of 6.5kgs (14 lbs), including 4.3kg of body fat (9.5lbs) and significantly reduced their insulin resistance

Statistical analysis showed that the more carbohydrates the dieters consumed, the better their results. The statement that “carbs help you to lose weight” sounds controversial, but it should not surprise you. On the diet plan, 70% of calories came from carbohydrates. But these “carbs” were whole grains, legumes, fruits and vegetables. These fibre-rich foods increase feelings of satiety, promote a healthy microbiome, reduce appetite and aid blood sugar regulation by multiple proven mechanisms

Some other noteworthy points: Dieters were provided with just one hour of instruction per week; there was no calorie counting and no limits set on portion size, all but one of the dieters was able to maintain the diet for the whole 16 weeks (one person had to leave due to a family emergency)

This paper provides further strong evidence that effective weight loss does not require a low-carb, high animal protein diet and also shows that when the diet is whole food plant-based, motivated overweight dieters are able to stick with the programme and see really beneficial results!

Dinner last night was fire!!! I’m usually the kind of person that makes ten minute meals because of my schedule however... when I’m craving something that takes a little longer to make I try to get it done earlier in the day! I made this in stages, first the lentil stew in the morning while eating breakfast, second the mashed potatoes in the afternoon after working out, and when I got home from teaching it was ready for me to pop in the oven! It’s a lentil shepherds pie with mushrooms, carrots, garlic, onion, French spices, red wine, and mashed potatoes! For the potatoes I used homemade cashew milk, @kitehillfoods cream cheese, and @miyokos_kitchen butter. I’m definitely making this again and will post a step by step recipe on my stories! .
