***Accidents Vegan Alert***
I’ve always thought about switching to a plant based diet but was too unmotivated to stick to it. Recently though, handling raw meat has started to make me feel disgusted. I’ve also started feeling sick to my stomach after the first couple bites of any animal product. So much so that I’ve thrown food out mid-meal. So this happens again yesterday and I realized I need to become vegetarian. Come home, watch “What The Health,” on Netflix and accidentally became vegan!

Eat more veges!
Did you know that vegetables especially leafy greens contain the highest amounts of nutrients per calorie among all foods? .
Whether you are trying to lose weight, pack in more nutrients, detoxify or cleanse your body or simoly live healthier, vegetables and leafy greens are your best friends.
Here are different waya in which I pack in more veges into my meals - - Green Smoothies - with base of either fruit or vegetable and a bunch of greens
- Chutnies - Raw salads with lunch and dinner - Veges mixed with Roti dough - Soups
Whenever I eat a meal out (which is not as clean and nutritious as I'd like it to be) I make sure the next meal contains mostly vegetables and, trust me it helps balance out everything in the body. .
And you, how do you best like to increase your vegetable intake for yourself and family?

Vandaag een ‘need to have’ voor in de koelkast:Tofu!
Tofu is een product gemaakt van sojabonen en bevat meer nuttige eiwitten dan kip. Ideaal dus als vleesvervanger. Tofu kan je op allerlei manieren klaarmaken. Wat ik vaak doe is ‘scrambled tofu’, een variant op de scrambled egg. Erg lekker en snel klaar. Het product is bij elke supermarkt verkrijgbaar.

I have made many different plant-based taco bowls, but this one was by far my husband’s and my favorite. I made spicy lentils inspired by a @forksoverknives recipe (using @bree_8_bananas taco seasoning recipe - thank you so much for finding it for me after I lost the bookmark to it, Bri!), which turned out so delicious! In the bowl, I layered shredded Romaine lettuce, red cabbage, carrot, and red radish, julienned jicama, cherry tomatoes, and crimini mushrooms that I marinated for a couple of hours in coconut aminoes, lime, and taco seasoning. Topped with the lentils, avocado, and my trusty creamy low-fat cilantro dressing, it was a home run, first swing! This one is going to be on repeat all winter long.

I love studying plant-based nutrition and teaching others the lifestyle. BUT, food is secondary when it comes to health. It's very important but it will mean nothing if you are unhappy and stressed.

A picture I snapped last weekend when we went to pick out our Christmas tree. It was spontaneous, but wonderful. Often times those are the best memories you make.
This morning at church we had the sweet blessing of listening and watching the Refuge Strength Children Choir perform on stage. It was a joy to see them sing, dance, and praise the Lord so cheerfully. Hearing and seeing the stories and pictures of what they had experienced in life and what other children are suffering through was a tear jerker though.
It even got to my husband, so without me saying anything, even though I wanted to do it, he showed me a child he wants us as a family to sponsor. I am so excited that snow couldn’t keep us from church and that this program gives us the possibility to exchange letters and even send presents to the child.
This is not a “we are doing some good” post, but I just wanted to share how rich it truly made us feel and how eye opening it is to how many things we take for granted (running AND hot water, hello!)
I am grateful that even though I do not deserve it, I get to live the life I do and it makes me not want to take those moments we have as a family take for granted and use the resources we are given to bless others and to shine the light of Jesus in our daily life and be just as joyful while praising our Savior.

5 years ago, I hit bottom.
At that time, I'd been a slave to the scale for 4 years.

I became insecure... obsessive... lost...

If it weren't for the fear of losing him, I may have never changed. That day, I finally surrendered. I finally stopped trying to figure it out on my own. I FINALLY started the real transformation I'd wanted from the start.

Looking back at 2018 like...
This year certainly hasn’t come without its fair share of heart break and challenges.
I still miss my puppy every day, and I don’t think that hole in my heart will ever be filled. 💔💔.
But 2018 has also brought a lot of joy... with baby Pokey growing and getting ready to be earth side early in 2019.
Professionally I have also achieved a lot... including speaking at World Vegan Day, contributing to The Australian Vegan Magazine, Livekindly, Plant Based News, writing 4 recipe ebooks and 2 #vegan transformation programs, doing countless free vegan challenges to help people adopt a healthy #plantbased lifestyle, coaching some absolute superstars, helping Matt with his side hustle which turned into his full time project Herbidoor... which may just go Australia wide in 2019 (stay tuned 😉😉)... plus so much more.
It certainly hasn’t been an easy year, and I can say that when I started 2018 I had no idea it would turn out this way. I didn’t really achieve what I set out to, but at the same time I accomplished so much more. The universe had other plans for me this year and it’s not quite over yet.💫💕.
It’s great to have goals, but don’t get so fixated on them that you don’t open yourself up to other amazing experiences and opportunities.
There’s a great song that says it best...
You can’t always get what you want.
But if you try sometimes you might find... you get what you need 😉.
