Not pretty but first time making homemade vegan mashed potatoes and literally taste like the ones my mom made growing up! So happy and really easy to make. Below is the recipe if you wanna try it out 👍🏻😊
3lbs russet potatoes
1/3 Cup diced onion
5 large garlic cloves diced
1 1/3 Cup vegan butter. We only used a 1 Cup.
4 Tsps almond milk
Chop up the potatoes and boil them. While that’s going, sauté the onions with garlic for 5 min until onion is translucent. Once finished w/ sauté add in the blender with almond milk into a paste texture. .
Once the potatoes are boiled, add to a huge bowl and mash them. Add the garlic/onion mixture along with vegan butter. Add 1 teaspoon of salt and pepper! And yum 😋

These Cinnamon Protein Balls were f’ing delicious. Good for a snack on the go. Thanks @cottercrunch and @pinterest
1 heaping TBSP ground cinnamon
1/4 cup (around 65-75grams) Vanilla Protein Powder
1/4 to 1/3 cup maple syrup or honey if you are not vegan.·
1/2 cup almond meal or peanut flour (you can also just finely grind raw almonds) ·
1/4 to 1/3 cup nut butter (creamy no stir works best)
3/4 cup of gluten free quick oats or gluten free cereal of choice
1/2 tsp to 1 tsp Vanilla extract *Grind up your oats or cereal in a food processor and transfer into a mixing bowl. This is optional. You can keep them whole as well and adjust the addition of honey.
*Add your almond meal, protein powder, cinnamon, and nut butter. Stir ingredients all together. *Add in your honey and vanilla then mix again well with hands. You might need to add more honey or nut butter if batter gets to dry. See notes.
*Roll into 1-1.5 inch balls and place on cookie tray or plastic ware with parchment paper underneath.
*Let them freeze for 20-30 minutes then transfer into a Ziploc bag.
*Dust with additional cinnamon and vanilla protein if desired.
*Keep in fridge or freezer for up to 6 weeks.
