Goodbye mocktail, hello spirit free 🍸 There has been a redefinition of non alcoholic drinks in NYC. As don’t you think the term mocktail evokes negative feelings as it’s basically calling it a fake cocktail. I think spirit free is much better what do you think? When creating drinks for a group of people, I find that the challenge is in making everyone happy. The desire to have something for everyone runs deep in my veins, so when asked to create a drink for Williams Sonoma, I was eager to make something that would be great for the individual and for the group.

Carrot, Orange, Lemon, Pineapple Ice, Fever-Tree Ginger Beer.
Served with carrot ribbons and fronds, thyme sprigs, and grated cinnamon.

This is Starlight, a zesty spiritfree, than may be served tall or short, with or without the cinnamon, and serves as a beautiful base for the cocktail, Starbright.
To create Starbright, simply add a dash of Angostura aromatic Bitters and a splash or a pour of your spirit or modifier of choice. I suggest Japanese gin (Nikka, Suntory Roku, or Ki no Bi), Vermouth (Dolin Blanc, Carpano Dry, or Noilly Pratt Ambre), or Sake (Joto Junmai, Tensei Tokubestu Honjozo, or One Ten Yamahai Junmai Ginjo Purple).
Honestly though, just have fun with it!
