Why the PHO is it purple? 💜🍲 Funny story really... I was amidst making broth for chicken pho when I decided to clean out the fridge. I found some veges that weren't going to be eaten, so on a whim, I threw them into the pot so as not to waste. Cut to a few hours later, I find my pho broth a much darker color than normal. Tastes the same, but definitely a grayish color, but no big deal. To my #SOUPrise , when I squeezed my lime into my spoon, the broth turned a beautiful purple color. And thus, #PHOrple was born! 💜

Voilà, my ribs pho. The rib meat just fell off the bone when I bit into it. I love making my own pho because I know what went into my broth. It’s time consuming though, esp the way I did it. First I used tons of beef & chicken bones to make my broth, with charred opinion and simmered overnight. The next day I drained out the bones, quickly roasted the seasoned beef ribs & shanks before dropping them in the broth to cook for a couple more hours. I then fished them out, set aside and marinate them with fish sauce (since some of its flavors have been released into the broth). The pot went back in the fridge overnight so in the morning, I could scoop out the 1/2” thick layer of fat on top. Man, I shudder to think this much fat would go in my body and clog up my arteries. So all that fat got discarded, and left just a table spoon of it for flavor. The pot was then back on the stove where pho spices, seasoning, and charred ginger went in for 30 min, while my fresh herbs and garnishes got chopped. I then used vacuumed packed fresh pho and flash dipped in boiled water to soften. Sometimes I used “ Thịt tái” (raw beef, filet mignon) or oxtail, but today I felt like using beef ribs. Vietnamese fusion food ftw!! Went out to take my little bro @thatoneguy_inthebackground and little sis to meet up with my aunt to grab some lunch after my workout this morning. I’ve been wanting to take my aunt to @crisandjohnvs for awhile to let her try it and since I’m off this week, it was a perfect time to do so! I know it’s the weekday and not suppose to have a cheat meal already but I’ll make up for it later this week so I’ll still be on track so no harm done! This time I tried their phodilla which is basically pho in quesadilla form! It has seared steak, fried shallots, basil, cilantro, bean sprouts, jalapeño, onion, rice noodles, hoisin, sriracha, and cheese! 🤤🤤 I also ordered their kimchi tots since they were out of fries! And to give their cafe sua da another shot since first time wasn’t pleasant experience with it. The phodilla was freaking bomb!! So good and wow was it filling! I couldn’t even finish all of it and wanted to tap out after eating one half lol. Kimchi totes were great as well, can never go wrong with runny egg on top too! And so freaking glad the cafe sua da was on point!! Night and day from when I had it the first time. I think i just got a bad batch first time around. This time was much stronger and not so milky just like a good cafe sua da should be! My sister got their dry noodle bowl i highly recommend that as well! Super happy with whole meal and getting spend some time with my siblings and Aunt!
