ROTINI WITH SHRIMP AND MUSHROOM IN A LIGHT GRAVY- So I’ve been indulging in mushrooms quite frequently lately and since it could get boring eating the same vegetable several times in a row, I’ve been brainstorming on delicious recipes with them to make them interesting and tempting to indulge in. Mushrooms are super delicious if seasoned the correct way and their super healthy as well. They have zero carbs in them and since they have so much water content in them you don’t need much fat (oil or butter) to cook them. And on top of that this recipe is gluten free (I used gluten free pasta) and dairy free! I think that says it all! 😉 Super healthy, super delicious and super quick to make. ☺️ Note- Since you will need pasta water in this recipe, cook some pasta (as needed) and set aside some of its water.
SHRIMP- 1/2 LB, PEELED AND DEVIEIND
MUSHROOMS- 250 GMS, SLICED
ONION- 1 MEDIUM, CHOPPED ( I USED WHITE)
GARLIC- 3-4 CLOVES, MINCED
PASTA WATER- 1/2 - 3/4 CUP
RED PEPPER FLAKES- 1/4 TSP (OR TO TASTE)
SALT- TO TASTE
PEPPER- 1/2 TSP, FRESHLY GROUND
DRIED MIXED ITALIAN HERBS- 1/2 TSP
Oil- 3-4 TSPS
1.Take a pan and heat some oil in it. Add onion and saute on low to medium heat until translucent.
2.Add minced garlic and cook for about 30 seconds. add mushrooms and cook till half done.
3.Add shrimp (place them with your hand at separate places). Don’t dump them. Then add the pasta water to it and season with salt, pepper, red pepper flakes and mixed herbs. Mix it all well, but gently.
4.Cover and cook till shrimp and mushrooms are cooked through and gravy thickens a bit.
5.Serve hot with you favorite pasta.
Well, I found better photo lighting, but now the background is slightly ugly. Oh well, hopefully the meals distract from the concrete... this Friday’s “roommate dinner” was baked tilapia, cherry toms, asparagus, and cauliflower rice😍👏🏻
Katie and I originally planned to make a spaghetti squash entree but Kroger didn’t have any squash☹️So we improvised with the fish I had. Kinda glad we did because this was extremely satisfying- but maybe that’s because I don’t even know if what I’ve been eating this week would be considered an actual “dinner”😂😅😭
This meal was so easy. Place tilapia on baking sheet and sprinkle with salt, rosemary and a lemon slice on the top of each. Wash and season asparagus/cherry toms with olive oil/garlic salt and place on the same baking sheet.
Bake all ingredients in the oven for ~15 min at 425 degrees. Sauté cauliflower rice on the stove and mix with juice of half a lime. Voila!! Happy Friday✨❤️🍴
Would you believe me if I told you this is one of the easiest meals I’ve ever cooked? Seriously, the most time consuming part is the prep. .
Ingredients: 6oz. White Fish Filet, 1 Green Bell Pepper, 1/2 Onion Sliced, Olive Oil, Garlic Salt and Pepper
How to: Wrap in foil and cook in a pan on Med. heat, both sides evenly for about 4 min per side.

Dinner last night at @amano_nz amazing as always love this place! We got the burrata, rubyfish crudo, tuna spiedini, tagliatelle, crayfish tortellini, raw beetroot and charred broccolini! All delicious 🤤 if you have not been here you need to go 🙌

I recently visited Paris and Sainte-Marthe an area just outside of the city centre but so unique and full of great bars restaurants and views!
This was a little spot recommended online called Sardines and served fresh tapas. AMAZING!! Highlight for me was the lentil salad but my mum loved the homemade hummus most! This had only fish no meat which I often choose when I eat out! ••••••••••••••••••••••••
Amazing dinner last night at @cotto_krd delicious food and so cheap!! We shared the beetroot ravioli, tortelloni with smoked gem fish, charred cos, pumpkin and sage fritti, and for dessert we got the panna cotta and the chocolate nemesis 🤤
HEALTHY SHRIMP FRIED RICE| Fried rice made with- leftover brown rice, freshly stir fried shrimp and veggies including carrots, peas, onions and garlic along with some cilantro. Salt and pepper to taste. (You can add some chili sauce to give it a kick, I avoided it) 😛Perfect comfort food! 😉Bon Appetite!! 😋🌸
Last night in wanaka was spent at @kikawanaka ! Super delicious food definitely worth a visit if your in wanaka 😻 we shared the market fish which was tuna, broccolini, celeriac buckwheat pasta, fried brussel sprouts, and not pictured the roasted beetroot, salad greens and roasted parsnips 🤤
