But let me tell you this recipe is THE BOMB!!!! I have used it for sooo many pasta based recipes too like lasagna, ravioli, I even made Perogi with it!!!! Yummm! Sorry for my lack of posting, it's been a busy few days!! Thursdays dinner - pasta and meatballs with roasted peppers. We were going to try Ava with spaghetti... until we realised we had none in the cupboard! I got a few requests for my tomato sauce recipe so here you go (I added some pictures to show the process in more detail). 1) Clean 5lbs of tomatoes, cut the tops off and cut into quarters. (I used tomato-on-a-vine but you can use any kind of tomato you prefer). 2) Coat the tomatoes with olive oil, salt and pepper and layer on cookie sheets. 3) Cut the tops off four bulbs of garlic, add some olive oil, salt and pepper on top and wrap in foil. Place foiled garlic on the cookie sheets with the tomatoes. 4) Slide cookie sheets into a 375 degree preheated oven and cook 45mins. 5) While tomatoes are cooking, in a large pot, heat up some olive oil and sauté two finely diced cooking onions until soft. Peel two medium-sized carrots and set aside. 6) Remove the tomatoes from the oven. Peel off the charred skin from the tomatoes and then transfer to the pot. Squeeze out roasted garlic from the bulb and add to the pot as well. 7) Pour in 7 cups of chicken stock, 2 tbsp of tomato paste, 1 tbsp dried parsley, several leaves and stems of fresh basil, and the carrots into the pot, mix well and bring to a boil. 8) Once the sauce is boiling, add the raw meatballs, lower heat to medium low and let cook 45 mins. 9) Remove pot from heat and take out the meatballs (set aside in a serving bowl). Remove the carrots and the basil stems and with a hand blender, gently purée the sauce until smooth. 10). Add blocks of creamy Brie cheese and fresh grated parmesan cheese and mix until cheese is melted and well incorporated. Taste the sauce and season as required. 1. Cauliflower gnocchi is from @traderjoes. Simply prepare per package instructions. Spaghetti squash — cut squash in half and remove the seeds, season with evoo, salt & pepper, place on foil or parchment paper face down and bake 45 min @ 350f.
2. Pork meatballs — mix one pound of grass-fed, antibiotic free ground pork w/ panko breadcrumbs, Romano cheese, salt, pepper, minced garlic, dried basil, a splash of water and an egg (or flax egg). Roll into 8 equal-sized balls. Pan sauté on medium heat in evoo until outsides are browned, then place on parchment and bake @ 350f for 10-15 minutes, or until completely cooked.
3. Top with sauce! It’s all about the sauce, and while I usually make mine (marinara recipe on the feed a while back), this time I went with @traderjoes organic vodka sauce and DAMN it’s really delicious.
4. Don’t forget to top with cheese! Some grated Romano cheese is healthy for your soul!!

Assemble ingredients as shown in picture ✌🏻in some tupps & have lunch ready to go throughout the week packed with flavor & lots of nutrients!
