Its zucchini season!
I grabbed a kilo for $0.99 from my green grocer. It's always awesome when you cook with whats in season and a bonus its such an easy ingredient to work with.
Slice 4 chuncky zucchini into discs and place in a prep bowl. Smash 3-4 pods of garlic and add to the bowl. Add a generous splash of olive oil, salt, a pinch of chilli flakes and 1/4 tsp dried tyme. Mix all and spread on a baking tray. Generously sprinkle grated parma and bake at 180 for 25-30 minutes.
Serve as a side to your main meal. Awesome way to enjoy whats in season.
