There was a pizza menu on the door when I got home which inspired me bc I love pizza but pizza doesn't love me. 😓 This is a (meatless) almost Paleo pizza. Spaghetti squash crust, pesto sauce, balsamic marinated mushrooms, fresh tomato, a little goat cheese and lemon/olive oil dressed arugula.

PROSCIUTTO-WRAPPED COD WITH LEMON CAPER SPINACH

INGREDIENTS
:
12-14 oz (340-400g) cod fillets
Sea salt & pepper
1.5 oz (~45g) prosciutto de parma
2 Tbsp (28g) grass-fed butter, ghee, or avocado oil
1 clove garlic, minced
4 cups (~180g) baby spinach
2 Tbsp capers
1 tsp fresh lemon juice
Zest of 1 lemon

INSTRUCTIONS
:
Pat fillets completely dry with paper towels and allow to come to room temperature.
Once they are at room temperature (usually about 30 minutes), pat them dry again and sprinkle with a little salt and pepper. Not too much salt here because the prosciutto is salty.
Wrap the fillets with prosciutto. You want to wrap them tightly but gently so that you do not tear the prosciutto. If your prociutto is in strips rather than sheets, just overlap the strips to create a sheet and then wrap around the fillets. I like to lay the prosciutto out on a flat surface, place the fillet on top, then roll the fillet to wrap it.
Melt butter or ghee in a cast iron skillet or other nonstick pan over medium heat.
Once the butter is hot, add the fillets and cook for 5 minutes per side or until the fish flakes easily with a fork. Total cooking time of 10 minutes. Flip carefully with a flexible spatula. Cooking time is for 1" fillets. Adjust cooking time based on the thickness of your fillets. When in doubt, use a thermometer and cook until the internal temperature reaches 140ºF/60ºC.
Remove the fillets to a cooling rack. This prevents the bottoms from getting soggy.
With the burner still on medium, add garlic to the pan and stir for about 30 seconds. Add spinach, capers, and lemon juice. Stir and cook for about 1-2 minutes. Just until the spinach has wilted.
Move the spinach to plates using tongs. Top with the fish and sprinkle with lemon zest.
Serve immediately and enjoy!

But where are we now? .
In the past, our environment allowed us to thrive but the obesogenic world that we are all now surrounded by leads to ill-health, #overweightproblems and dissatisfaction with life! We need to go back to the days of supremacy where we ruled the world by making good decisions with food, moving our bodies regularly (and that doesn’t just mean ‘exercise’) and speaking out when we don’t feel ok.

A simple way to move away from the obesity evolution we are facing is to start cooking your own food again! I made my version of gluten and dairy free spaghetti carbonara with courgettes and coconut milk, and it was delicious..and look 👀 it’s a plate full of natural vegetables 🌶 which helps prevent the build up of visceral fat and supports the body’s metabolism.

The food industry is not targeting anyone personally but they spend a fortune creating high calorie, toxic transfat foods, with no fibre that tingle your taste buds in all the right ways, so that they give you momentary satisfaction before making you go back for more, (and more...)

For anyone struggling with #weightproblems, I have 3 important pieces of advice:
🔹whole foods (of course -STOP eating processed foods)
🔹low sugar (no meal of more than 5grams of sugar)
🔹smaller portion sizes and no snacking (snacking only became a ‘thing’ in the 80s - 3 meals a day should be more than enough).

If you are struggling with #weightloss please do get in touch - it’s never easy to lose weight but when you can apply the ‘rules’ you really can lose weight without food cravings.

 I tried to make @phatfudge last night (for the REAL recipe, check out the @paleochef's page). I make it vegan, so I put cacao butter in the pan (instead of butter), then the tahini. A little got on my finger so I licked it and... garlic?! I bought garlic tahini instead of regular. Well the two ingredients were already melting, but clearly not to make chocolatey Phat Fudge! So I threw in a cup of @go_raw salted pumpkin seeds, then poured into my fat bomb molds. Not bad at all! I like the crunch! Next time I'll add a bit more salt, but otherwise 👌🏼.

1 1/4 cup @organicgemini tigernut flour
3/4 coconut sugar
1/4 arrowroot flour
1/4 coconut flour
3/4 warm water
3 flax eggs (3 tbs flaxseed meal and 9tbs water refrigerated for 20min)
1 teaspoon baking soda
1/3 coconut oil
1 tablespoon vanilla extract
1/2 cups fresh strawberries chopped .
1.Preheat an oven to 350 degrees.
2.Place all the ingredients except the strawberries in a mixing bowl and whisk it until smooth.
3.Divide the batter evenly into the prepared muffin cups and decorate with the chopped strawberries.

Despite looking at the sky you look like December, the heat makes you understand that you are in August and you still have to die of heat, even in the rain. I leave you the recipe of coconut cookies and poppy seeds, at least a consolation on this gray day.
Coconut cookies with poppy seeds (paleo/vegan/ nut-free ) (7 cookies)
2 teaspoons poppy seeds
2 teaspoons yacon syrup or maple syrup 
50 gr coconut milk
30 gr coconut butter
2 teaspoons coconut oil
20 gr coconut flour
10 grams grated or coconut flakes. Mix everything in a bowl and make balls. Arrange the balls on the baking tray and flatten with your hands, taking care to adjust the shape. Glow at 180 degrees for 10 minutes. Let the cookies cool before touching, otherwise they will break.

2 cucchiaini di semi di papavero (senza cereali/senza noci / Vegan) 
50 gr latte di cocco
30 gr burro di cocco
2 cucchiaini olio di cocco
20 gr farina di cocco
2 cucchiaini di sciroppo di yacon o sciroppo d'acero o miele 
10 gr cocco grattugiato o scaglie di cocco. Mescolare tutto in una ciotola e formare delle palline. Disponi le palline sulla placca da forno e appiattisci con le mani, avendo cura di aggiustare la forma. Inforna a 180° per 10 minuti. Lascia raffreddare i biscotti prima di toccarli, altrimenti si romperanno.

Mix everything in a bowl and make balls. Arrange the balls on the baking tray and flatten with your hands, taking care to adjust the shape. Glow at 180 degrees for 10 minutes. ONE-PAN PESTO CHICKEN AND VEGGIES
*
Ingredients
2 tablespoons olive oil
1 pound chicken thighs boneless and skinless, sliced into strips
1/3 cup sun-dried tomatoes drained of oil, chopped
1 pound asparagus ends trimmed, cut in half, if large
1/4 cup basil pesto
1 cup cherry tomatoes yellow and red, halved

Instructions
Heat a large skillet on medium heat, add 2 tablespoons olive oil, add sliced chicken thighs, season chicken generously with salt, add half of chopped sun-dried tomatoes - and cook everything on medium heat for 5-10 minutes, flipping a couple of times, until the chicken is completely cooked through. Remove the chicken and sun-dried from the skillet, leaving oil in.
Add asparagus (ends trimmed), seasoned generously with salt, remaining half of sun-dried tomatoes, and cook on medium heat for 5-10 minutes until the asparagus cooked through. Remove asparagus to serving plate.
Add chicken back to the skillet, add pesto, stir to coat on low-medium heat until chicken is reheated, 1 or 2 minutes. Remove from heat. Add halved cherry tomatoes, mix with the pesto and the chicken. Add chicken and tomatoes to the serving plate with asparagus.

JOINT HEALTH 🤸🏽‍♀️

I have always looked to my joints as a determining factor of where my health is at that moment in time. As a long term sufferer of #tendonitis (which now rarely troubles me) I know that when my body is #inflamed, or under the attack of a pathogen, my joints swell, become stiff and can be extremely painful 😣 .
The best way to optimise joint health is to remove the cause of the #inflammation (I have found that this is usually caused by certain foods such as dairy, gluten and soy) and then eat food and supplements enriched with nutrients which encourage recovery of the cartilage and other connective tissues found in our joints such as:
👉🏻vitamin C: peppers, kiwi 🥝, broccoli and oranges are a good source.
👉🏻collagen: either from bone broth or use #arthred powder (this form of collagen is more easily absorbed by the body).
👉🏻glucosamine: suggested to be effective at healing damaged cartilage in joints.
👉🏻curcumin: one of the most powerful anti inflammatory foods available, a component of the remarkable spice turmeric - great to mix into lattes and chai ☕️ tea!! .
👉🏻ginger: we often forget how effective this simple #spice is on the body with its antiseptic and immune moderating functions, it is a good harmoniser on all forms of #inflammation.
👉🏻magnesium: and least we forgot my favourite go-to pain-reliever (which I use for headaches), the spray by @betteryou is wonderful to soak on the skin of achey joints, or even better immerse yourself in a warm bath with #magnesium salts. .

Chilled Coconut Carrot Turmeric Soup 😋✨

Our Coconut Cream is fabulous in vegetable soups. It adds an aromatic creamy texture and healthy fats.
Top your soup with Zuma Valley Coconut Meat for extra garnish,
fiber and potassium🌴👍

• 6 oz (2 packs) Zuma Valley Coconut Cream (defrosted)
• 4 carrots
• 1 purple onion
• 2 cloves of garlic, minced
• 1 tsp powdered ginger
• 1 small piece of fresh grated turmeric • 4 cups vegetable broth
• coconut oil

Dice the onion and carrots into small pieces. Heat 1tbsp coconut oil on a large pot. Sauté the onion until translucent. Add the diced carrot and sauté for another 2 minutes.Add the vegetable stock, ginger, and turmeric. Simmer for 20-25 minutes until the carrots are cooked. No uso aceites,solo un poquito de aceite vegetal en las comidas! Los aceites vegetales ocasionan diversos problemas en tu organismo, son muy procesados y por lo general son bastante hidrogenados. Usa aceite de oliva,de coco, de aguacate y evita por completo estos aceites en tus comidas y verás cuánto cambiará tú Salud con estos pequeños cambios.

Isn't it crazy how much our bodies change through life. Our bodies ability to adapt through life it pretty amazing. I always have to remind myself that what worked yesterday may not work today - in terms of food, fitness, rest, & just about everything! Thinking of my fuel as a child (gold fish, cereal, chocolate, cup-a-noodle...) then just a couple years ago (Vegan and lots of grains, soy, beans, cooked veggies, no fruit), and now (mostly raw fruits and veggies, little bit of fish). I felt like I was thriving at one point on all those foods and switched it up as it no longer supported me! What's holding you back and what's calling you today? 🌬🍓

I LOVE salad as it's so easy and you can put whatever you have in it. Here I have tomatoes, peppers, organic leaves, cucumber, almonds and seeds. Drizzled with olive oil and hummus. Anyone can make a salad like this!! I'll probably make another one today 🤷🏻‍♀️🥗😉

3/4 coconut sugar
1/4 arrowroot flour
1/4 coconut flour
3/4 warm water
3 flax eggs (3 tbs flaxseed meal and 9tbs water refrigerated for 20min)
1 teaspoon baking soda
1/3 coconut oil
1 tablespoon vanilla extract
1/2 cups fresh strawberries chopped .
1.Preheat an oven to 350 degrees.
2.Place all the ingredients except the strawberries in a mixing bowl and whisk it until smooth.
3.Divide the batter evenly into the prepared muffin cups and decorate with the chopped strawberries.

Questi fudge al cioccolato e burro di semi di girasole sono proprio scemi, si fanno in due secondi e si conservano in freezer così quando ci si trova in queste circostanze son lì pronti a risollevare il morale 💁🏻‍♀️ Sono solo 2 ingredienti (+1 optional) che vi giuro danno vita a una cosa deliziosa. There is beauty in failure. 
The vision was a beetroot and walnut loaf, the result was, well I’m not sure what it call them but they’re scrumptious & that’s all that matters 😋 *recipe*
2 tbsp psyllium husk with 6 tbsp water 
1/4 cup coconut oil 
1/4 cup coconut milk 
1/2 cup coconut flour 
1/2 tsp beetroot powder 
1 tsp xanthan gum 
1 tsp baking powder 
1/2 tsp Himalayan rock salt 
1 tsp cinnamon 
1 tbsp monkfruit sweetener 
Handful of walnuts and flaked almonds. 
I baked in a bread tin for about 45 minutes then got impatient so decided to remove from the tin, slice up and cook a little more. They’re quite ‘cinnamon roll-esque’. I like the chewy bread texture.

I like to do all raw except a few roasted veggies or mushrooms on top! 🍄TOPPERS I like are mushrooms, roasted veggies, shredded carrots or beets, tomatoes, etc. 🥑HEALTHY FATS I like are avocado, tahini, nuts, olives! 🍅HEALTHY PROTEIN SOURCES I usually use are nuts and seeds or fish but feel free to add in some beans, legumes, grains, meats, eggs, or tempeh if those work for you! 🌶That's what I love about salads, they're so customizable! 🍅Pomodori antichi di Ortezzano🌱
Cosa ne farò di questi coloratissimi pomodorini, oltre a mangiarli come fossero ciliegie? Un bel "sughetto finto" - così lo chiamiamo tuttora io e i miei- come quello che preparavo nelle estati da bambina a babbo. È semplicissimo, tanto tanto buono e riempie la casa di profumi nostalgici. Si fa cuocere pochi minuti il pomodoro fresco o la passata con un pizzico di sale, un filo d'olio, uno spicchio d'aglio tagliato a fettine, qualche fogliolina di basilico e se piace, un po' di peperoncino. Il mio babbo tornava dal lavoro e trovava un bel piatto di pennette condite così e mangiavamo insieme in attesa che anche mamma rientrasse🍝. Lo preparo ancora oggi tra mille splendidi ricordi (casa mia, le vacanze estive, le puntate de "La signora in giallo", la sigla del tg) e anche se non ci condisco più la pasta, lo uso per saltare le verdure in padella, come ketchup per le patate al forno, con i fagioli o spalmato sul mio panchicco.

🔸Apesar da paleo ser a dieta mais antiga do mundo, ela se encaixa totalmente nas necessidades dos dias de hoje, pois traz liberdade, segurança, saúde, bem estar e responsabilidade ambiental; diferente do comportamento alimentar atual que nos transforma em clientes e propagadores da mortal industria de alimentos.

🔸Como vimos no post “Low carb e Vegetarianismo - Benefícios”, a Paleo, pelos mesmos motivos, também promove saciedade, diminuição da ansiedade e acesso às reservas de gordura, que possibilita a perda de gordura e a prática de jejuns prolongados sem fraquezas ou fome, sem contar a melhora no quadro de síndrome metabólica como um todo.

🔸Isso porque um indivíduo que se alimenta desta forma, além de estar em constante oxidação de gordura, que promove energia e disposição ao longo do dia, também poupa o organismo de ter que lidar com substâncias tóxicas que também pioram a nossa performance, como os níveis altos de glicose que, por hipoglicemia de rebote, causa sonolência e fadiga depois do almoço e ao longo do dia. Na Paleo, no Crudivorismo e no Low carb isso não existe.

Tasty Tummy Tricks ✨ How do you guys fare with #beans #pulses & #legumes 🤔 I personally ADORE them but have definitely struggled in the past when eating them in large quantities 🌪😳.

And this is something I encounter with MANY people transisitioning over to more of a #plantbased diet as the increase in #fibre can cause a little colonic chaos for them 🙈 PLUS there are also the less digestible anti-nutrient compounds found in the skins of these fantastic foods which will contribute if you find you get bloated or uncomfortable when consuming them 🎈.

{PERFECTING PLANT BASED PROTEIN}.
💧 Soaking - whether dried or tinned soaking your beans etc helps to remove those compounds. Add to a bowl, cover with filtered water & 1-2 tbsp apple cider vinegar, leave for 2-24 hours. Drain, rinse & use as normal.
✨Stomach acid - support this with 1 tbsp raw apple cider vinegar + 150ml water 15 mins before eating to encourage optimal #digestion . 🐢 GO SLOW! (And this is my fave) ease yourself in, try blending your favourites with some roasted root veggies like I’ve done here with @bionaorganic black beans & some of the scrummy kohlrabi I picked up at the farmers market this weekend 🙌🏻 Not only do you allow your tum that time to adapt but you add an extra #nutritious boost to your daily diet too 💚.

{KOHLRABI & BLACK BEAN PURÉE}
1 jar @bionaorganic #blackbeans .
1 c steamed kohlrabi.
1 handful fresh #parsley .
1 tbsp @rawvibrantliving #tahini .
1 tbsp lemon juice.

Simply add everything to a blender, pureeing until smooth. Season to taste & serve as a side dish or #dip with extra parsley & a scatter of #sesame seeds 🤸🏻‍♀️.
