Let’s talk about this pork loin that had a rub down and liked it,,,forking amazing flavors with the “Ultimate Meat Rub” from @aspiceaffair (shout out to Hubby for his culinary skills) 
I placed the seasoned pork loin in my cast iron skillet & added some matchstick carrots and sliced onion doused with EVOO & S/P - baked at 350 for 40 minutes when temp reached 165 and my senses were on sensory overload from all of the smells of cinnamon, coriander, tomato & nutmeg! The thing I love most about these spices is that there are always new ones being created in addition to being Non-GMO, natural, no artificial colors or flavors, no MSG 🙌🏻🙌🏻

RECIPE for the lamb patties: 
16 oz of Grass fed ground lamb. 
1/3 cup of @bobsredmill GLUTEN FREE oat bran {this will add extra fiber, macronutrients and make the lamb not taste earthy. 
1/2 tsp of salt. 
1/2 tsp of organic garlic granules. 
Handful of chopped fresh organic mint. 
1/2 tsp of smoked paprika. 
Pinch of black pepper. 
1 tsp of organic dried flat leaf parsley. 
Incorporate all the ingredients together in a glass bowl, form small patties. In a hot cast iron skillet on medium heat add the patties. Cook until desired temperature. I cooked mine for 10-12 minutes.

Ingredients: 
1 32 ounce bag fresh cranberries 
2 cups water 
1/3 cups brown sugar substitute (we like Lakanto) 
1/3 cup granulated sweetener (we like Lakanto) 
1 tablespoon orange extract 
1 teaspoon cinnamon 
Directions: 
In a large, deep skillet, combine the cranberries and water. Bring to a boil. Turn the heat to low and add in the remaining ingredients. Stir until well combined. Let the mixture simmer for 30 minutes. Serve!

DINNER MADE EASY!

Perfect for those days when you need to get a meal done in 10 minutes!

CREAMY VEGGIE SKILLET MEAL

INGREDIENTS
-1 tbsp of ghee
- 1/4 of a red onion
- 2 cups of red & green bell peppers, cut into strips
- 1.5 cup of shredded Brussels sprouts
- 1/3 of smoked fresh turkey kielbasa (or your choice of kielbasa), diced
- 1 tsp of dried dill, rosemary, parsley, & paprika
- ½ tsp of garlic powder
- 1 tsp of red wine vinegar

DIRECTIONS
- Heat ghee on medium heat in a medium skillet Once heated, add red onions & cook for about 3 minutes or until translucent.
-Add in bell peppers and Brussels sprouts and mix all together, for about 3 minutes.
- Add herbs & garlic powder, mix together. Add kielbasa & mix together.
- Add red wine vinegar & mix!

💥 Squash Rings 💥 
I had like 30 Delicata squash from my garden this year so, I’ve been finding creative ways to cook with it and,  this one is one of my favorites so far! These also would make a great appetizer for thanksgiving! Here is the recipe 👇

INGREDIENTS
* 	1 small delicata squash
* 	1 egg
* 	1/2 teaspoon garlic powder
* 	1/2 teaspoon sea salt
* 	1 cup grated Parmesan cheese

INSTRUCTIONS
1. Preheat oven to 350F
2. Cut the squash into 1/4 inch rounds and scoop out seeds.
3. In one bowl, whisk the egg, garlic powder, and sea salt.
4. In a second bowl, place the grated Parmesan.
5. Use one hand to pick up the squash, coat with the egg mixture and drop into the Parmesan bowl.
6. Use the other hand to coat the squash round in Parmesan and place on a baking sheet lined with parchment paper.
7. Bake for 20 minutes until golden brown. Broil on high for an additional 2 minutes to get them nice and crispy if needed.

I’m sure I’m not telling you anything you already don’t know, but here’s my recipe: This is a 4 pound chuck roast with a ranch packet, French onion soup packet, a stick of butter, and a few pepperoncinis. I made a big batch and will reheat them stove-top in the morning with a tiny bit of water on a stainless frying pan covered with the lid. This method works great with almost anything, as it steams the food and preserves the flavors and juiciness. I hardly ever use the microwave. Actually, the only reason I still have the microwave is that it is the best method to heat up my lavender neck wrap for sore muscles and my salt-stuffed socks which I used for sinus pressure/congestion when I get sick.⠀

I love autoimmune paleo protocol cookbooks, but all the meatballs I have ever made from chicken/bison/turkey turned out so dry.⠀ *⠀ I love this AIP recipe from @unboundwellness, because it is easy, quick, juicy, and super-tasty! ⠀ *⠀ I made a big batch and will reheat them stove-top in the morning with a tiny bit of water on a stainless frying pan covered with the lid. This method works great with almost anything, as it steams the food and preserves the flavors and juiciness. I hardly ever use the microwave. 2 mashed over ripe bananas, half can of pumpkin purée, 3 tbsp almond butter, 2 tbsp pumpkin spice (could do nutmeg, cinnamon, ginger, allspice, cloves) about 2 tbsp stevia
Bake at 350 until cooked through, about 20 minutes

Today’s 2-minute Instant Pot dinner...colorful veggies with secret weapon - nut butter and ghee basting. I’m starting to experiment a bit with fats (which can sometimes backfire...ask @honerloo about my odd-flavored kale and eggs). Recently I’ve found some tasty combos of healthy fats, driven by the dominance of fats in my target daily macros: 400cal carbs, 500cal protein, 1,500cal fats! 
I’m 6’0” and 165 lbs with 8% body fat, and healthy fats are central in every meal I prepare and eat. I avoid fats and oils that start with the letter C and the letter S (well, except Coconut products pass as healthy). Prepping for the #nodadboddecathlon  tomorrow - a big, all day event consisting of 10 different brutal workouts at 10 different local fitness locations over 12 hours. I’m terrified as I’m a mom of 3, pushing 40 with a chronic illness. Not exactly a fitness guru capable of intense, prolonged exercise 🤣 But what I am familiar with is pushing through when you are tired or feeling crappy. I know that even when your mind is telling you that you can’t take anymore, your body can keep going. And in a sick way, I’m looking forward to seeing just how much this tired, old lady bod can handle! With both colitis and exercise, food is SO IMPORTANT in feeing good. So in preparation, I’m fueling up with grilled chicken, carrots and riced cauliflower. I also hit up Whole Foods for a bunch of my favorite plant based @drinkkoia protein shakes that don’t bother my belly. Fingers crossed!!!

I realize I’ve hit capacity with living in cities—with hustle and bustle, with lights, pollution and noise.

In order to keep up with the pace of a city—to really live in resonance with city life—I must do drugs. 👉 Drink coffee, eat sugar, and be around alcohol.

When you unplug yourself from those addictions—or rather when life unplugs you with silent autoimmunity, you realize you’re no longer a match to the environment you’re desperately trying to keep up with. And the amenities of a city simply become unnecessary at best.
.
In Los Angeles, most of my time is spent detoxing, filtering, recovering from the effects of living shoulder to shoulder with 10million people in a city that has little respect for sensitivity.
.
If anything, I’m damn proud of myself for drawing those boundaries. For saying no when I’ve always said yes. For not doing when I know I will become undone. For managing my Highly Sensitive resources the fucking best I can. I am really proud of myself for finally getting a handle on it, finally.
.
But there’s another type of addiction that’s a little more obscure. Can you be addicted to a city? Yes, you absolutely can. What significance would I have in a small forest town? A place where I know my soul could rest. Who will I be without the charge of the sex and glitz of Hollywood? Who would I be in the forest with no one to notice that I’m there?
.
The truth is, it would just be me. And I am not quite there yet.

Parmesan Blueberry Muffins 
2 cups almond flour 
1 tsp baking powder 
1 tsp salt
2 tbsp mayo
3 tbsp Blueberries 
2 eggs
1/2 cup Parmesan cheese

Loving the freshness and spice of this Za’atar meatball salad.

Trying to perfect some Za’atar spiced meatballs. Here is my best go yet. 
1 lb ground beef
1/3 c chopped onion
2 garlic cloves, minced
2 T fresh parsley
1 T fresh dill
1-2 tsp fresh mint
1 tsp salt
1 Tbsp Za’atar
1/4 c toasted pinenuts
1/2 tsp coriander

Preheat oven to 375. Mix all ingredients together with hands. Form into golf ball sized meatballs. Heat cast iron over medium heat and brown meatballs on all sides. Then place in oven and cook until inside temp is 145 for medium doneness or until desired doneness is reached. 
Serve over field of greens, veggies, and with lemon tahini dressing

1 Tbsp olive oil
1/4 c tahini 
Juice half lemon
1/4 tsp pink Himalayan sea salt
1 clove garlic, minced
2 Tbsp water or to desired thickness
Pepper to taste

Green Detox Soup

Decrease bloat, lose unwanted pounds, aid liver detoxification, get glosing skin. 
Plus it tastes great! - 1 medium broccoli
- 1/2 cup cilantro
- 10 kale leaves
- 1 head garlic
- juice of 1 lemon
- 1/2 cup parsley
- 1 zucchini
- 4 cups vegetable broth
- 1/4 tsp salt
- 3 tbsp coconut oil
- 2 roughly chopped onions

In a large pot, heat coconut oil over medium-high until warm. Add onions and cook for 5 minutes, stirring occasionally, then add zucchini, kale and broccoli and cook for 5 additional minutes. Pour in vegetable stock and bring to boil, then reduce heat to low and simmer, covered, for 15-20 minutes or until broccoli is easily pierced with fork. Turn off heat and add garlic, then let cool, uncovered, for 15 minutes. Working in batches if necessary, blend with cilantro, parsley, lemon and sea salt until very smooth. Serves 4.

Acorn Squash Cashew Cookies
(Makes 6-8 small cookies):
Flesh of 1/2 a acorn squash already roasted
(or use butternut squash or pumpkin) 
2 tbsp cashew butter
(or sub with your favorite nut butter)
2 tsp pure maple syrup (or honey)
1 flax egg (1 tbsp flax meal mixed with 1 tbsp water, let sit 5 minutes to thicken)
1/2 tbsp vegan butter or 1/2 tbsp coconut oil
(I use @miyokos_kitchen coconut butter)
1 tsp pure Vanilla
2/3 cup almond flour
(I used @bobsredmill paleo flour)
Dash of Baking soda
Dash of Sea salt
2 tbsp vegan dark Chocolate chips 
Dash of Pumpkin spice 
In a food processor, blend squash with melted butter or oil, maple, and vanilla until creamy. Transfer to a large bowl, add flax egg and mix well. Then add dry ingredients and stir h til cookie dough forms. Spoon onto a lightly oiled or lined baking sheet and bake at 350 degrees for 13-16 minutes or until cooked through and edges brown. Enjoy!

Happy Friday, friends! #behealthywithpri  #cleaneating  #plantbased  #bhwpcookies  - - Acorn Squash Cashew Cookies (Makes 6-8 small cookies): Flesh of 1/2 a acorn squash already roasted (or use butternut squash or pumpkin) 2 tbsp cashew butter (or sub with your favorite nut butter) 2 tsp pure maple syrup (or honey) 1 flax egg (1 tbsp flax meal mixed with 1 tbsp water, let sit 5 minutes to thicken) 1/2 tbsp vegan butter or 1/2 tbsp coconut oil (I use @miyokos_kitchen coconut butter) 1 tsp pure Vanilla 2/3 cup almond flour (I used @bobsredmill paleo flour) Dash of Baking soda Dash of Sea salt 2 tbsp vegan dark Chocolate chips Dash of Pumpkin spice In a food processor, blend squash with melted butter or oil, maple, and vanilla until creamy. Transfer to a large bowl, add flax egg and mix well. Then add dry ingredients and stir h til cookie dough forms. Spoon onto a lightly oiled or lined baking sheet and bake at 350 degrees for 13-16 minutes or until cooked through and edges brown. YOU GUYS. I made the most heavenly vegan Smokey queso.. I can’t take credit for the base of this recipe as I used @minimalistbaker cashew-less queso recipe & added my own spin on it! Added in some corn, paprika, cilantro, & some @miyokos_kitchen smoked vegan cheese & OMG. This was the perfect Thursday night football treat. My boyfriend even had no idea it was vegan & I was highly upset when he ate the entire thing.. definitely a healthier spin on a comfort food classic! I highly recommend trying for a weekend treat! & @beanfieldssnacks jalapeño chips were literally perfect with this. Happy Friday you guys & have an amazing weekend!
