These are the BEST Veggie Tacos I have ever had (You need to try them!) Ingredients
3 small zucchini, sliced lengthwise
2 small yellow squash, sliced lengthwise
1 small eggplant, chopped
3-4 tbsp extra virgin olive oil
Salt and pepper, to taste
1 tsp chili powder
1 tsp cumin
Pinch of cayenne
1 avocado, pitted
Juice of 1 lime
1/2 red onion, thinly sliced
2 tbsp cilantro, chopped
1 lime, cut into wedges
8 Paleo tortillas
1. Place the zucchini, squash, and eggplant into a large bowl. Drizzle with olive oil and sprinkle with chili powder, cumin, cayenne, and one teaspoon of salt. Add pepper to taste. Toss to coat.
In a small bowl, mash the avocado with the lime juice and a dash of salt. Set aside.
2. Heat the grill to medium-high. Place the zucchini, yellow squash, and eggplant onto the grill and cook for 8-10 minutes, turning once, until slightly softened but still crispy.
3. To assemble, top each tortilla with a few pieces of squash or eggplant and red onion. Spread the avocado mixture over the vegetables and garnish with cilantro. Serve with lime wedges.
Bacon is delicious 🥓 so we wrapped around a bite-sized piece of mouthwatering 100% #Grassfed Beef Sausage, and dunked in BBQ sauce! Fair warning though, you might need to double the recipe 😛 get the recipe with the link in our profile!
🥞 I am getting super excited to use my @choczero syrups tomorrow morning on my pancakes. I know it’s only day 6️⃣ but this is my favorite meal. NOM NOM NOM!!! Night night my keto fam. 😊👋🏼Thanks for listening.
Mongolian Lamb - one of my family’s favorites. I modified this famous Chinese dish to the western taste and it’s suitable for kids. Red pepper is optional if you prefer spicy.
1. Cut up brown onion. Marinate lamb strips with onion, Chinese cooking wine, cumin powder, Chinese five spice and salt for 30 minutes.
2. In a frying pan, heat up 1 table spoon of olive oil, add chopped up spring onion and garlic, fry the marinated lamb on medium high heat until lamb is turning brown.
3. Add soy sauce, sesame seed and stir fry for 5 minutes. Pour out excessive soup if there’s any. Keep frying for 5 minutes if prefer crispier fried lamb. Add ground red pepper if prefer spicy.
4. Turn off fire and sprinkle chopped coriander.
Spent half the day getting my iPhone screen replaced 😑 but made it to the last @hypesilverlake class offered today, which happened to be 4:15 cycle. .
Sooo bummed I had to miss @daniellepascente birthday event due to my phone debacle, but glad I still squeezed a good sweat in. .
Now for an evening walk with the pups & bf.
In honor of the first day of Oktoberfest in Munich, we have a #Whole30 compliant dinner of German potato salad, bratwurst and asparagus. This warm potato salad with a tangy vinegar dressing is delicious and tasty way to have a warm meal on the first day of fall! I was also happy to find a Whole30 compliant sausage at @wegmans. After two weeks straight of work travel, I’m happy to be home for the next while making my own food!

Strawberry Rhubarb Pie for the win! I love trying new recipes and have been in a total pie baking mood lately - which is perfect because today is the first official day of fall 😍🍂🍁luckily my Perfect Pie Crust recipe is good any time of year, with any kind of pie - strawberry rhubarb, pumpkin, or otherwise 🥧😅I want to share the recipe with you so you can jump on the baking train with me!
Pro Tip: I like to double or triple the recipe, then divide it into portions and freeze them. This way I have pie crust ready to go when the baking mood strikes! The dough will stay good in the freezer up to 2 months - wrap in cling wrap and then a layer of foil (unfortunately I don't think beeswax wrap is suited for this job and plastic wrap works better 🙁 I'll keep you posted when I find an alternative!) The recipe for my Perfect Paleo (and vegan!) Pie Crust is available in my #PaleoSweets cookbook and on my blog (link in bio)
I actually kinda wanted to go out for dinner tonight... but all jokes aside, I can’t stand all the sodium in restaurant food now. I puff up like a 🐡 and I reminded myself of that 👆🏽😂 so I made a “throw whatever you have in a pan” meal 🤷🏽♀️ and it happened to be #whole30 cause I’ve been slowly brainwashed into putting real food in my body
