Egg color - both caged eggs and pasture raised eggs can be all different types of colors. Brown doesn’t necessarily mean their healthier but many of the pasture/small farm tend to be brown. The reason why many of the caged farmed eggs are white is because those efficient farms prefer the leghorn breed of chicken. So while color can be an indicator, it is definitely not a determining factor.

Whole30 Oven Baked BBQ Chicken

Sheet. Tray. Love. ❤️

Came home and needed to throw dinner together quickly and wanted it to be Whole30 since I ate a burger for lunch. Took out two sheet pans and threw some chicken thighs on one and sweet potato on the other. Baked everything at 380° until the chicken and potatoes were crispy. 10 minutes prior to the chicken coming out I covered it with @thenewprimal BBQ Sauce. Had some leftover watermelon in the fridge and had a little bbq celebration right in my living room. .

It's all about eating the rainbow with a variety of colours from a broad spectrum of plants 🌱.
This recipe takes 20 minutes. You'll need the oven ready and cast iron skillet on hand 🍳.
For my meal prep followers just double or quadruple the recipe. Simple as that. If you want more calories than add some more fat like olives + more olive oil or more carbs then add more vegetables.

Ingredients.
120g skinless pasture raised chicken breast
1/2 eggplant - sliced lengthways
1/2 zucchini - diced
1/2 Red bell pepper
1/2 yellow bell pepper
1 baby gem lettuce
Spices: 1/2 tsp of ginger cumin turmeric.
Ps. I forgot to include 1/2 tbsp EV olive oil which was added at the end not during cooking

Recipe.
1. Preheat oven to 350f + heat pan to High
2. Mix the chicken with the spices and splash of ACV
3. Throw the diced peppers + eggplant + zucchini on to pan & allow to lightly char all sides.
4. Remove and add to a tray and stick in oven.
5. Add the chicken to the pan and leave for 3 minutes before turning over and repeating. Transfer pan dirextly to oven for remaining 10 mins.
6. Remove everything from the oven.
7. Remove chicken and add the baby gem to grill for a minute.
8. Plate up and are the olive oil on top, season to taste add any herbs too liem oregano or mint or basil.

Tonight I made Whole30 Instant Pot Chicken Curry with cauliflower rice and a green salad.

I was able to check my mail and set the table while I waited for the food to be cooked. The asparagus have olive oil, salt, pepper, and lime. Y’all, Jenny from @cookandsavor killed it with this filipino chicken adobo recipe! This is a recipe I find myself making often because it’s just so dang delicious! 🤤 I used @bigtreefarmsbali as my coconut aminos of choice and I left out the added salt because the coconut aminos adds enough saltiness for me. The sauce, after reducing, turns into a thick sticky consistency and is to die for! I seriously lick my fingers when eating this because #nosauceleftbehind. This recipe is also super easy! You just dump all the ingredients into a pan, cover it, and let it cook. No joke, it’s that easy. 🙌🏽 I paired these chicken drumsticks with some cauliflower rice to make it a meal. For tonight's dinner I've got a "baked" (i.e. microwaved - keep it quick + easy people) Japanese sweet potato with @fourthandheart vanilla bean ghee and pink sea salt, sauteed kale with lemon, garlic, salt+pepper, and crispy salmon with a quick chipotle-lime aioli that I'm recipe testing. The recipe for the salmon is already on the blog and it's so good. Just search "crispy skin salmon"! YUM. .⠀

Southern "Fried chicken" if you could call it that... and a few sweet potato fries 
@bluegoosepurefoods chicken thighs ...made with almond flour, flax meal, salt, pep and a little oregano. My younger baby (the other is vegetarian) ate 4 of these thighs !! I've been working more than usual this summer and unfortunately haven't spent much time in the kitchen, which is one of my favorite things. I love preparing healthier alternatives for my babies and when they like it and actually eat it....wow! Theres no better gift. Clean eating and balance is a daily struggle for this family. 👨‍👩‍👧‍👧But I'll never stop trying, and finding better alternatives for my children.
