Unpopular opinion: cinnamon raisin cookies were the BEST kind of cookies growing up 🙈 But maybe I was just a weird kid... 😉 Seriously though I LOVED them and would choose them over chocolate chip any day, SO naturally I had to make a version I could eat now.
Enter my PALEO POMEGRANATE N’OATMEAL COOKIES 💃🏼 The recipes for these are on the blog and I’m tellin’ ya - they’re so dang good!!! Even my mom took a bite and was like “nat... these are delicious but why would you make oatmeal cookies if you can’t eat them...” and I was like “what if I told you there weren’t actually oats in it?????” and my mom was just like 🤯 (true story)

Encore une fois j’ai réussi à dénicher la recette parfaite sans oeuf, sans produit laitier, sans gluten et sans arachide!!! 🤩
1 tasse de farine de noix tigré
1/4 de tasse de farine de tapioca
1/3 de tasse d’huile de coco
1/4 de tasse de sirop d’érable
1 cuillère à soupe de poudre de gélatine (type Knox)
1/8 de cuillère à thé de bicarbonate de soude
1/8 de cuillère à thé de sel
1/2 cuillère à thé de vanille
Des pépites de chocolat
Préchauffer le four à 350
Mélanger les ingrédients secs ensemble
Mélanger les ingrédients humides ensemble
Mixer les deux mélanges ensemble
Déposer 1 cuillère à soupe de mélange sur une plaque à biscuit
Cuire au four 6 minutes
Au moment de sortir du four, déposer des pépites de chocolat sur chaque biscuit et les laisser reposer quelques minutes

There is nothing more like Christmas that calls for cookies. I love baking in general, but this time of the year more than ever. Spending Christmas away from home and my family is not easy, I miss all the big lunches and dinners with relatives and friends – though I do complain about them every time I am home….call it life!

1-1/4 cup almond flour
1 tbsp tapioca flour
1/4 tsp ground cinnamon
1/2 tsp baking powder
1 tbsp maple syrup
1/8 tsp sea salt
7 tbsp coconut oil, melted
1 tsp vanilla extract

Maple Sugar Crisps
Paleo and LowFodmap
1/4 c palm shortening
1 c maple sugar
1 egg white
1 1/2 c almond flour
1/4 c arrowroot flour
1 Tbl ginger
1 tsp cinnamon
1 1/2 tsp baking soda
1/2 tsp salt
3 Tb maple syrup
Preheat oven to 350 degrees and line 2 baking sheets with parchment. MUST USE PARCHMENT OR COOKIES WILL STICK.
In a stand mixer, mix palm shortening, sugar and egg white till combined.
Sift together flours, spices, baking soda and salt. Add flour mixture and maple syrup to mixer and mix until combined. Using a small melon baller, scoop out 20 cookies onto baking sheets. They will spread a lot in oven. Bake for 10 minutes and then check every 2-3 minutes up to 15 minutes total. Let cool completely on baking sheet. Cookies will harden up! It's beginning to feel a LOT like Christmas here in Virginia. This weekend Max and I went to D.C. with some friends to watch the Nutcracker at the Warner Theater. I have been going to the Nutcracker ballet every December since I was a little girl- with my Grandma in London, with my Mum in London, with my family in Austin (including Max, who fell asleep last year), and this year with my now HUSBAND and great friends. It was a magical time 🧚🏼♀️
Anyway, you may have noticed that I have started rolling out the Christmas recipes already with my gingerbread men and sugar cookies, but you better believe that I have a ton more up my sleeve, including these delicious little Mexican Wedding cookies. Honestly, I had zero idea what these were before this year so I've never actually tried a "normal" one (I don't think we have these in the U.K.?! If I'm wrong, feel free to call me out on that one.) What I do know is that THESE Mexican Wedding cookies are delicious.They are grain-free, refined sugar-free, buttery and yummy. You HAVE to try them! Recipe up on the #BGW blog ❤️
Made these double chocolate mint cookies by @paleorunningmamma ...delish!!! Paleo and vegan.
Two thumbs up from both parent and kids!
1 cup blanched almond flour
1/2 cup raw cacao powder sifted
1/2 tsp baking soda
1/4 tsp salt
1/4 cup organic coconut oil refined, soft, but solid
1/4 cup smooth almond butter creamy and stirred if needed
1/4 cup pure maple syrup
1/4 organic coconut sugar
1 tsp pure vanilla extract
1 tsp peppermint extract add 1/2-1 tsp if you want them very minty!
1 flax egg 1 Tbsp ground flaxseed mixed with 2.5 Tbsp water, allowed to sit for 10-15 mins
1 cup dark chocolate chips I used Enjoy Life, you can use chopped dark chocolate too
Prepare the flax egg first, set aside. Position your oven rack to the middle and preheat your oven to 350 degrees and line a large cookie sheet with parchment paper.
Combine dry ingredients well in a bowl and set aside. With an electric hand mixer, cream together coconut oil, almond butter, maple syrup and coconut sugar until smooth. Add in the vanilla, peppermint and flax egg, beat on on medium speed, then stir in the dry ingredients until fully combined. Gently stir in the chocolate chips to evenly distribute.
Chill the dough in the fridge for 10 minutes.
Using a medium cookie scoop, scoop dough onto parchment lined cookie sheet about 2” apart. Use a second baking sheet if necessary. Bake in the middle rack for 12-14 minutes or until cookies are set and tops are bumpy.
Allow to cool on the baking sheet 2 minutes, then carefully transfer to wire racks to cool completely. Enjoy!

TRUE STORY: In years past I’ve encouraged my Mom to not make any cookies around Christmas time.
“Well if you make any, definitely don’t make any of them gluten free, that way I can’t eat them anyways.”
This year, I’m making multiple different kinds, with GF options because I am SO EXCITED.
I get to be a part of that fun.
I get to watch my 1.5 year old niece play with frosting.
I GET to play with frosting.
Could I watch her play with frosting and not eat anything and still have fun?
Sure. But I would certainly feel restricted.
Food freedom means no more restriction.
But it also allows me to trust myself.
Will I eat more cookies than I do in a typical day?
But will I also listen to my body’s signals? And TRUST myself to listen to those signals?
Am I worried about gaining weight from all the holiday goodies?
Nope. Not one little bit.
No matter whether I gain a pound or two or not, I trust myself. I trust my body, and I focus on the experiences and the joy. 🤗

I worked all weekend in the hospital, and it was a pretty bad one.....My patients were all just so sick😢....and so, it was a super stressful 48 hours. I literally woke up feeling like I just ran a marathon. My knee was achey, my eyes were foggy, and my belly was a mess. So, I promised myself I’d take it easy, and make it a very slow day. Those of us with autoimmune diseases need to listen to our bodies, especially when we can feel the precursor to a flare coming on. If we can catch it early enough, we can sometimes tame it.....
My morning baking routines have given me slow mornings😊that’s part of why I bake.
This is me, trying to recreate a Jewish Deli style cookie called Rugelach. There’s something about trying to replicate a dessert that I used to love ❤️ . These came out pretty damn good:) a cookie that’s not too sweet, with a rich chocolatey center. I definitely need to play around with the shape a bit, but they taste amazing!

If you’re anything at all like me, baking is important and really a tradition for The Holidays. It can be overwhelming to see the cookie recipes posted and want to enjoy them only to find they’re filled with grains and refined sugar or even dairy. These Thumbprint cookies are 100% grain and dairy free. I used @enjoylifefoods dairy free chocolate chips for the chocolate portion. My husband actually said these were the best cookies I’ve made this season! Of course you can top them with anything and the peppermints are not sugar free, but the kiddos love them and what’s Christmas without a little peppermint action?! I also used @williamssonoma coarse sea salt for some of them. Who says Christmas can’t be done grain and dairy free?!🎄🎄
-2 Cups of extra fine almond flour
-1/2 cup of Arrowroot Flour
1/2 teaspoon grain free baking powder
-1 teaspoon vanilla -1 egg
1/4 cup melted coconut oil or grass fed butter
-1/4-1/3 cup maple syrup (I use 1/4 Do less sweetness)
-1/3 cup dairy free chocolate chips
-1/3 full fat coconut milk
#mix all of the ingredients together aside from chocolate chips and coconut milk. Use tablespoon cookie scoops and roll into balls. Make thumbprint with slightly wet finger and bake for 8 minutes at 350 degrees. Melt cohocolate chips and coconut milk over double boiler or in microwave. Remove cookies and let cool just slightly. Add chocolate to centers and top with French sea salt or peppermint pieces or whatever your ❤️ desires!
A fun fact about me is that my middle name is my mom’s maiden name, Vecchio, which means “old” in Italian. Even though the Vecchio side of me is fully Italian, I had never made biscotti cookies...until today! I feel like my Nana would be so proud of me if she could see me creating back-to-back Italian cookie recipes 🇮🇹.
As you can probably guess, these biscotti cookies are #grainfree and sweetened only with fruit. I used ghee, but you could sub coconut oil if you would like them #dairyfree as well 👍🏻.
1️⃣ Soak 10 (1/2 cup) @madeinnature pitted dates in hot water for several minutes and then blend them in a food processor.
2️⃣ Add 2 tbsp @organicvalley ghee, 2 eggs, 1 tsp pure almond extract, 1/2 tsp pure vanilla extract and blend together
3️⃣ Add 1 3/4 cup @bobsredmill almond flour, 1/4 cup @thrivemkt tapioca flour, 1 tsp baking powder, a dash of sea salt and blend together. Lastly, mix in 1/4 cup sliced almonds.
4️⃣ Form into a loaf about 6 inches wide and 1/2 thick. Then bake for 20 minutes at 350 degrees until the top looks golden.
5️⃣ Let cool for at least 5 minutes, and then use a sharp knife to slice cookies about 3/4 inches wide and 6 inches long (the width of the loaf). .
6️⃣ Lower the heat to 300 degrees and bake the cookies on their side for 10 minutes. Then flip and bake them on their other side for another 10 mins. Turn off the heat, crack the oven door open, and allow cookies to cool in the oven. . 💗 amo i biscotti 💗

Testo gre v hladilnik za 30 min, oblikujemo. Peka cca 25 minut na 175°
