It's still primetime blueberry season up here in New England but all the rain the past few days had us feeling a little gloomy.  I know the perfect cure! ⠀⠀⠀⠀⠀⠀⠀⠀⠀
*Blueberry Banana Oatmeal Muffins*
⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 cup quick oats
1/2 cup almond flour
2 large eggs
1 large very ripe banana, mashed
1/2 cup blueberries
1/3 cup chopped pecans 
1/3 cup pure maple syrup
1/4 cup unsweetened almond milk
1/2 tsp ground cinnamon
1/2 tsp vanilla extract
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Heat oven to 350ºF and line 6 muffin tins with paper liners. Combine mashed banana, eggs, maple syrup, almond milk and vanilla extract in a large mixing bowl and whisk with a fork to combine. Add almond flour, oats, pecans and cinnamon. Stir until just combined. Fold in blueberries.

Divide mixture among muffin tins evenly. Bake for 30-35 minutes or until a toothpick inserted comes out mostly clean. Cool muffins 10 minutes. Place onto a wire cooling rack and cool completely, about 30 minutes. .⠀⠀⠀⠀⠀⠀⠀⠀⠀

Ingredientes: 
3 ovos
2 Colheres de sopa de manteiga ghee ( pode substituir por óleo de coco ou azeite )
4 Colheres de sopa cheias de farinha de amêndoas ou farelo de aveia
1 Colher de chá de fermento ( de bolo)
Temperos a gosto
Frango desfiado temperado ( 1 Peito)
Cream cheese/ requeijão 
Parmesão ralado a gosto

Coloque os ingredientes em um recipiente ( menos o frango e cream cheese) , misture bem até ficar homogêneo. 
Disponha a massa em uma forma untada ( a minha tem 16 cm de diâmetro), coloque o frango temperado ( misturei com requeijão) bem no centro da massa, e vá espalhando e empurrando pra baixo formando um círculo menor do que o de massa. Coloque o cream cheese por cima. Salpique parmesão ralado. 
Leve ao forno 180º por mais ou menos 35 minutos ou até que esteja assado.

Because my company had a BBQ I had to come up with something else. So I seasoned an SP, wrapped it in aluminum foil and 💥 this amazing flavour came out.
- cut it open, season with olive oil, salt, pepper, rosemary and thyme. Close it and wrap it with foil. Pop it on the barbie for about 30 minutes so it softens on the inside. Just look out for it not to burn! Enjoy your vegan meal with excellent company 🌱

I love making breakfast!!!! (If you couldn’t tell...) today we were craving pancakes! So I used @simplemills pancake mix, added cinnamon, nutmeg & chia! 
Topped with @wholefoods almond butter & homemade jam, inspo @rachlmansfield !
Add 1 cup blueberries to a hot pan with 1-2 tbs water. Mash the blueberries let get hot! Add 1 tbs chia seeds and mix throughly. Remove from heat and let sit 3-5 minutes to thicken!

I had the pleasure of welcoming 16 new, bright and shiny APPE students today. For the next 6 weeks, we’ll explore as many plants as I can squeeze in, and challenge our ideas about what medicine and health look like. To start us off I made this little blend: peppermint to open the mind, motherwort for relaxing the heart, and damiana to spur on creativity. These 6 weeks always fly by, and I can’t wait to see where they take us!

Modo de preparo :  coloque a cebola picada em um bowl, adicione o limão espremido, mexa. Depois cubra e leve a geladeira. Sometimes I still don't even believe we're here. I still walk on those egg shells, waiting for him to snap at every single thing again.. but he hasn't. .

Yesterday was such a perfect summer day, and it looks like today is on its way to being another one!  The air is hot and heavy, the sun is beating down, and we’ve been getting the sprinklers going out in the yard for William to play in (and to water the grass, but that’s a secondary goal!)

The produce keeps rolling in as well.  I’m freezing what I can’t use right away, and doing my best to cook up what we can eat right now!  This week’s offerings consist mainly of carrots and eggplants. (They were so pretty I just couldn’t say no.) I used up a huge chunk of the carrots in this carrot ginger soup, which turned out absolutely delicious, and also was a breeze to throw together.  As far as the eggplants go, if you have any ideas, please let me know!  I have a ton of them and am drawing a blank on how to use them!  We’ve already had eggplant parmesan twice!

Esqueça a "tradicional" pirâmide alimentar. Amasse e jogue fora!! Foi à partir da introdução dessas diretrizes alimentares, à partir do momento que nos disseram que para sermos SAUDÁVEIS deveríamos fazer da base da nossa alimentação os carboidratos (grãos, massas, cereais, frutas, tubérculos, pães...) que o MUNDO começou a engordar e desenvolver síndrome metabólica.

A base da nossa dieta devem ser as PROTEÍNAS (e não os carboidratos). CARNE NÃO MATA!!! Boi, porco, frango, peixes, frutos do mar, javali, carneiro... TODAS as carnes. E ovos. Com gema. Qual a quantidade? Coma com fome e até a saciedade. Ninguém vai comer carne demais todos os dias. Ninguém vai acordar no meio da noite com compulsão por carne. Ninguém vai terminar com o namorado e vai correr pra um rodízio em uma churrascaria. PS: coma vísceras 1x por semana (fígado, moela, coração...).

E os VEGETAIS?! Ninguém ficou obeso ou diabético porque comeu aipim demais ou muita cenoura. Mas não substitua uma refeição importante por uma “frutinha” para emagrecer. As frutas de hoje estão muito "docinhas", foram alteradas. Dê preferência para o abacate, o cocô e as frutas vermelhas (morango, amora, framboesa, mirtilo...). Se precisa emagrecer, reduza o consumo de tubérculos (batata, aipim, inhame, baroa, cará). Os vegetais folhosos têm muitas vitaminas.

GORDURAS. As gorduras são SAUDÁVEIS!! As gorduras DEFINITIVAMENTE NÃO ESTÃO RELACIONADAS COM O SEU COLESTEROL. O que mata é a INFLAMAÇÃO. Inflamação causada pela substituição da manteiga por margarina, da banha e do azeite pelos óleos vegetais. Carboidratos refinados, industrializados, cigarro, stress... Isso causa inflamação. Sua avó e sua bisavó usavam banha de porco para cozinhar e provavelmente viveram muito bem até quase 100 anos. .

AÇÚCAR - não existe espaço na verdadeira nutrição para esse produto. NECESSIDADE ZERO. BENEFÍCIO ZERO. NADA. Tire de vez da vida. Não se deixe enganar pela indústria. Açúcar demerara, mascavo, invertido, de cocô, maltodextrina, dextrose, xarope de frutose, suco de maçã... "É tudo farinha do mesmo saco!". .

Dinner in the crockpot: carnitas!

5 lb pork butt
2 Tbs salt
1 tsp pepper
1/2 onion chopped
3-4 garlic cloves minced
1 tsp cinnamon
Pinch cloves
2 bay leaves
Cover with water and cook on low all day.
Shred it up and brown in a pan to serve.
You can freeze leftovers for a quick dinner that you just need to reheat.

I know it’s premature but I want it to be fall so bad that I started busting out the winter recipes this week. I usually throw in corn, tomato’s, celery, green bell peps and onion. I hate okra, so that stays out and then I throw it all on top of jasmine rice. It’s seriously amazing. Sweet, Sour & Spicy Star fruits and Indian chickpeas curry. This is an experimental recipe developed today and included in lunch menu for guest. After seen their big smiley face 😁😊 satisfaction comes to me as self reward 😍🏆. Star fruit and Indian chickpeas curry is maintaining a suitable harmony between #nutrition and taste. You will need to go Indian grocery shop to purchase India Chickpeas or (any available chickpeas). Other required ingredients are as follows @ 
Star fruit@medium size 4 no's
Indian chickpeas @ two medium size spoon full 
Potato @ 1big size 
Onion @ one big size 
Turmeric @ half spoon 
Salt @ as per taste 
Green chilly @ 3 no's Mustard seeds @ one small spoon
Oil @ 2 spoons 
Process: Clean chickpeas and soak in water for 1/2 hrs. Now cut star fruits, onion and green chilly in small cubes and use mixer grinder to prepare a thick paste. 
Peel off the potato skin and let pressure cooker potato and soaked chickpeas for 15 minutes appox. Once done, cut potato in small pieces.  Take a karahi over medium flame 🔥with cooking oil and let it hot. Add mustard seeds and fry for one minute. Now 
Add potato,chickpeas and turmeric together and fry for another 5 minutes. Its time to mix star fruit paste and salt ( as per taste).To prepare  gravy layer, let add little amount of water and leave for another 5 minutes .

This sweet, sour and spicy recipe is tasted really good and its goes well with Rice, Paratha , Veg Biryani etc.

I have a marketing degree from @arizonastateuniversity, but this was before social media and iPhones, so lots have changed since then and I am learning as I go. I also have a nursing degree from @nyuniversity. My most recent accomplishments is my holistic nutrition certification through @ntatraining. I am trying to use all three of these degrees to better myself and my families health. .

Why did I decide to start @the_holistic_nurse?!?! I wanted to track my journey and document everything I am learning along the way. We have food allergies, add, eczema, asthma and thyroid problems in my family and I’m trying to keep us healthy and heal us with food and natural lifestyle choices. I have already seen some of these illnesses improve and other healed so I am motivated to keep going on this journey. .

We don’t eat a specific fad diet or count calories. We simple choose to eat real, nutrient dense foods that have been properly prepared. We try to follow the guidelines of @westonaprice and live the best way we can. .
