Yellow foods bento 🌞#spectrumbento I took (almost) all of the ingredients of yesterday’s yellow food flatlay and made it into my next #bentorainbow #🌈 I love this fun, sunny colour so much and enjoyed the challenge of creating the protein-rich nuggets with yellow ingredients only! See how I fry the nuggets and skewers on my story (plus some exciting news!!) Photo editing was a nightmare though 😂 #toomuchyellow
In my box:
🌞Courgette (zucchini) raw 'noodles' – sliced with that fave tool of mine, a kiwi brand 'pro slicer' (bought in Thailand where it's used to make Som tam papaya salad, but it's really easy to buy it online too) and tomatoes. If you make this at home, dress the noodles with your favourite dressing and toss with veggies and crunchy things of choice. Or lightly stir fry for a few moments, gret mixed in with traditional noodles! I left mine without dressing to preserve the colour.
🌞#Jackfruit skewers, grilled on a old oven rack put over my biggest gas ring on my stove top – this is a technique often used in Japan for small green #shishito peppers and I like using it for all kinds of things that grill fast.
🌞Golden lentil nuggets, recipe: Soak 1 cup split yellow (or red) lentils in cold water overnight or 4 hours, then drain and blend (dry) in a food processor with 2 tablespoons linseeds, the peel of 1/4 organic lemon and 1 teaspoon each of sea salt and turmeric powder (1/2 tsp garlic powder optional). Let the mixture rest for 15 minutes. Heat (cast iron) frying pan with ca 1 centimetre layer of heat-stable oil, I used coconut oil, then grab two teaspoons and use them to shape the lentil mixture into 3-4cm nuggets and plop them straight into the pan. Flatten slightly and fry on low-medium heat until golden on both sides. Drain on kitchen towel. YUMMY!

Today’s school lunch is brought to you by the color GREEN. 😂 Green is beautiful! Spinach & herbs wrap, green leaf lettuce, turkey, dill havarti, and pickle roll-ups. Cucumber chips and broccoli with @primalkitchenfoods Ranch dressing for dipping. 👍🏽 I swung by and picked up the dressing from @kravemarket yesterday and I cannot describe how good it feels to have a local store to buy foods that I would normally have to shop for online or drive a distance to find. 😍
The wraps are Olé Mexican Foods brand, made with whole wheat, olive oil, and flaxseed and they’re 5g net carbs per tortilla. I usually buy Joseph’s lavash bread for my kids but my local Walmarts stopped carrying them. ☹️ I found these and remembered that my son liked them. Great alternative! The pickles are Vlasic Purely Pickles with no dyes. I can’t eat food dyes and I’m happy to always find a few brands of pickles that are dye-free and delicious. 💚

The new school year has been good so far. Hibi has a couple of close friends in some classes and I hope he will make more new friends as well.

I swear that I knew how to do this student thing not too long ago (and I was even kinda good at it!) ... so far, a sleep schedule is nonexistent & exercise has been sporadic. But I’m still eating like a champ so at least I have that going for me! 💁🏻♀️
Lunch on the go 🥗
I don’t know about you guys, but being a Mama I’m always on the go 🏃🏼♀️ I prefer to pack my own snacks + meals to ensure I stay on track! It takes a little prepping, but it can totally be done! Snacks are easy, I just throw fruit in my bag. Today I put together this salad + homemade “ranch” dressing by my fellow @medicalmedium friend @plantbasedskooch
Here are the deets🙌🏻
•1 yellow onion
•5 garlic cloves
•2 cups cashews
•1 cup filtered water
•1-2 tablespoons cayenne pepper
•Juice of 1 lime
•Juice of 1 lemon
•Salt + Pepper to taste
•Place in a high speed blender and blend until smooth
•Use organic if possible
