NEW RECIPE INFO CONTINUED: We've heard concerns about brown rice containing arsenic, so we switched to white rice flour, which is a good source of magnesium, phosphorus, manganese, selenium, iron, folic acid, thiamine and niacin.
Then we mixed that with Arrowroot to close out the gluten free flour mix. Arrowroot is one of the easiest starches for the body to digest, and is a healthier, non-GMO alternative to thickeners like cornstarch.
Then we added oat fiber to help the cookies keep their shape. Oat fiber is made by taking the hull or outer husk of an oat and grinding it up and is a good source of...you guessed it...fiber.
This was a happy fail. Lol. I was trying to make Lupin Flour/Oat Fiber cinnamon rolls and a crustless quiche for a fast dinner before meet the teacher. The dough was just to wet so I used a scoop and made little cinnamon buns. The house smells like fall and the texture was perfect! Each bun worked out to 2 net carbs (without the cinnamon cream cheese). This was my first time to ever use Lupin and Oat Fiber. I did make a few modifications to the recipe
Did half coconut flour half #oatfiber rather than 1/3 cup coconut flour only
Also added abt a 1/2 TBSP of baking powder. Thought it would help them rise

Keto Challah recipe #noalmondflour#nococonutflour 2 cups warm water with 2 tablespoons dry active yeast and 2 teaspoon sugar. 3 large eggs. 1/4 cup oil. 1/2 cup sugar substitute. 2 cups oat fiber. 1.5 cups vital wheat gluten. 1 cup casein protein. 1 tablespoon salt. 1/4 cup butter at room temp. Proof the yeast mixture. Add dry ingredients to stand mixer and combine, make a well in the center add yeast, mix, add oil and butter then add eggs one at a time till combined. Change to dough hook and knead on medium speed for 4-5 minutes. Place in oiled bowl and cover with plastic wrap. Leave in warm spot for 1.5 hours. Punch down dough divide in to 6 even pieces. Knead and shape each piece so they are long even pieces. Take 3 pieces and braid them together. Place on cookie sheet lined with parchment paper, egg wash and cover to rise again for 1 hour. Egg wash and cover in poppy seeds or sesame seeds bake 375 for 30-35 minutes until golden. Make sure you taste your raw dough to determine if it’s sweet enough. Keto low carb blueberry pound cake. No almond flour No coconut flour. I found this cake to be very tender. Macros per cake 26 net carbs, 241 fat, 70 protein, 2586 calories, I got 8 1 inch pieces making the macros 3 net carbs, 30 fat, 9 protein, 323 calories each piece. Cream 1/2 pound of Unsalted butter for seven minutes add sugar replacement 2/3 of a cup. Mix until light and fluffy add 1 teaspoon vanilla and three room temperature eggs one at a time. In a separate bowl combine 1/2 cup vital wheat gluten 1/2 cup oat fiber, 1/4 teaspoon xanthan gum 1/4 teaspoon salt. Add dry Ingredients to egg and butter mixture 1/2 cup at a time alternating with 1/2 cup of heavy whipping cream ending with the cream. So Flour, cream, flour, cream, flour, cream. Etc. fold in 1 cup of fresh blueberries that have been tossed in some oat fiber. I’m not a baker so I don’t know what I’m doing most of the time but I watch some YouTube videos before I made this and if you don’t know how to make a croissant you should look at some too. Keto low carb bagels No Almond or Coconut Flour. Macros 1.2 carbs 13 fat 13 protein 213 calories. These were boiled for 1 minute each side then baked at 375 for 25-30 minutes. 1 1/4 cup warm water to 1 tablespoon yeast (1 teaspoon sugar to activate) 1 cup vital wheat gluten 1/2 cup oat fiber 2/3 cup flax seed meal 1/4 cup psyllium husk powder 1 teaspoon gelatin 1/2 teaspoon salt 1/2 teaspoon xantham gum 1/4 cup oil or butter or whatever. Combine dry ingredients add frothy yeast mixture. Mix on low speed add oil change to dough hook, knead dough 5-7 minutes. Place in oiled bowl cover with Saran Wrap allow to rise for 1 1/2 hours. Measure and weigh out form to smooth ball, poke a hole in center and pull and form bagel. Rest for 40 minutes cover. Boil in salted water for 1 minute each side.
