Our relationship with @neals_yard_dairy goes way back to 1995 when the Cowgirls visited Neal’s Yard Creamery and Neal’s Yard Dairy in England. This is where Sue and Peggy were inspired to develop their own cheese business in the Bay Area. Repost from @holdenfarmdairy -  Yesterday I was trundling around in the field called Ridge Field, sitting atop the Italian-made Same tractor (commonly known as ‘The Maserati of the Meadows’ [in Welsh {im Gymraeg}: ‘Maserati y dolydd]), pulling behind me an antique grass mower (the like of which was last seen in use in depictions on oh so many plundered-by-Empire ancient Egyptian artefacts in the British Museum) and in so doing, mowing some 3rd-cut haylage. This was the start of the process of partially drying, partially fermenting the autumn flush of grass for baling and wrapping for storage for feeding the cows through the winter. Then this morning, I was out feeding a group of eight little calves who will join the milking herd in 18 to 24 months and whose milk will be turned into Hafod cheese that will not be ready for sale for another three years. Performing these solitary tasks: scurrying about gathering-up food for winter, helping little calves grow into fat strapping Ayrshire dairy cows, all the while surrounded by mountain vistas drenched with the ailing, fading autumn sun, one can’t help but be introspective. I was struck by the fact that pretty much everything that any farmer does is busying themselves over the future, much the same with cheesemaking, fiddling away the milk into cheese to be eaten months from now. So busy we are with these grand futuristic visions, we require people living in the present to sell the fruits of our farming and cheesemaking labours and so it is a delight to see so many cheese shops in the USA currently involved with Neal’s Yard Dairy’s ‘Cheddar Games’. They sell our past, while we make our futures. And I think that must be a sort of Time Travel. Or if not Time Travel, then evidence of Parallel Universes? Interdimensional Avenuescapes? Surely? Come on! Regardless, thank you myriad American cheese shops and the patrons thereof, thank you Neal’s Yard Dairy, indeed, for that matter, thank you to all our customers.

Keen’s Cheddar, a traditional Somerset cheddar from the U.K., killing it in the rind competition. (Look at those blushing molds!) This eponymous cheddar has been made by the Keen family on Moorhayes Farm since 1899. It’s got all the earthy, musty backbone of a great British clothbound cheddar, with a bright, clean tang. Paired with a New Mexico Jonathan apple, it feels just like the weather right now: crisp and sunny, cozy and comforting. A classic that’s a classic for a reason. 🙌

Yesterday I was trundling around in the field called Ridge Field, sitting atop the Italian-made Same tractor (commonly known as ‘The Maserati of the Meadows’ [in Welsh {im Gymraeg}: ‘Maserati y dolydd]), pulling behind me an antique grass mower (the like of which was last seen in use in depictions on oh so many plundered-by-Empire ancient Egyptian artefacts in the British Museum) and in so doing, mowing some 3rd-cut haylage. This was the start of the process of partially drying, partially fermenting the autumn flush of grass for baling and wrapping for storage for feeding the cows through the winter. Then this morning, I was out feeding a group of eight little calves who will join the milking herd in 18 to 24 months and whose milk will be turned into Hafod cheese that will not be ready for sale for another three years. Performing these solitary tasks: scurrying about gathering-up food for winter, helping little calves grow into fat strapping Ayrshire dairy cows, all the while surrounded by mountain vistas drenched with the ailing, fading autumn sun, one can’t help but be introspective. I was struck by the fact that pretty much everything that any farmer does is busying themselves over the future, much the same with cheesemaking, fiddling away the milk into cheese to be eaten months from now. So busy we are with these grand futuristic visions, we require people living in the present to sell the fruits of our farming and cheesemaking labours and so it is a delight to see so many cheese shops in the USA currently involved with Neal’s Yard Dairy’s ‘Cheddar Games’. They sell our past, while we make our futures. And I think that must be a sort of Time Travel. Or if not Time Travel, then evidence of Parallel Universes? Interdimensional Avenuescapes? Surely? Come on! Regardless, thank you myriad American cheese shops and the patrons thereof, thank you Neal’s Yard Dairy, indeed, for that matter, thank you to all our customers. #nydcheddargames

Beautiful Hafod, meaning “summer pasture” in Welsh (and pronounced HAVE-od), is made on the oldest registered organic farm in Wales, Bwlchwernen Fawr (and we’re not even going to try to explain how to pronounce that on Instagram). True to their heritage and to the cheese’s name, Holden Farm Dairy puts extraordinary care into what its cows eat: home-grown organic grasses, herbs, and other wild plants, even in winter—the farm dries and preserves its summer forage to make up the bulk of their winter silage.

Their herd of Ayrshire cows, a breed known for its hardiness, is particularly well suited for the hilly coastal landscape and climate of West Wales—not to mention that Ayrshires were first bred in Scotland specifically for cheesemaking. Their milk has a higher percentage of protein and fat and is naturally homogenized, translating to a cheese with a rich, luxurious texture and mouthfeel—very distinct from the crumblier, drier cheddars you’ll find elsewhere.

The farm began its cheesemaking practice as Holden Farm Dairy in the late 2000s, with an Alpine-style recipe as its starting point. But the recipe has changed considerably since then, beginning with the discovery of a classic 1917 British cheddar-making manual whose methods the family adapted to bring the cheese closer to its regional roots. Even today, there’s a culture of experimentation and innovation at Holden Farm Dairy, with their herdsmen and cheesemakers constantly testing out different methods and materials to improve their final product.

So what does the cheese actually taste like? Thanks to a long, slow acidification process, it’s a mellower, deeper flavor than the tangy, bright cheddars of Somerset, still earthy but with a pronounced nutty quality. My friend and I stopped by #markethallfoods the other day and we were given a fantastic history class on the making of the Westcombe Cheddar.

Did you know that this cheddar cheese is wrapped with linen dipped in lard to help keep the moisture in? Unlike other cheeses that can be aged for a long time, the Westcombe Cheddar tastes its best within its first couple of years of being processed. You'll generally find them between 11 and 18 months old.

The taste of the cheese is a mix between your normal cheddar and a blue cheese (it's kind of insane that such a flavor exists). And then it lingers in your mouth with a smoky aftertaste.

We had such an amazing afternoon and thank you, #Derek, for being a great cheese host. I can't wait to go back and try their other cheeses!

A Rio Grande-shaped blue vein winding through Isle of Mull cheddar. I’d imagine there’s a similar thrill in cracking geodes, or analyzing the rings of a felled tree. Here, I’m the first to see the effects of time, oxygen & penecillium roqueforti on this wheel from the Scottish coast.
