Food in general has always made me happy but vegan food is a whole different story!
Who else gets super excited over trying new vegan options?
Someone said to me, "If what you are doing works so well, why doesn't everyone do this?" I smiled and asked them, "Why isn't everyone super rich, why isn't everyone happy in their relationships, why doesn't every talented athlete make it all the way?
In each of these examples there are masses of people doing it. If you sit and speak to anyone that has done these things, you will see that they did and do the opposite of what most of the population thinks and does.

I always have on hand some energy bites, especially when I’m running back and forth everyday to class. They are the perfect high energy snack. For these I made @rachlmansfield freezer cookies, but I made them into balls and used @maranathanutbutters Light roasted almond butter and @livwell_nutrition cacao plant based protein. I feel so much better reaching for these as a snack then a snack with empty calories. You can find this recipe under “fudgey no-bake chocolate chip freezer cookies” on @rachlmansfield blog! It doesn’t have to take ages to makes something, nutritious, delicious and cheap!
I pan fried, courgette and yellow pepper in a little chilli powder, added half a bag of mixed rice and quinoa and 4 eggs whisked with some paprika powder. A good handful of coriander and a few pickled red peppers from a jar.
So full of flavour and very filling. Along with championing nutritious meals I also really value “using things up” and hate waste! This is a great one pot wonder for that.
Took about 10 minutes to make.
•FRIDAY AFTERNOON CALLS FOR ONE OF THESE BEAUTIES• These flapjacks had been on my mind for a while. How do you preserve the gooey sweetness of flapjacks but at the same time not consume an entire tub of golden syrup? Well this is my version - and they’re awesome. I’ve added in some seeds for extra goodness and used dates to provide the sweet gooeyness (I’m sure that’s not actually a word 😆) and of course an obligatory drizzle IMO of dark chocolate 🍫. Want to have a go 👇? Happy Friday people...it’s almost the weekend 🎉.
100g butter or coconut oil
2 tablespoons honey/maple syrup/agave/golden syrup
75g dates blitzed in a food processor
1 tablespoon chia seeds
1 tablespoon flaxseed
1 tablespoon sunflower seeds
20g dark chocolate - melted (optional)
1. Preheat oven to 180 degrees C
2. Melt the butter/coconut oil in a saucepan along with the syrup and add the dates, stir on a medium heat till the dates have melted in.
3. Add the rest of the ingredients (except the chocolate).
4. Spoon into a 20x20cm square lined tin and flatten with the back of a spoon.
5. Bake for 15 minutes.
6. Cool, and then drizzle with the melted chocolate if you’re using and cut in squares:

Finally Friday is here and we are all tired... Tired to cook...My favorites are always one pot meals for such days, where I can combine all proteins, carbs, fats in one pan...specially if I don't want to stand in the kitchen too long but still want something fancy and a glass of wine.
. ⭐My choice today is Shrimp Risotto, which is always my quickest life saver. I always keep some risotto rice at home and shrimps in the freezer.
. ➡️Get a non-stick pan, open a glass of chicken broth, put on the side. Chop a middle size onion ( or few spring onions ), cook with olive oil for 2 min, add shrimps, stir. Add the risotto rice of your choice ( one cup for 2 Pp.), toss a little white wine in if you have ( have a glass for yourself) 😀, start adding the broth little by little, add, stir, add, stir until the rice is cooked for your taste, authentically "al dente". Some seasalt and pepper, done! 10 min. prep, 20 min. cooking and chatting time. 🙌 WIN WIN!!.
. ⭐Add some saffron in the broth for that gold color! ( did you know saffron brightens the skin, evens the skin tone, gives a glow???)
. ⭐Meanwhile you could throw some mediterranean veggie cuts on the grill pan, 5 min each side, cool on the side. Drizzle some olive oil and balsamic vinegar on top, season with salt, pepper, basil and make it a starter.
⭐Totally balanced, healthy, nutritious, simple but fancy 🇮🇹 Italian dinner!!! Have another glass of wine during dinner 🍷, then stop...go watch a movie😊 and don't repeat the following day, this was a Friday treat with all that rice and wine 😂

Peri Peri Hummus Pitta Pizza 🌶😍 I used the leftover hummus from yesterday’s tapas, spread on top of pitta bread and then topped with tomatoes, pepper and mozzarella and baked for about 10/12 minutes 🌶🧀🍕
Okay, I’ve had second breakfast (hobbit much), and settled down for 10 mins before I start travelling again.
THE SCALES ARE NOT THE BE ALL AND END ALL.

Weight : -1.25lb
So callipers do not tell you a body fat percentage per se, they just give you a figure of ‘fat’. If I was solely focussing on ‘weight loss’ how disappointed do you think I would feel looking at 1.25lb loss in 5 weeks? But -18 on the callipers this morning? I am elated! I have shed a shit load of fat in 5 weeks! This is the scientific bit.
I have also lost inches, unknown at the moment because I can’t find the tape measure but the gym will measure me next Friday.
This much is obvious because for the first time ever I have bought clothes all in size 10, not just the odd bit. That’s the emotional tell.
So, to summarise quickly, if you are solely focussing on the scale for WEIGHT loss and not looking at other FAT loss markers, it easily gets disheartening. There are a range of ways to use the scale: daily and take an average, weekly or monthly.
Stop getting emotionally attached to a piece of equipment that gives you one statistic.
I’m no trained PT or nutritionist (not for humans anyway) but am happy to have a chat if you want/need to.
