Festive Bites:
INGREDIENTS:

1 cup rolled oats
1 cup coconut flakes
1/2 cup brazil nuts
1 cup almonds 
1/2 cup dried cranberries
1/2 cup pitted dates
1 tsp cinnamon
1 1/2 tsp ginger
1/2 tsp nutmeg
1 tsp pure vanilla extract
1 Tbsp pure maple syrup
2 Tbsp extra virgin coconut oil
1/2 cup dark chocolate chips 
1/2 cup freeze dried plum 
100g of dark chocolate for topping

METHOD:

Add all ingredients into a food processor except chocolate chips and freeze-dried plums.

Process until the mixtures comes together.

Add in the freeze dried plums and chocolate chips and pulse a few times to combine.

Take a small handful of the mixture and roll into balls. Place in the fridge while you melt the chocolate. 
To make the chocolate topping, place a heat-proof bowl over a pot of boiling water (or use a double boiler). Place the chocolate into the bowl and melt slowly. 
Remove the bliss balls from the fridge and drizzle the melted chocolate over the balls. Sprinkle with some freeze dried plums.

Place back in the fridge to set.

Christmas fun! After the twins’ music concert this morning, we had lots of fun making and decorating sugar cookies this afternoon!

I LOVE being an auntie! It is amazing to watch these two grow and learn and get to be a part of it. They are totally part of why I am working to stay healthy, so I can be around for many many years to come, hanging out with these munchkins!

And today we want to share a simple technique for meditating while you're on the go and need a little grounding.

We call this "Micro Meditating"-- it's a technique where you allow yourself a quick minute or two to go into a meditative state. In this brief moment, you can recenter and connect with your true self.

We love this technique because it's simple, quick, and extremely powerful.

Here's how to do it:
- Closing your eyes.
- Notice your breath.
- Envision a place that brings you peace.
- Simply spend some time here and focus on your breathing.

Coming back to the present, you should feel refreshed and grounded. This is a great tool to have in your back pocket (and to share with your clients) to use wherever, whenever!

Poached egg (homemade) chicken broth soup with lovely spinach, asparagus and some broccoli too.

I found this cooking technique absolutely amazing and hopefully, exciting enough for you to attempt.

This is how I poached my egg in the soup:
1. Bring the stock to a simmer over medium-high heat
2. In a separate bowl, crack your eggs... And once shimmering drop one egg at a time about 5-10 seconds apart in different areas of the pot (so the egg whites can combine on their own yolk)
3. Poach until each egg is set (about 3 minutes per)

Et voila! C'est finis! If you want to be extra careful not to break your egg when plating, remove it with a slotted spoon and transfer it onto paper towels. When ready, add it as the last component to your soup :D. 
As a safety precaution, please be careful because you are cooking a raw egg. The temperature must be simmering (160°C) consistently during the three minute cooking time, to make sure everything is safe :). Hope you're having a lovely day :D. Hopefully you try this sooner than later. .

I love pre-made salad mixes. It is a good way to mix it up and keeps me from getting too bored. Today I am having the Asian salad for lunch. Anyone doing Christmas cookie baking this weekend? 🍪 I love this post from @alyssalavyrd! It so clearly shows the differences in mindset towards food; something that is so applicable this time of year when sweet treats seem to be everywhere. When we take away the restrictive foods rules or time restraints (i.e. I can only eat cookies during Christmas), we eliminate the urge to eat them all at once. It’s not the food that’s the struggle, it’s our mindset towards the food. “Christmas” cookies can be enjoyed all year round if you so choose 😉 •

Last night I enjoyed a wonderful Christmas party with so many good friends! 🎄 What was one of the best parts of this holiday party? I didn’t stress about the food. I enjoyed the dinner, had a couple pieces of dessert, and didn’t think twice about it until reflecting back while writing this post. My mindset has changed drastically over even the last year, which has allowed me to more freely enjoy events such as this Christmas party! •

I recently tried some amazing cranberry sauce, which I love, and decided to make my own without high fructose cor  syrup (yuck!).

Enjoy this recipe.  Cranberries have vitamins and a great taste addition to ths holidays!

Here’s what you’ll need to make this cranberry sauce recipe:

1 bag of fresh cranberries

1/2 cup honey or maple syrup or 1/2 cup of monk fruit sweetener (you can get my favorite at positivelywell.com/shop/pantry)

water

the zest from one orange, or orange juice

INSTRUCTIONS

First, rinse the cranberries well and drain off excess water. Pick through the cranberries and discard any squishy ones.

In a medium saucepan, combine the cranberries, honey and water. Bring the mixture to a boil over medium-high heat, then reduce heat to medium-low and cook, stirring occasionally, until the cranberries have popped and the mixture has thickened to your liking, about 5 to 10 minutes.

Remove the pot from heat and stir in the orange zest. If you’d like to add cinnamon or orange juice, add it now. Taste and, if the mixture is too tart (keeping in mind that cranberry sauce is supposed to be a little tart!), add more orange juice, honey maple syrup, or monk fruit to taste.

The sauce will continue to thicken as it cools. It will keep in the refrigerator, covered, for up to 2 weeks. *Thanks to cookieandkate.com for the inspiration.

Remove the pot from heat and stir in the orange zest. If you’d like to add cinnamon or orange juice, add it now. Taste and, if the mixture is too tart (keeping in mind that cranberry sauce is supposed to be a little tart!), add more orange juice, honey maple syrup, or monk fruit to taste. Ever since the start of our recent work exchange trip to the west coast, I've been struggling a bit with dietary choices... Before we went away, I was eating a mostly plant-based diet, because that's what made me feel best (physically, mentally, morally). While we were away, I'd eat what was made for me by my host without beating myself up over not being vegan anymore (this was made easier by the fact that I was being fed local, organic food). Now that I'm back (especially now that I'm staying at my parent's place), I'm struggling to find the balance between eating what I know will make me feel good and making due with what's in the fridge. I'm trying to remain flexible but I'm sensing more and more that my body is telling me to stick to what feels right. The line is still a tad blurred, but I think this is all part of the journey towards being in tune with my body, noticing its signals and providing what it needs. There are so many signs our bodies send us daily to tell us something's not right. For example, mine will signal me in the form of breakouts, indigestion and fatigue. With the holidays coming up, it'll be especially important to stay focused on what foods are best for me and to avoid indulging too much in those that aren't. Eventually, I'd love to be growing my own food, but until then, I will continue to try and eat as healthy and sustainably as possible without breaking my back over it. Any one else out there struggling with this? Would love to hear your thoughts.

It has been a while since I last posted. Honestly it has been a harsh couple of weeks with life and emotional stress. Battling depression is not easy especially when you have medical issues and end up a bit medicated.  No it has nothing to do with being vegan. I've been dealing with this issue before then and decided to get treated when I couldn't take it any longer. 
There's a lot of negativity within myself and it's hard to deal with it but I know that when everything seems to be falling apart there will be a positive outcome no matter how impossible it may seem. I'm starting again one step at a time.

It has been a while since I last posted. Honestly it has been a harsh couple of weeks with life and emotional stress. Rest day

If your anything like me, you will not take many rest days🤦‍♀️ sometimes I do 2 workouts in a day, Im so used to my morning workout routine and I go to classes at nights 2 nights a week....so I have decided Im cutting back a wee bit cos there is such a thing as "over exercising". As I said the other day, I have hit a brick wall and saw no changes or progress for a while....so my new years resilotion is to  TAKE REST DAYS. So just remember you dont have to exercise like mental to get results because rest is part of the process
Muscles are torn in the gym
Fed in the kitchen
And built in bed💪👏👍
And like I always say the biggest part of your fitness journey is the nutrition part 80% nutrition 20% fitness ABS ARE MADE IN THE KITCHEN😉

For most of you the only time you can do is before work...or after work. That's it. Sometimes life isn't convenient but doesn't mean you shouldn't try include more activity in your life. -
A quick bike ride or evening walk is better than nothing. -
Remember health is a bunch of pieces placed one by one together until you have something great and substantial. Just make consistent change at least.
