Tonight I am celebrating!
In February I started an intensive and amazing nutrition course. 
I was unsure and scared.  I had no clue how I could devote enough time and energy to learn and grow.
This weekend I completed that program. 
Tonight I celebrate my success as I am now a very proud NTP! I’ll miss the text messages from brightspace, but I’ll never forget the journey!
I learned so much about myself, Nutrition and healing. 
I am grateful for each and every person in my class, my amazing group leaders and my outstanding teachers!  Thank you just isn’t enough but it will have to do for now!
I am also forever grateful to the friends and family who supported me all along and encouraged me when I was freaking out!  I love you!!
I feel so lucky to have found something I love in the second half of my life and look forward to making it count for the rest of my life!

Filling - mix the following and fill pie pastry:
Can of Mediterranean style red kidney beans (can swap out or add in vegan sausages and/or tofu and/or quorn)
3 grated carrots 
2 tomatoes sliced n diced
1/2 can of tomatoes 
Splash of Italian herbs
1 heaped tspn Paprika 
1 tspn Garlic powder
1/2 an onion sliced n diced
1/2 c nutritional yeast 
4 tspns cornflour
1 heaped Tbspn sundried tomato pesto (can swap out for basil pesto)
Splash of Avocado oil
Salt n pepper

Bbq sauce swirls on top. (can also top w vegan cheese; fresh basil; pineapple)

Bake at 190c for about an hour till filling cooked.

***RECIPE***
Another art type dish (a lil this, a lil that kind of a thing) 
Simply Chicken Pho
1 tablespoon healthy fat (grass fed butter. Avocado oil, etc.)
2 tablespoonsminced fresh ginger
2 tablespoons minced garlic
2 quarts Homemade Chicken Bone Broth or chicken stock
2 tablespoons coconut aminos 
4 small bok choy 
1/4 red cabbage
1 precooked instant pot whole chicken or 1 store-bought rotisserie chicken, meat shredded
Long green onions
Avocados
Fresh japalenos 
Fresh cilantro
Fresh basil
Red pepper flakes

1.  In a medium saucepan, heat the healthy fat over medium heat. Add the ginger and garlic and sauté until fragrant, 1 to 2 minutes. Add the broth and coconut aminos, bring to a boil, and cook for 2 to 3 minutes, or until cooked through.

2.  In shallow bowls, layer the veggies and top with the shredded chicken. Top with broth.

Top with long green onions, avocado, fresh japalenos cilantro, basil, and red pepper flakes.

You may or may not have noticed that I’ve been eating a lot Kimchi lately- I know my Korean brethren sure have as you guys have been reaching out! Appreciate it the messages. 
Kimchi and other fermented foods are loaded with Vitamins A, C, B1, B2,  as well as minerals like iron, calcium and selenium. 
So Check this out- got a blood test recently and got some very weird results. Signs of malnutrition/malabsorption and protein deficiency. Pretty strange since I eat so much high quality protein, nutrient dense foods and calories in general...this most often leans in the direction of a  malabsorption issue like celiac disease and inflammatory bowel disease- except I dont experience any GI problems with the foods I currently eat. I book myself an allergy test. Turns out I’m allergic to cows milk, sesame and hazelnut. Now I am not a huge dairy/milk drinker BUT I ingest whey protein each morning and post workout EVERY day (2-3 servings a day), I eat yogurt daily, and have cheese on a semi-regular basis (not daily). The main reason that I eat yogurt and and drink kefir is for the probiotic bacteria that is beneficial for a healthy gut microbiome...this is a huge deal and a life changing dilemma to deal with. In comes Kimchi... Kimchi is a fermented food with powerful gut-strengthening bacteria that can boost immunity, aid in weight loss and improve digestion. 
I am now three weeks into a completely non-dairy (no sesame or hazelnut either) diet and it is amazing how much my daily energy levels have increased! Looking forward to getting more blood test results in a few weeks to see how things have changed.

You may or may not have noticed that I’ve been eating a lot Kimchi lately- I know my Korean brethren sure have as you guys have been reaching out! Appreciate it the messages. Kimchi and other fermented foods are loaded with Vitamins A, C, B1, B2, as well as minerals like iron, calcium and selenium. I took stock of my nutrition and noticed that I haven’t been drinking enough water. • Carob is less bitter than cocoa so less sugar needs to be added to make it palatable.

Food is information that our body uses to create new cells, repair damaged tissues and fight sickness, disease, and cancer!

Think about the food that you eat and be honest. Are the messages this food is going to send to my body going to tell it to create, repair and prevent? .
Or will it induce inflammatory responses, skyrocket blood glucose levels (blood sugar) and make you sore/ deplete oxygen levels in the bloodstream? .
All this being said, I will never have a client go on a diet! Im not a dietitian or physician. I simply love to feel good and eat good becuase im aware of the effect food has on our body and its function!

I still eat food that isnt perfect and occasionally indulge in sweets, I promise its OKAY. ENJOY THAT SHIT. .
Just make a life long dedicated habit to eating mostly, good, WHOLE FOODS and notice the change in your body physically and pyschologically. .
I highly recommend a 80/20 Good/Not-so-good approach to the foods you eat! eat balanced and well at least 80 percent of the time and treat yo self on occasion. It is the easiest and best commitment to make for yourself and for your health.

I love love loooooove Stacey's amazing transformation and story 💗💃🎉 "I started a nutritional program because like most people, I was sick and tired of being sick and tired. I hated the person I had allowed myself to become, and I hated that I wasn’t the wife I should be to my husband, or the daughter to my parents, or the sister or friend I needed to be. I hated myself. I hated everything. I struggled with the idea of investing so much money in myself when I was clearly aware of my other financial obligations, but a little voice inside of my head kept nagging me to “just do it.” So, I did… and I haven’t looked back. 
The program quickly became something that I truly believed in. People seemed to notice a change before I even noticed it. Those little words of encouragement from people you didn’t even think noticed you sparked a light within me. Before too long, I began to see the things in myself that other people were seeing, and not just the fact that I was losing weight, but that I was becoming a whole new person. I was happier, lighter even. I began to form a new respect and admiration for myself (something very new to me) and in that journey, it opened even more unexpected doors. The ongoing love/hate relationship I’d had with food most of the life, began to transform and I started viewing things differently. I began to respect it, something that before this program would have made no sense to me at all. I also learned that falling off the wagon doesn’t mean you can’t get back on it and start again. Changing my mindset towards myself and food has really assisted me in this journey of self-love. What started out as a challenge to myself to (hopefully) lose weight and get a little money, became so much more than that… and those are the results I am most happy about. 
P.S. - This is probably the most vulnerable any of you will ever find me. Also, these pictures were taken 16 weeks apart with 41lb SHED and a combined total of 63" GONE FOREVER." Wow!! She's surly inspired so many!

Bringing the colours of Fall indoors today. Roasted root veggies are one of my all time favourite foods to eat and literally the hardest thing about making them is the time it takes to chop them up. A drizzle with some EVOO, a dash of sea salt and whatever other herbs strike my fancy and that's that. Roast in the oven at 350 until tender. Pairs well with pretty much anything and reheats well too. .

Not only are you thinking of everything you need to do to get your family out of the house on time this morning with backpacks and lunches in tow, but you’re also going over the million items you need to check off your daunting to-do list before the day is done (and maybe a few you forgot about from the day before). Forget about having a minute to yourself – you’ll be lucky if you have a minute to sit down.

Well here is your scientifically backed argument for not putting yourself through the morning marathon of stress: high levels of stress can spike your blood sugar, raise your blood pressure, lower your immunity, and increase inflammation to name a few, all negatively affecting your mental and physiological health.

Have you guys tried making pumpkin spice latte at home? If not I 100% recommend it. It is way cheaper and lower in calories (95 kcal) for the same amount of portion even more, I assume (never really bought it anywhere)

Personally I've never been a fan of it but I kind of like that fall taste now especially at home. This one is even better for it's completely vegan. 🌱🌎☕ What has gotten me to make it twice today is that there is 7g of protein in this drink a alone! Low in carbs/sugars and fat. .

COCONUT SKILLET BREAD WITH HOMEMADE STRAWBERRY CHIA JAM.

I was in the mood to bake something new and I just got my first cast iron skillet. I’ve had skillet breads before so I decided to give it a go. The recipe I found had no sugar added in any form (natural or added), so I whipped up a batch of strawberry chia seed jam. The result was amazing! Imagine eating a crepe that’s actually good for you, and that’s what I got! .
Both the bread and the jam are super simple and offer a foundation where you can add in whatever you like. I made my bread very basic, but you could throw in nuts, chocolate chips, pumpkin puree, and/or different warming spices.

Skillet bread ingredients: 6 eggs, 1/2 light coconut milk, 1 tsp vanilla, 2 tbsp melted coconut oil, 3 tbsp coconut flour, 1.5 tsp of baking powder, a pinch of salt and a dash of cinnamon. Directions: Preheat oven to 350 degrees C. Mix all wet ingredients before adding dry ingredients to the mix. Grease your cast iron skillet before pouring mix it. Bake for 30 minutes or until the bread is firm.

Strawberry chia jam ingredients: 2 cups frozen strawberries, 1 tbsp chia, 1-2 tsp coconut syrup (or maple syrup). Directions: warm strawberries in a saucepan until they start to bubble and liquid is released. Add chia and stir over low heat for about 5 minutes or until the chia has really expanded. Add in sweetener of choice and cook another 2-3 minutes. If you like a smooth jam, use an immersion blender to get rid of any chunks. Store in a jar and refrigerate. This jam only keeps about 5 days. Enjoy over EVERYTHING!

Breakfast this morning was a whole wheat English muffin with half regular cream cheese and half cinnamon cream cheese along with a persimmon 😋 this was so good! The persimmon was super sweet and the cinnamon cream cheese was so yummy! Not doing much today probably gonna go shopping to get some food since I wasn’t able to go yesterday and then I have to work on some schoolwork. Hope you all have a great Sunday! LET’S WANDER WHERE THE WIFI IS WEAK. It was so nice to unplug yesterday and do something I love: climbing outside. Amidst our stressful, busy lives, we need to remember to unplug once in a while and do something fun! I have lots of work this week, including a big essay, but I’m so glad I went out yesterday with friends and just had fun out on the crag. Not to mention, the weather was perfect and the scenery/views were incredible! There’s always time for fun or relaxation if we allow it. It’s so important to get our minds off things (our brains need to refuel too!) Thanks @savedbyvegan for helping to remind me to unplug and do something you love!

Actually, simple is better. I’m not saying you CAN’T make elaborate meals, but I know in this household, that wouldn’t last long, we’d get burnt out, and we’d end up hitting up the drive throughs instead of “dealing with” making food.

I had an accounting teacher that always used to say “use the KISS method, Keep It Simple, Stupid.” So I prep most of my ingredients on the weekend, and I keep breakfasts SIMPLE!
