Apologies for the absolutely TERRIBLE photo but when hubs spends a few days trying to decide on the *perfect* keto supper, then rolls out the Joe Beef Cookbook, you know it’s gonna be goooooooooooooooood and a photo documentation of the event must occur. So what you’re seeing here is very slow cooked pulled pork on scallops, with hollandaise sauce. Um. YES. His first time making hollandaise and he nailed it !! (My first, and second attempts last year ended up splitting and going in the garbage, so much wasted liquid gold aka butter 😭.) Now for the pulled pork and egg breakfast !!! 🍳 🐖
Steve Phinney and his team at Virta Health have showed us that Type 2 Diabetes is a reversible condition. Low-Carbohydrate, ketogenic diets play a key role in successfully managing diabetes. Bagels are everything 😍
Fathead bagels are super easy and delish 😍 I use:
1.5 cups mozzarella
2 tablespoons cream cheese
3/4 cup almond flour
Everything but the bagel seasoning
Step one: melt mozzarella and cream cheese in microwave
Step two: add almond flour and stir until well combined
Step three: Divide into 6 even portions. I use a mold from @daisoaustraliaofficial to help with this
Step four (optional): sprinkle with seasoning, poppy seeds, sesame seed etc of choice. I use the Everything bagel season that I won in the @keto.ninfem giveaway 😍👌🏻
Step five: bake at 200C for 15 minutes or until golden

Move over Donna Hays, the air fryer has won my pork belly-loving heart! 😍
Christened my new air fryer with pork belly (did you expect anything less?!) and I have NOT been disappointed! It cut the cooking time IN HALF!
I did an initial 20 minutes at 160C, then messed with the temp for another 45 minutes (ranging from 170-190C). Would prob just do 180C from the beginning next time and see if I can cut the cooking time down further 🙌🏻

What a fantastic event I got to share with my olive oil brand of choice @moroworld with my bestie @natalieforsyth22 at @emiliamelbourne .
We were taken through an olive oil tasting first which was fascinating to learn so much about the difference between all the flavors, what makes it extra virgin and how the color has no impact on the quality. .
I asked about smoke point and they gave great advice around using their traditional olive oil for deep frying because you can take that up to 250c and the others are fine to heat up to 200c so 💥 there goes that myth that you can’t cook with olive oil at a high heat!
The Trattoria Emilia head chef demonstrated two meals and if you go to my stories I’ve shared the recipe for the marinated kingfish which I’ll definitely be making! .
Today I enjoyed some risotto, bread and pasta... things I haven’t eaten in years and I decided going in that I was just going to relax and enjoy the day and so I did. .
As a result I realized how much my palette has changed. I just didn’t enjoy the risotto, the pasta was as good as it’s going to get and it was nice but I’m happy to not eat it again for a while and the bread... meh! .
I was worried how my body would react but I’m okay. I now know how much stress impacts digestion and I think because I was calm and relaxed that has a lot to do with not reacting. .

FMD- Fasting Mimicking Diet Transition day 6.
Although I’ve finished my fmd it’s important when re-feeding to consume complex carbs and minimise my usual fish, so instead I will make some paleo bread, but in the meantime I’ve made 3 dishes; broccoli rice, sautéed butternut pumpkin in sesame with spring greens and walnut stuffed mushrooms with garlic & onion, together only 800 calories!
⚖️My tip-I didn’t need to use my cronometer app as the calorie scales were sufficient, the night before I worked out what I was going to cook for the next day to make it easier.
🥦Next time what would I do differently? I will eat more leafy greens, herbs and spices.
☕️My only cravings I’ve had during the fast were for coffee
⏱ I highly recommend Dr. Valter Longo’s fmd protocol for managing your weight, slowing aging and disease prevention. I know I will continue my next cycle in 2 months time as I’m feeling fantastic 🤸♀️🧘🏻♀️energetic, satiated, present and surprisingly chilled!

The right is two months later (October, 2018) on keto. I cannot believe how much inflammation and puffiness I had in my face! If you have ever thought about becoming keto-adapted, I hope this encourages you!
