Do any of you have a weekend food tradition? In our family, fritters tend to appear pretty frequently on our weekend menu. Today we’ve got corn fritters for the boys and a supped-up version for the adults, including spinach and feta. I often find fritters are a great way to use up veggies that have either been sitting too long in the fridge or have been leftover from the boys dinners during the week. The fritters that we don’t eat also make a great lunchbox addition too!

Ingredients:
• 3 cups coconut flakes
• 2 tablespoons maple syrup
• 1/2 teaspoon salt
.

Method:
1. Pre-heat oven 100-150 degrees
2. Combine all ingredients in bowl and mix until coated evenly
3. Spread out over 2 oven trays
4. Bake for approx 20-30mins until lightly browned and crunchy (stir occasionally to make sure flakes toast evenly)
5. Enjoy!

For those of you who may have missed this on my story this week, here’s my 4 step omelette recipe. I am all about the quick, delicious and nutrient dense meals. This recipe can be used for any meal (breakfast/lunch/dinner). Eggs are a great source of protein, omega 3 essential fatty acids, b vitamins, vitamin E, selenium, iron and carotenoids. Also, you have permission to eat the whole egg ☺️ no need to separate them - they are already designed in a way our bodies can recognise and digest. Choose organic/ local produce where possible. .

For all my vegan and lovely friends who may be sensitive to eggs try a tofu scramble instead. .
.
Serves 1: 
1. Wisk 2 eggs in a bowl with salt and pepper
2. Poor ingredients into pan on low heat with 1 tbs of olive oil
3. Add all the veg (mine had mushrooms, spinach leaves, capsicum, tomatoes and spring onions). 4. When on side is cooked, flip omelette. Serve with 1/4 of an avocado 🥑 .

Work lunch 🍴 Im currently living on a boat for work so haven’t been able to post much. I also haven’t been able to cook up any of my faves but still have been eating well. Here’s an example of what I’ve been eating lately- avo smash on cruskits topped with cucumber, sun-dried tomatoes and pepper. Everyone else on board are full carnivores so I’ve been eating a lot of roast veggies and salads- also a lot of crap haha. Dahlias are a close relative to sunflowers and Jerusalem artichokes. The different flavored petals come in an array of different flavors. Soup in the summer...yay or nay? I’ll eat soup anytime 👌🏻 Remember that lamb shank I cooked? I blended the broth (SO MUCH FLAVOR) with the carrots and onion that I cooked it with, crisped up the lamb in a skillet with some @fourthandheart garlic ghee, and topped it off with fresh mint from the garden. There’s cauliflower purée with COYO under there too but you can’t see it! I love repurposing leftovers into another form because it feels like a completely different meal. Do you prefer to mix it up or keep it simple by eating leftovers as they are? I do both, but apparently was feeling a little extra with this one 😂

After a fairly eventful week 😪 realised how much more consecutive work dinners, birthdays and afterhour work nights can take a toll on body and mind 😅 ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Listen to your body and know your own cues - uncooperative skin, changes in your bowel habits, restlessness and even noticing that you spent a good 10secs staring at the elevator buttons before I figured out which floor number to press 🤤(I was getting to my own apartment btw) 😂
Sounds like a recharge day is calling!

This is such a yummy coconut oil.  I love to  cook with coconut oil because of it’s high heat stability.  You can even melt it for baking purposes.  This one smells so coconut-y when you open it but doesn’t leave the taste on your food. 🥥 🌴
