🍳 -OMELETTE- 🥚 .
For those of you who may have missed this on my story this week, here’s my 4 step omelette recipe. I am all about the quick, delicious and nutrient dense meals. This recipe can be used for any meal (breakfast/lunch/dinner). Eggs are a great source of protein, omega 3 essential fatty acids, b vitamins, vitamin E, selenium, iron and carotenoids. Also, you have permission to eat the whole egg ☺️ no need to separate them - they are already designed in a way our bodies can recognise and digest. Choose organic/ local produce where possible. .
For all my vegan and lovely friends who may be sensitive to eggs try a tofu scramble instead. .
1. Wisk 2 eggs in a bowl with salt and pepper
2. Poor ingredients into pan on low heat with 1 tbs of olive oil
3. Add all the veg (mine had mushrooms, spinach leaves, capsicum, tomatoes and spring onions). 4. When on side is cooked, flip omelette. Serve with 1/4 of an avocado 🥑 .

Kale all the way up past my knees! Leafy greens are a MUST in your diet. So how can you incorporate them!!! Here’s my list below: .
My favourite way to add more greens ☞ • Sautéed with lemon juice • Smoothies (obvs) • Drizzled I’m healthy sauce • With salad! • Blended into pancakes (great for kids) • Soups and stews! YUM! .
Go for it! Add more greens they are loaded super foods and help clear and detoxify the body :)
Have shin splints and a calf niggle that won’t eff off so I’ve just focused on biking and HIIT until the half marathon in 9 days!!! Not an ideal way to end the last 2 weeks training but I don’t want to come to the start line with an injury again 🤞🏻🦋🌈🔮🌻

Listen to your body and know your own cues - uncooperative skin, changes in your bowel habits, restlessness and even noticing that you spent a good 10secs staring at the elevator buttons before I figured out which floor number to press 🤤(I was getting to my own apartment btw) 😂

Miso butterfish , purple sweet potato, spinach and kim chee 🤤 #yummyandhealthy ...This butterfish was so buttery , fatty and yum 😋 there was a time when fat was a real f-word because I thought that if I ate fat then I’d be fat. I tried low fat diets for years before I knew how to listen to my body 💚 I was heavier in my body , and even in my head - with more anxiety and headaches. Eating good amounts of good quality fat was a major game changer for me and definitely helped improve my hormonal balance . This is such a yummy coconut oil. I love to cook with coconut oil because of it’s high heat stability. You can even melt it for baking purposes. This one smells so coconut-y when you open it but doesn’t leave the taste on your food. 🥥 🌴
