You don’t know your missing meat or noodles.  I did both spiral butternut squash and diced squash.
I added onions, celery, carrots. 
Along with mushrooms, mini zucchini, tomatoes, and tomato sauce.
Flavor is right blend of Italian seasoning.
You could lay it out in a casserole dish do a crusted Panko or cheese top.

Satan called and he wants his weather back!  Seriously, it's that hot in Ohio.  So what do I do?  I decide to turn on the oven to make dinner.  But sometimes, I just can't help myself.  I love melty cheese and tiny pepperoni's that much. Every time I pull a low carb cheesy casserole out of the oven, you should see the smile on my face :-) So, here it goes.  Ground Beef & Spaghetti Squash Pizza Casserole for 2.  After I cooked the ground beef I went ahead and removed 1 cup and froze it for future meal prep.  This is a casserole for just me and my hubby so a whole pound of ground beef just wasn't necessary.

1 Small Spaghetti Squash-cooked strands removed (see post on August 24th on how to cook the squash)
1 lb Ground Beef -minus 1 cup(see notation above)
1 jar (13 0z) Rao's Pizza Sauce
1 cloves Garlic-Minced
1 c Mozzarella Cheese, Shredded
1/4 c of Mini Pepperoni
1 tsp Italian Dried Seasoning
Handfull of @bunkerhillcheese Parmesan Crunchy Cheese Crisps-crushed into very small pieces-i just use my hands
Salt to taste 
Preheat oven to 375 degrees.  In a skillet cook the ground beef, garlic, seasoned with salt until no longer pink.  Add pizza sauce and the cooked spaghetti squash strands, stir well until everything is covered with the sauce. Spoon into a small casserole dish and then add the mozzarella cheese on top.  Sprinkle on the Italian Seasoning, then the Cheese Crisps, and top with the pepperoni.  Bake until the pepperoni is hot, the cheese has melted and is bubbly around the edges. {Noodle-Free Pesto Vegetable Lasagna}

Remember when I used to talk about breaking recipes into steps, instead of trying to knock the whole thing out in one swoop? Well, after a long time of not listening to myself, I followed my own advice and I forgot how amazing being your own prep chef is.

On Sunday, after I vertically cut the three large yellow squash and two eggplants, @biyootz grilled them for me until tender.

On Monday morning, I made the sauce (a basic marinara, using one can plum tomatoes, which I squished by hand right into the pot, and one can of crushed tomatoes). Monday afternoon, I made a big batch of pesto, using basil picked up from the farmers market, toasted almonds and pecorino Romano.

Tuesday morning, I stirred together ricotta, two beaten eggs and a few big spoonfuls of pesto. I grated mozzarella cheese.

Tuesday evening, I layered it all in a casserole dish before baking. 
Do I always have the time or luxury to cook like this? Absolutely not. But, was Tuesday night way more easy going than it would have otherwise been? A million times yes. Cooking feels daunting. Feeling the responsibility of getting dinner on the table is daunting. Skipping the whole thing is tempting. I’ll take any trick I can get.

I cooked the onion and sausage together till the onion was clear.  I then added 2 tlbs of toasted sesame oil to the pan and all of the other veggies tossing till cooked to our liking. I guess I felt that after indulging last night, I wanted to stick to my two favorite food groups - meat, and veggies. This turned out pretty low carb. Chicken breast, lightly tossed in flour, S&P, oregano, and basil, with cooked garlic, basil, and oregano pour on top, baked, topped with parmesan cheese and parsley, and broiled... and a hamburger meat sauce on the side. (Who needs noodles?) Add to that one of my stand-by's, green beans, and this meal filled me up completely and left my tummy happy. ☺

I love how marinated #tofu is used in this recipe to replace egg.....the tofu was light and fluffy and very reminiscent of real egg (and @vietfun411 could eat it without getting sick so that's a bonus!). I used more tofu than called for to add protein and stretch the 2 portion recipe to 4 (and cuz tofu doesn't come in half cup packs and waste not and all that). This recipe is going in my make again list!

My first time making eggplant lasagna tonight! 🍆The only thing that makes it not Paleo or whole30 is the cheese. (It is grass-fed and organic though!😉) All other ingredients are squeaky clean! It was delicious! 
I roasted sliced eggplant at 350 for 10 mins on each side. 
Then I browned some grass-fed ground beef with lots of seasoning, then set it to the side. 
Next, I cooked 3 diced garlic cloves in the left over grease for about a minute, then I added a can of roasted, diced, Italian spiced tomatoes in with the garlic. I cooked it for about 5 mins then stirred in an egg (sounds weird but made it creamy) 
Then I layered eggplant, meat, tomato mix, then store bought sugar-free sauce, then grass-fed cheese until all my ingredients were gone and I couldn't make any more layers. 
I baked it at 350 for 30 mins. 
Everyone enjoyed it, even my #Paleojr 😋 I'm excited that my garden is going to give us lots of eggplant!🍆🍆🍆🍆🍆

I browned up some ground turkey and added garlic onions and sliced mushrooms and viola! This beautiful creation!

The less time in the pan, the greater the nutrient profile 💫. I always whap up a random miso-based sauce in the last minute of cooking time, so yum.
