My quick healthy lunch of Macaroni and avacados salad with cherry tomatoes and bell pepper..
1. Boil macaroni with salt and drain it.
2. Dice up very tomatoes and bell pepper. Onion is optional for
3. Mash up a ripe avacados with half a lemon and salt as per taste. You can use a food processor for a creamy texture.
4. Mix all up and enjoy. You can add black pepper too if you want :)

Tapai (fermented cassava) muffins with cranberries

Modified by me as I do not like cheese huhu so I omitted it and increased fermented cassava 😍. Below is half her recipe with my adjustments

125 gr Tepung Kunci/low protein flour
12.5 gr Susu Bubuk/milk powder
1/2 sdt/tsp Baking Powder
3/8 sdt/tsp Baking Soda
1/2 sdt Garam/tsp salt
75 gr Gula Pasir/white sugar
1 butir Telur ukuran Besar/large egg
180 gr Tapai Manis/fermented cassava
30 gr Butter (lelehkan,tunggu hangat/melt, wait til warm)
30 gr Minyak goreng/oil
125 cc Susu Cair Full Cream/milk
1/2 sdt Ekstrak Vanilla/pasta/essens
50 gr Cranberry (I used @colessupermarkets
sweetened dried cranberries)
1. Bahan A : Aduk jadi 1 semua bahan A di bowl. Bahan B : Kocok gula+telur sampai gula larut,masukkan tapai,aduk rata.Disusul sisa bahan lain,sisihkan/A: Combine all ingredients in A. B: Whisk sugar+egg til sugar dissolves, add fermented cassava, combine well. Followed by rest of ingredients, set aside.
2. Masukkan Bahan B ke dalam Bahan A aduk pake Whisk secukupnya jangan berlebihan/Add B to A, mix with whisk just enough. Do not overmix!
3 Tuang dalam cup/loyang muffin dan panggang 180-190 derajat selama 25-30 menitan sesuaikan oven sendiri yaa/Put in cup in muffin pan and bake 180-190C for 25-30mins, adjust according to your oven

Shrimp Apizza! They didn’t have my lobster pie on special at Bar today as hoped,, no thing ,, the shrimp was bangin! The Story, crispy crunchy outer crust / soft & chewy interior,, quality shrimp,, garlic,, oregano,, olive oil,, chile flakes, I squeeze a little lemon on each piece! #NoCheese for me. I’m thinking my favo CT pie:)!
