❗️Story time❗️ I’ve officially been back on Keto for one month. 🔹Back in June I decided to take a break from Keto to put on some muscle. I was WAY too small. Everything was going pretty well and my weight was pretty steady around 133lbs. Not bad for being 6ft tall! 🔹August-November was a completely different story. My grandfather, who has been healthy as a horse his entire life, was declining in health. Rapidly. Like seriously rapidly. I had a very hard time dealing with it and stress ate. I quit going to the gym, quit meal prepping, quit worrying about my health, and quit being the happy Giraffe I’ve always been. 🔹On November 12, my husband and I restarted Keto. Basically starting farther back than “square one”. It’s incredibly frustrating, but we all deal with hard times. I coped with waffles, pizza, and ridiculous amounts of crying. 🔹So, after one month back on Keto, I am down 14.4lbs and 9.75 inches total. I’ve got a ways to go, but I’m eager for the progress I know I’m going to make 💪
I had seasoned my silverside overnight and brought it back to room temp. Now I'm pot roasting this baby 😀
Brown all sides of the meat in tallow then sided it aside. The first pictures are what it looked like after browned.
Fry leeks, garlic and onions in the tallow, add marinade juice(mine includes a bunch of spices and black tea, but you can play with whatever spices you like or just use broth) to barely cover the vegetables then bring to boil.
Set the meat on top of the veggies then send the pot into a preheated oven. Mine is a crazy old gas oven, which sucks for baking cookies but perfect for pot roasting, bc when you burn gas you get water (Think how Mark Watney gets water to plant potatoes on Mars), then water evaporates during heating. With the vapour circulating in the oven, you'll get moist tender meat comparing to electric oven which dries out the meat during longer roasting process.
This silverside weighs a little over 3 lbs so it may take about 50 min at 325 ℉ to reach the doneness I like, but my husband wants it fully cooked to fall apart tender. Well in that case I just turn off the oven after it cooked and leave it there til whenever he's home.
Now I'm gonna baste my meat once or twice, and we'll see how it turns out later. My kitchen smells like heaven now! Boy I wish you guys could smell it! And my stomach is rumbling like I haven't aten in a million years 😂
Welcome to Nova Scotia where pork rinds are 5 bucks. I was going to get these as a treat tonight while the fam was eating Chinese food and cake but I'm not rich sooo. Only 2 ingredients though: pork rinds and salt. Hopefully I will find some cheaper ones. Had some bacon and pork instead of junk food. Unfortunately it wasn't as appetizing today and I went too long without eating so my stomach hurt. But all a learning process 🤗 On the briggt side, stomach felt a lil smaller today.

Il mito che non bisogna mangiare i carbo la sera è ancora diffusissimo purtroppo, in realtà basato su un ragionamento sensato (ma errato): se mangi i carboidrati la sera, momento in cui fai attività sedentarie come guardare la tv, leggere e poi dormire, non li "brucerai" e quindi ingrasserai, contrariamente al giorno in cui ti muovi di più e "bruci".
In realtà, se si guarda il consumo calorico di attività a bassa intensità come stare seduti al pc, stare in piedi, ecc e si confronta con il consumo energetico di quando si dorme, la differenza è MINIMA.
Come per il cardio a digiuno, non bisogna guardare il singolo momento ma periodi più lunghi, settimane, mesi.
Quindi la variabile più importante è la QUANTITÀ totale della giornata, che non deve essere eccessiva, non quando li mangi.
Ci sono studi che suggeriscono che anzi consumare i carbo (a parità di calorie totali) la sera favorirebbe il dimagrimento e avrebbe effetti positivi anche su infiammazione generale e colesterolo (a causa degli effetti di questa strategia su adiponectina, leptina e sensibilità insulinica).
Quindi senza complicarsi la vita: focus su mantienere precise le quantità corrette di calorie e macros, per il resto mangiali quando ti pare.😉💪🏻

Mushrooms crab salad and scrambled eggs on 90 sec microwave bread
Last night dinner. Basic beef and beans salade. The tiny fancy add on - Ham & Cheese egg cups.
Of course I stole this idea again, this time on the @keto.hacker account. Sorry guys !! 👩✈️
I just give a try with one cup to see if it’s manageable for a breakfast for the timing. Definitely not for my really early morning shift but with the 5 minutes of preparation, 15 of cooking it’s definitely my treat (🧀😍) for some chilled mornings !!
You can’t really see it on the picture but trying sweet potatoes / cinnamon was the best idea ever. I stole this idea to the lovely @choosing_balance.
She used it in cinnamon yogurt apple bowl for breakfast but I have to admit I am not really into sweet breakfast anymore since I started this low carb diet. Nevertheless the idea sounded so crazy I had to get a try. Mixing sweet and salty foods don’t bother me but I let the sweet potatoes cinnamon combo aside just in case. After all it is the first try and don’t a big fan of cinnamon every time.
I have to tell you guys, even for a lunch or dinner dish it is amazing 😋
