Vegan Lolly Cake.... featuring Jetty!
I've always wanted to make a vegan version of lolly cake, & a few months ago I came up with this recipe. There's no such thing as vegan eskimo lollies, so I had to use vegan mini marshmallows instead. I dyed them with natural food colouring but obviously the dye doesn't spread throughout them so when you cut the lolly cake you can't see the colour. But.... I've just worked out a way to make them coloured right through! It involves melting the marshmallows, adding colouring & some icing sugar, then setting the mixture & slicing it up! It's labour intensive & it obviously all tastes the same so just use the recipe below if you want lolly cake within half an hour! 😉 I'll post a pic of the updated recipe with the fully dyed marshmallows when I next make it.
* 1 + 1/4 cups Dandies vegan mini marshmallows
* A few drops of food colouring, in different colours.
* 1 + 1/2 cup vegan vanilla biscuits, blended into a fine crumb.
* 60g margarine, melted
* 100g sweetened coconut condensed milk
* Tiny pinch of salt
* 1/2 cup dessicated coconut
* In 3 separate mugs, divide your marshmallows up evenly. Add a couple of drops of food colouring to each mug & mix well until all marshmallows are dyed.
* Melt margarine, sweetened coconut condensed milk & salt in a saucepan over low heat.
* In a bowl, mix together biscuit crumbs & marshmallows. Add in the condensed milk mixture & mix well. If the mixture is too wet, add more biscuit crumbs.
* Form into a log shape. If you're having trouble, try chilling the mixture first. Roll in dessicated coconut.
* Place in the fridge for a few hours before slicing. If your roll is difficult to slice, put it in the freezer. Let it freeze for 2 hours, then leave it out for 30 mins before slicing.
* Place the slices in an airtight container & keep in the fridge.

LipSmooth: okay first off... look how big of a tube this is!! I was expecting it to be the size of the Lip balm, but it's the same size as a tube of Lipsense 😲 It gently exfoliated my lips and helped to remove any leftover lipsense that I may not have wiped off when I took my makeup off, it smells amazing 🌴, and I only had to use a pea sized amount which means this tube is going to last MONTHS 🤗
Lip Balm: Unlike other chap sticks made with waxy ingredients, this lip balm actually soaked into and moisturized my lips instead of sitting on the surface and feeling icky. Again only a pea sized amount was needed! No matter who you are, you need this moisturizing lip balm in your life 💋

Made a vegan version of a western bacon cheeseburger the other night. I used @gardein beefless patty, @followyourheart American slices, @lightlifefoods smart bacon, @alexiafoods onion rings & BBQ sauce. It’s been at least 25 years since I’ve had one of these so this version tasted pretty spot on! “Don’t bother me, I’m eating cruelty-free!”
