Another #instantpot dish! So I actually pressure cooked a small pumpkin and once done, scooped up the flesh and mixed it with the water it cooked in and set aside. Then I sauteed some onions, garlic celery along with spices and then I poured the pumpkin puree back in the pot. I added 6 chicken drumsticks and cooked for 30 min in the instant pot and voila. This one has a mixture of pastured pork and ground turkey in it, Italian seasoning, mushrooms, fennel, onion, nutritional yeast and dairy free pesto.  You can assemble it in advance too. Great for a busy day when you don’t have a lot of time to cook! Proving my own mix of gluten free dough for a pizza later today. What a journey this has been! Six years ago, my gut was rejecting just about everything; today, I have more foods that have been successfully introduced. I still can’t have potato, which is commonly found in many commercial all purpose gluten free flour mixes, but I can have activated yeast, which allows the flour to rise with time to prove. Tip: try this hack at home by heating water in a separate bowl and shutting the dough inside your microwave to create a proving drawer or box. Most ovens in the US don’t have a proving drawer, just a storage drawer.

Phew. It took most of the morning and a lot of cursing at the hot plate that randomly shut off multiple times, but I have food for three workdays. Parsnip porridge with banana and *cacao, butternut squash salad with *tahini sauce, and a big pile meatballs and olives with veggies. I made extra meatballs to freeze and cut carrots into sticks for an afternoon snack with *hummus, so I'm really all done Wednesday night.

This is also a recipe in which you can use your homemade veggie broth made from veggie scraps. Store bought sauce also comes in a container. Here I reused an old pasta sauce jar, instead of having to purchase a new one. ...

A healthy gut works like a cloth allowing only nutrients through, keeping out larger particles, bacteria and parasites. In the case of leaky gut, the tight junctions between the cells on the GI tract become wider, due to the protein Zonulin. This allows larger particles, bacteria and parasites to pass through into the circulatory system, activating the immune system. Over time this over worked immune system will lead to more complex issues like food sensitivities, decreased adaptation to your training, an increase in the recovery time need, alongside leaving you wide open to infection (getting the flue more often). So as you can see it’s not ideal situation to be in.

Well pretty much everyone unfortunately. Here are a few signs to look out for that may indicates the possibility of you unknowingly suffering from leaky gut. Irritable bowel syndrome (i.e., bouts of either diarrhoea or constipation), gassiness, stomach upset, fatigue, dehydration, muscle weakness, strength deficits or plateaus, inability to gain weight or muscle size, lack of focus, and inhibited performance measures, just to name a few.

What to avoid & prevent performance drops ?
Starting off on your investigation to stop these GI issues you should cut out all foods containing gluten (wheat, rye, barley) for example, all dairy products and night shades. You’re probably asking what the hell are night shades.
So as an endurance or field-based athlete you’re probably thinking to your self that a lot of the foods you are eating to “carb load” or “carb cycle” for the days leading up to your event/events are carbohydrate foods containing gluten i.e. no more bread, pasta and defiantly no more pizza. For a no-tomato Bolognese I use a can of blended no added sugar peaches as my sauce base.  The blended peaches cook down and caramalise slightly giving the dish a gorgeous richness.

It’s a bit different than regular carrot cake but if you don’t mind the change to a more banana flavor then you’ll really enjoy this one ☝🏻. The only thing i did different was to add the frosting in the middle and add the pecans. I dont think it needed the middle frosting but it definitely didnt make it worse 👍

Baby’s first smoothie bowl! I know it’s surprising it took me so long to hop on this Instagram bandwagon but TBH I’m not the biggest smoothie-for-breakfast fan. I was assigned to make this blueberry oat smoothie in class for our new restorative health module so of course I had to make it extra. Topped with coconut flakes, almonds, hemp seeds, thinly sliced persimmons, bee pollen and blueberries. Packed with lots of fiber and healthy fats!

There are some foods that feel super nostalgic. For me, manicotti and Caesar salad is one of those foods. I have not had manicotti in close to a decade, so tonight, I decided to try my hand at it. 
I made gluten, dairy, and nightshade free manicotti (brown rice noodles, homemade cashew cheese filling, nomato sauce) with kale Caesar, and I'm a very happy lady!

I did add a tiny bit of pecorino Romano because I tolerate sheep cheese, but it honestly didn't need it. Next time I make this, I'll write down the recipe. 👌
