🙏Bear with me, it's been a long #week3🙏
It started out rough. My diet has definitely had an impact on my energy levels. 😴☹️😴 I'm still more tired and can get pretty hangry. Appreciation to my family, especially my parents for helping me cook food, buy groceries, and accept my apologies after I'm grumpy. 👫❤️ 🥦🌱🥒🥝🍏🍃🍐🍍🍇🌿🍈🍌🍄 First time seeing a dietician which was empowering, educating, and validating. One of the many excellent things she said is I can have coffee again. #phew☕🍵😋 I'm also taking her advice and started taking probiotics and Omega-3 oil. There was a lot of good talk about the foods I'm eating and my diet plan. Tuesday, I started adding dead sea salt to my nightly bath mix 🛀 & 🥁🥁🥁🥁 I feel A BIT BETTER. I haven't been able to say that for almost 5 months! My hands feel and look better and my skin feels more moisturized for longer ♥️👐🤞👐🤞❤️. Any morning not waking up in pain and/or feeling dry is a better morning #thismorning. I'm still working on stress management. I'm always walking Tucker around my hood and doing these ten simple yoga stretches a few days a week, just in my bedroom 🤷‍♀️. But, I have to work a bit this weekend and I'm really excited to have started volunteering in a local municipal election campaign. #threejobsnowfivevolunteergigs .

Friday, I treated myself to some new shoes from Mark's Work Warehouse and a lot of thrift store shopping 🛍️#stk #Windsor💃 My shoes are all closed toed, mostly slip ons since the spots on my feet continue to make certain shoes too painful to wear. I bought comfy, breathable clothes, that most importantly I love.

When I reflect on all the changes I've made and how I slowly shifted to choosing more holistic and natural alternatives, it's a lot 🤯. I'm super weird and it's cool, I love it. 🤓😍😎🤓

There's still a long way to healed, but after a lot of just hoping all the work will pay off, I finally feel and now see that I'm on a right way 🤗😍🌞✌️🤗.

Spaghetti squash with creamed spinach topped with a creamy, home made butternut squash sauce, sautéed mushrooms and onions, and grass feed beef. 😍 Clay and I enjoyed it immensely! When im running short on time and Im really craving a meal that normally takes hours to make, this air fryer pulls through and tastes great 👍. Threw on some quick pan cooked organic spinach. Very satsifying and only took about 20-25 mins to make total ✅. .

Food time. I bought quite a few pantry items this week because they ran out (creamed coconut, lemon juice, white wine vinegar) or were on offer (walnuts, my favourite mustard, sandwich spread), but otherwise it's the usual load of vegetables, some fruit, and some organic meat, eggs, and sustainably caught fish. Reintroductions are eggs, chocolate, rice, walnuts, and several seeds.

I'm particularly looking forward to cooking with the spaghetti squash and round courgettes, I don't have anything specific in mind yet but I thought they would be fun. I also couldn't resist the cassava, I haven't prepared fresh cassava for ages.

All in all I spent just over €45 this week, a bit more than usual because of all the pantry items. Most things are from @lidlnederland and @albertheijn, with a few things from @ekoplazabio and @vomar_voordeelmarkt.

I impressed myself big time with dinner last night... I made my own nightshade-free Thai curry paste based on @asaucykitchen’s curry paste from her Low Foodmap Thai Green Curry Recipe. It sounds hard but was actually super simple and effortless as I just threw all the ingredients in my food processor. Then I used it to make Thai Green Curry Zoodles which was (very) loosely based on @perrysplate’s Thai Green Curry Zoodles with Shrimp. I served it like I learned in Vietnam with lemon and herbs on the side. It was super delicious, very easy to make and something I’ll definitely make again...

Quick and easy dinner! 🍈🍈🍈 @bilinskisausage Cilantro Lime Chicken sausages sautéed in a cast iron skillet...our whole family loves these!  They are not too spicy for my kids (though we are from Louisiana 😉). Found at @wholefoods. 
I added the juice of 1/2 of a lime and the other 1/2 thin sliced, dried cilantro (through fresh would be better!), and @earthbalance soy free to some white jasmine rice for carbs.  We also quickly steamed some organic broccoli and green beans...my kids like them perfectly tender. 🥦 
Cilantro is a good source of dietary fiber, vitamins A, C, E, K, calcium, iron, potassium, and magnesium. A ¼ cup of fresh cilantro provides 270 IU of Vitamin A, and 16% of the daily value recommended of vitamin K.

Other benefits of cilantro include: ⚡️Helping the body to get rid of heavy metals
⚡️Aids in regulating women’s cycles
⚡️Helps with digestive upset

Aside from the 7 minute eggs on top the entire dish is AIP compliant! The meatballs are made with ripe avocado and citrus zest, the teriyaki sauce is a magical mix of coconut aminos, broth and gelatin. Low carb shiratake noodles and crispy shredded brussel sprouts! Yup- it’s the perfect #noodlebowl if you ask me!
