17/11/18: Today, I tried this wonderful SWEET POTATO STUFFED W/ CHICK PEAS recipe from @thrivingonplants. -
Because I’m really busy, one of my greatest difficulties is cooking my #VEGAN MEALS everyday. I belong in an OMNI household, so I’ve tried to PREP my MEALS. However, they never really taste as good as they were, when they were fresh. So, I would usually give up on eating vegan. This meal, however could easily be stored in the freezer and then heated the next couple of days. The taste is not altered, in fact it may even taste better eaten later on. -
What #VEGANMEALS do you guys meal prep?
Victoria sponge cake by @bosh.tv ❤️ Happy Mother's Day Weekend!
3 cups self-raising flour
1 cup caster sugar
1 tsp baking soda
2 tsp vanilla extract
3 tbsp golden syrup
1/2 cup sunflower oil
1.75 cups nut milk (your choice, any will do)
1 cup dairy free butter
1.5 cup powdered sugar
Middle & Top:
1 Put all the cake ingredients in a food processor & whizz them up into a liquid
2 Pour equal amounts of the mixture into well greased cake tins
3 Bake the cakes at 180℃ (352℉) for 40 minutes
4 Put the icing ingredients into a bowl & mix them together with a fork (if you have a hand blender, use that, it will make your icing come together perfectly!)
5 Put the icing in the fridge until it’s chilled
6 Take the cake out of the oven & let it chill to room temperature
7 Spread a layer of Jam on the top of one of the cakes & a layer of icing not the bottom of the other
8 Sandwich the cakes together (don’t squeeze them though!)
9 Cover the cake with the rest of the icing - be as neat or as messy as you want - it’s your cake!
10 Decorate the cake with the strawberries
11 Cut into slices & serve immediately with a cup of tea.
The holidays are arriving fast!
For all my first time thanksgiving vegans, please stay strong! This time of year may be one of your biggest tests on why you have chosen this lifestyle. As vegans we have seen what a life of compassion can be. We have seen streets filled with people enjoying cruelty free delicious food, we have enjoyed nights out at beautiful vegan restaurants, and laughed at lunch at our favorite vegan spots that are always filled with like minded people. So we know peace is a possible way of life. .
During this time be strong knowing you are incredibly brave and strong to live a life against the grain, even if they taunt you or question you for a life choice that is bigger than you. Forgive them as their hearts don’t understand yet. Don’t feel crazy, weird or like you are missing out on a tradition just because you found love in your heart. .
There are many ways you can still be part of the tradition and your loved ones should include you if their love is genuine. (PREPARE OVER THE WEEKEND w/lots of recipes❗️) don’t give into peer pressure of family or society. Remember all the good changes you have made up till this point and the wonderful mission you are on. It’s only a day and it will pass. Their are many ways to enjoy it without caving into old habits that are seen as normal, you are normal just with a bigger heart this year. .
Even if it’s a holiday it’s okay to feel for others during this time, it’s okay to feel sad, it’s called empathy and it’s a great characteristic to have, don’t be ashamed. Enjoy as much quality family time as you can. You will probably see the giant numbers of animals used for this holiday don’t ignore it & don’t be discouraged that things will never change in our world, things are changing, look how far you have come! That alone is proof that their is one less animal suffering in the world and 1 more person fighting on the right side of history. Reach out to a vegan friend if it gets too overwhelming at any point we will be here without judgement even if you fall into temptation. Stay strong and show that you can celebrate life without taking a life 💖

🎶Fa la la la la la la la lafel bowl 😁🎄😄 I’m starting to get really into the Christmas spirit 😍 I started some Christmas shopping today, have TWO Santa Clause parades to attend tomorrow, and the snow has arrived!!! ❄️ Not to mention, I was SO into the 🎄Christmas🎄 music this morning that I completely missed the exit I was suppose to take on my way to work and headed to the wrong school 🤦🏼♀️😂.
Anyways;; this bowl is packed with @yvesveggiecuisine falafels, mixed beans, broccoli, mushroom, zucchini, diced tomato, rice, and hummus 🙏🏼😍.

There's a lot of food out there that is overpriced and frankly, not great for you. Instead of paying lots of money for processed vegan food, you can get whole foods for much less. did I mention, it's a lot healthier for you too? 🌱

I used to love cereal before I went vegan, I can remember being heavily pregnant with Cherry and eating nearly a whole box in one sitting! It was never the same using dairy-free milk, until I discovered @oatly Barista, so they are this week’s vegan product of the week 🌱 It’s so creamy and I was so excited after discovering how good it was that I rushed out to buy loads of cereal. You have to be careful with vitamin d as it’s not usually vegan, also honey but there are lots of cereals that are suitable for vegans. I love bran flakes, cornflakes and good old Weetabix, also Oatibix, and granola.. mmmm. I do miss crunchy nut cornflakes though, anyone know of a #vegan alternative?
Hello Friday 👋🏽 another grey chilly day calls for another bowl of porridge 🥣 I’ve been having this breakfast pretty much everyday lately ~ it’s so comforting on a cold morning 😌 for me, one of the best things about porridge is that it works as a great carrier for other things such as flaxmeal, chia seeds and walnuts (omegas), berries and cacao (antioxidants), bananas (potassium for you athletes out there!), plant milk (vitamin d, calcium and b vits including b12), turmeric and ginger (anti-inflammatory)and, of course, peanut butter (because what is porridge without PB?) 👍🏽 Talking of PB, Ive been obsessed with this cinnamon raisin one I found (by @bionaorganic ) ~ if you’re into cinnamon or raisins definitely give it a go 😛

Nice warming bowl of oats with a cup of green tea was perfect for this morning- we had our first snow in the city last night! Can’t wait to keep waking up to quiet snow covered streets and trees, and future mornings tucked up in a blanket enjoying a good warm breakfast like this.
Today’s bowl was:
- 1/4 cup rolled oats - 3/4 cups water (I use almond milk some days)
- small handful frozen raspberries, stewed with dash of water and pinch of cinnamon - dollop of natural peanut butter - sprinkle of ground chia, ground flax, and hemp hearts
- blueberries to top it off

Them simple lunches of whatever is left, you can’t go wrong with a falafel wrap! Meal Deal for the win! Sainsbury’s have their festive version but tbh, I’d rather walk 10 mins and get this! I don’t know how I feel about their mango chutney, I think there is just a bit too much, it always leaves me craving a curry 😅🤦🏼♀️ I hope you’re all having a brilliant Friday! 🔮💜

Shared two menus with my mams. €12.50 pp. We had falafel, baba ganoush, a Lebanese flat bread wrap and a smoked veggie pizza with vegan cheese. The staff were so friendly and the food seriously fresh and bloomin' tasty AF. Just when you think you've tried enough falafel in your vegan lifetime... this was something else! 10/10 recommend. 🔥
