Aubergine tikka masala by @wearesovegan 💛
Recipe serves 4 people
1 aubergine sliced in chunks
1 white onion diced
2 red peppers sliced
For the masala paste...
4 garlic cloves roughly chopped
Thumb of ginger roughly chopped
1 tsp each turmeric, paprika, garam masala
1/2 tsp each salt, cayenne pepper, chilli flakes
2 tsp cumin
For the sauce...
1 can of tomatoes
1 tbsp tomato puree
200ml coconut milk from can
Handful of coriander (cilantro) plus more for garnish
1. Heat a little oil in a frying pan on a medium heat. Once hot, add in the aubergine and fry for 5 minutes on each side or until slightly brown.
2. Set the aubergine aside and place the onion in the frying pan. Fry for 5 minutes, adding more oil as needed.
3. Meanwhile, make the masala paste by combining the ingredients in a grinder until the mixture is smooth. Alternatively, use a pestle and mortar and grind the ingredients together until they form a rough paste.
4. Add the masala paste and peppers to the frying pan and cook for 5 minutes, stirring frequently.
5. Then add the can of tomatoes, tomato puree and aubergine, and simmer for a further 10 minutes. Use the back of the mixing spoon to squash the tomatoes to create a smoother consistency.
6. Stir in the coconut milk and coriander (cilantro) and cook until hot.
7. Garnish with coriander and serve.
Sometimes the hardest part about switching to a vegan diet, is the surprising amount of foods that contain animal products (that you would never even think of!). Most people know that giving up animal products means giving up meat, dairy, eggs, fish and honey. But did you know that switching to a vegan diet may mean that you need to find a vegan wine or beer alternative? Or that your gummy vitamins could be made from insects?!
Here are some ingredients that are made from animals and which foods you may possibly find them in
🌿 *Bread products may contain L-cysteine, which often comes from feathers, to keep them soft
🌿 *Gelatin is made from the connective tissue of pigs and cows. It is used in Jello, Gummies, and many candies
🌿 *Refined sugar, which is found in a plethora of sweet foods, was possibly lightened with bone char, derived from the bones of cattle
🌿 *Isinglass, comes from fish bladders, and is often used in the making of beer and wine
🌿 *Shellac, an insect-based product, is sometimes used to wax fresh produce or in candy
🌿 *Deep fried foods and fresh pasta often contain eggs
🌿 *Whey, casein, lactose are all derived from dairy and can be found in many packaged foods and protein drinks (dairy can also be found in vitamins and pain medications)
🌿 *Cochineal, or carmine, is red food coloring that is made from insects (although we are discussing food, this one is often found in cosmetics)
🌿 *Some food additives are also derived from animals. These include; E120, E322, E422, E471, E542, E631, E901, E904
The easiest way to avoid the use of animals for your food is to stick to a whole food plant based diet. However, if you want to purchase foods that have been processed, please look for “Vegan” on the label and make sure to ALWAYS read the ingredients

This new journey to becoming vegan has made me try new things in the kitchen which I’m really grateful for. I’ve always been a fan of the lettuce wraps @yardhouse so I decided to make my own vegan variation for our dinner. I used ginger, garlic, hoisin sauce, Korean brown rice vinegar, reduced sodium soy sauce, sesame oil, sesame seed oil, green onion, brown sugar, Chinese water chestnuts, baby Bella mushroom, extra tough tofu and some carrots on top for an additional garnish. Mexican Monday! 👌 For those of you who missed this on my stories: another 5 minute #winnerdinner at your service!
#dEats : canned black beans, tomato passata, prechopped mexican veg mix (I think it was mainly carrots, leek & corn) and wholegrain wraps.
I warmed the veg & tomato puree in a pan with some frozen spinach, smoked paprika, harissa paste, salt & pepper. Then I stuffed 2 wraps and whacked them in a very hot oven for like 2 mins. Thennnnn I added some chilli doritos because what is mexican food without tortilla chips?
This meal 100% exceeded all my expectations and I absolutely 110% would happily eat it every day for the rest of my life. Not bad for a cheap, quick, 5 minute meal.

Second try at spaghetti aglio olio in Naples. Last night the pasta wasn’t just al dente, it was uncooked and served with a bit of oil but THIS! This is how you do it. Garlic oil (and you can taste the caramelisation of the garlic from it being really roasted), with the best tasting oil (lots of it), chilli flakes for a kick and parsley. It doesn’t look like much but when it’s done right it’s amazing! 🇮🇹🍝😋
I never in a million years thought oneday I will be CREATING wholesome and nourishing desserts that my own child can eat!
