Yesterday, my middle son Sebastian celebrated his 10th birthday.
Pasta and meatballs was his dinner request. A month ago yesterday, he underwent his third major open heart surgery. He wanted to return to school on his birthday. :
My little heart warrior is so brave and full of spirit. He said whilst we stayed in hospital, ‘Mum I just want a plate of your pasta!! 🍝😂’ That was a request I was happy fulfilling. :

Pasta with Meatballs
500g pork & veal mince
X1 slice bread
X1 clove garlic
Splash of milk
X1 tablespoon chopped parsley
X1 tablespoon chopped basil
1/2 cup Parmesan cheese
Place the bread in a small bowl and soak in milk. In a large bowl add meat, crushed garlic, salt, pepper, finely diced herbs, grated cheese, egg and soaked bread. Combine all the ingredients. Roll into small balls.
X1/2 brown onion
X1 teaspoon sugar
X2 400g tins of crushed tomatoes
X2 cloves garlic
X4-5 leaves of basil
X2 tablespoons olive oil
In a deep pot, on medium heat add olive oil and sauté diced onion and basil for 2-3 minutes. Add crushed garlic cooking for a further minute. Add the tomatoes, water, salt/pepper and sugar. Bring to the boil and lower to a simmer with the lid on cooking for another hour or until sauce reduces and thickens.
On medium/high heat place meatballs in the sauce. Cook for 15 to 20 minutes or until cooked through.
Cook your favourite pasta until al dente. Strain and ladle in some sauce and meat balls. Serve with freshly grated Parmesan.

Burrito baby! I was thinking Roo would not be much of a fan as they’re a little spicy. But he really enjoyed his! 🌯 ⭐️spicy beef & veg burrito ⭐️homemade guacamole ⭐️sour cream ⭐️chilli & garlic wedges ⭐️ salad
250g lean mince
1 grated carrot
2 garlic cloves
1/2 bottle of passata (The 620g bottle)
2 tbsp paprika
1tsp ground coriander
1/2 tsp chilli flakes
Directions 🥣 add chopped onion, pepper, courgette and grated carrot to a pan and fry until softening. 🥣 Add the mince & garlic. Cook until browning. 🥣 add the passata and spices and stir.
🥣 cook on a low heat for 10mins, stirring now and again.
🥣 leave to cool.
🥣 once cooled add to middle of wraps. Add a chunk of mozzarella on top of the mince. I also add a bit of chilli sauce to the top of mine & husbands mince.
🥣 fold wraps into a little parcel and place flap down onto a griddle.
🥣 place a chunk of mozzarella to each burrito.
🥣cook in the oven on 180 for 25mins or until crisping on top. 🥣 place burritos onto a cooling wire.
🥣 you can either cut in half and stuff with the salad, or have it on the side of your plate. Add sour cream & guacamole on top. 😋 - - -
Spaghetti Bolognese 🍝
This is a real family favourite. And so quick and easy to make. There’s always plenty left over for the freezer stash too which makes me happy 😁😍 For tonight’s I used
1 bell pepper, chopped
1 courgette/zucchini, grated
2 onions, chopped
6-7 mushrooms, chopped
2 salad tomato’s, chopped
1 carrot, grated
Handful of kale, chopped
2 garlic cloves, crushed
250g steak beef mince
Around 1 cup of yesterday’s leftover sausage, apple and carrot mix
Tin chopped tomato’s
2 tsp smoked paprika
2 tsp mixed herbs
2 tbsp balsamic vinegar
1 low salt stock cube 💙 i chucked everything above into a casserole dish. Stirred. Added around 100ml of water. Stirred. Should then be a thick, stodgy consistency. Put lid on the dish and baked in the oven for 1hr 15mins on 180c and stirred partway through.
I’ve finally done a time-lapse video of Roo eating. I know I’ve been asked quite a few times for this. Wow!! Even I was shocked. You’ll see me putting his food back into a pile from the dropped bits so he really does eat everything. 😳🙈😲 ~
