FRESH MORELS! I dont know if it gets much better than fresh morels... The star of the dish Pan Fried Morels lightly breaded and pan fried in drawn butter until golden delicious:) accompanied by a bacon fat confit pork tenderloin seared to order and a morel pan gravy. This is a special from the heart and it takes me right back home.
Morel mushrooms stuffed with lamb, topped with allium charcoal sauce. This dish has quickly become a Birdsong favorite, not only for its delicious flavor, but also because of the meaningful story behind the creation of the dish. Morel mushrooms flourish in burnt areas, we created an allium charcoal sauce to represent the burnt ground the mushroom came from and garnish it with allium flowers to represent new life.

Inspired by a traditional Portuguese dish 'Carne de vinha d'alhos' or 'Meat with wine and garlic' combined with the world's famous 'Vindaloo', its Indian interpretation version which was developed in the former Portuguese colony of Goa.

Um dos cogumelos mais raros e caros do mundo crescendo aqui no pátio da minha casa. Conhecem o morel? Ele é delicioso, bem carnudinho. Eu o experimentei em Michigan, nos EUA, pela primeira vez em forma da famosa sopa de morel cremosa, daquela região de Michigan. Amo cogumelos e adoraria ter mais variedades por aqui, para consumo. ♡
Sunday night cooking is my favorite! If it were up to me (which I guess it kind of is 🤣), I’d spend every Sunday home cooking a wonderful dinner and prepping for the week!
Tonight we have #local morels that were foraged by @theforagedfeast (probably picked in the last few days!), a cream sauce with #homegrown thyme from our garden and a glass of cabernet sauvignon. An appetizer of local tomatoes, homegrown basil & mozz cheese started us off! .
