A nutrition filled lunch when you're on the go is sometimes hard to come by. This is a quick one that my kids love!
Apple, Avocado, blueberry, Strawberry, and nuts are the foods that filled our lunch bowls today. With a drizzle of honey and a sprinkle of our favorite vegan protein powder, it adds the nutrition they need for their fun filled day!! In a blink of an eye, the weekend has disappeared and it’s Monday 😖
I’m continuing my self imposed breakfast challenge-and today’s was AMAZING. Seriously. Breakfast or dessert? It can be both! And as an added bonus, it’s healthy and filling. This one bowl fed me, Arjun and Rohan this morning.
1/2 Avocado • 1 frozen Banana • 2 Dates • 2 tbsp. Cocoa • handful of Spinach • about 1/3 c. Coconut Milk/Cream (use yogurt or milk if you prefer)
Topped with cherries, berries, @bluediamond cocoa almonds (my fave!), choc Cheerios (Arjun’s fave!) and PB 💫Delish.

I must have been in serious nesting mode today. Between taking the boys to the splash pad, thoroughly cleaning my car (like with a toothbrush!) and all THREE car seats, and standing over a ridiculously hot grill to make these [AH-mazingly] delicious chicken kabobs for dinner...all in well over 90 degree heat...wowzers! But it sure made up for the moments this past week I really didn’t want to do anything (and my tan game is pretty on point now too). If you are feeling as ambitious as I am, here is the kabob recipe I used. What are you sizzling up this weekend?
🍗 Cut up and seasoned chicken chunks (sea salt, pepper, olive oil, cumin)
🍅 Cut up veggies of choice (we used red and yellow pepper, onion, and zucchini)
🍍Pineapple chunks (either fresh or precut)
❤️ OPTIONAL: a super cute toddler to help assemble (but won’t touch the raw chicken) 😳
Wash and cut chicken and veggies into chunks. Assemble kabobs however you wish. Throw a piece of aluminum foil and drizzle with olive oil. Once skewers are on grill drizzle with a little more olive oil. Grill for about 10-15 mins or until chicken and veggies are cooked rotating as necessary. Breakfast aloo (potato) parathas! I made these a couple weeks ago and froze them raw, thinking they’d be nice to have on hand. They cooked up awesome, no one would ever know they weren’t made that morning!
Yesterday there was no breakfast post—Rohan is teething so no one is sleeping and therefore the kids got Fruit Loops 🤷🏼♀️
I didn’t even know that Arjun knew what fruit loops were, we never buy them (none of us are really cereal eaters). But he asked me a few days ago if he could have some, so I bought a multipack of those small individual serving size cereals. #balance , right?
Did you know that the box has all sorts of stuff on it trying to show that they’re a healthy food choice 😱 Seems a bit far fetched to me... “excellent source of fiber!” 😂🤦🏼♀️
