I think I’ve been to one hockey game in my life and it was to see the Dallas Stars. Which used to be the North Stars here in MN, so I kind of feel like this game came full circle 😂 between ice skating for my birthday and a hockey game-I think we’re truly embracing the MN winter lifestyle this year.

We showed up with our tickets and were directed to the @budlight Lounge where good and drinks were included. Thanks & Atina for scoring these amazing tickets, and thanks @minnesotawild for an exiting game. Even though we lost, it was a great experience and great company.

After having to be on medications for my many mental illnesses that I have, I have come to an understanding that I will always be on them. I am here for these VEGAN GLUTEN FREE BANANA PANCAKES 😍😍 This morning I was feeling adventurous in the kitchen and on a whim decided I was going to try a new recipe for breakfast 😁 And by new recipe, I mean throwing a random assortment of ingredients into a bowl and hoping it turns out good 🤷🏼‍♀️ It paid off though because these were AMAZING 👏🏻 I love pancakes and am always trying to find new ways to make pancakes healthier without sacrificing taste, and these just hit the spot 🔥

Ingredient list ➡️ 1 cup oat flour, 1 tsp baking powder, 1 tsp cinnamon, 1 cup almond milk, 1 tsp vanilla extract, 1 mashed banana, 2 chia seed “eggs” (2 tbsp chia seeds + 5 tbsp water, mixed), 1/2 tsp apple cider vinegar, 1 tsp salt, 1 tsp stevia (you could sub this for 1/4 cup honey or maple syrup) ✅ .

Directions ➡️ Mix wet ingredients together in one bowl, mix dry ingredients together in a separate bowl, and then combine together and mix. Cook as you would any pancake on medium heat 👍🏻 I added dark chocolate chips on top of mine as they were cooking to make them extra decadent! ❤️ I topped this glorious stack of pancakes with pecans, more chocolate chips, and almond butter 🙌🏻 This was SUCH a good Saturday morning breakfast!! 🥰

Zucchini Egg Baskets for lunch 😍 Cooked a late lunch after a run/walk this morning 🙌🏻 We made bacon last night for dinner so I reheated some in the skillet along with my zucchini egg baskets today 🤗 Lovvvve switching up fried eggs making them this way! You just cook the zucchini noodles for a few minutes, form them into little nests, crack the egg in, and let them cook 💯 Feels so fancy but it’s really not 👌🏻 -

This is the first Saturday Eli hasn’t been studying in about a month + it’s beautiful out so it’s just been a pretty great day ☀️ We’re heading now to treat ourselves to some coffees + take our gal Tip for a walk 🐶 Tonight we’re driving around to look at Christmas lights + drinking hot chocolate which is one of my favorite things to do during the holidays! Plus it’s freeeeee 😉 We’ve been doing it for years because of that 😂 It’s the little things in life truly ❤️ hope you guys are having a great Saturday!! -

#lunch details 👉🏻 2 eggs cooked in zucchini noodle egg baskets (full recipe on my blog linked in my bio) but basically I spiralize a zucchini, cook it in the skillet over low med heat, form it into two baskets, crack the eggs in, and cook until the whites are done! Paired with leftover bacon from @butcher_box (best bacon I’ve had in awhile 😍😍-I’ll link my discount code in my stories!) + 1/2 avocado + sautéed spinach with red pepper flakes

INGREDIENTS:
1 package Dr. McDougall's Split Pea Soup Big Cup
1 garlic clove
1/4 cup red onion diced
1/4 cup celery diced
1/4 cup carrots diced
1/2 tbsp fresh parsley chopped

INSTRUCTIONS:
1. Sauté the garlic, red onion, celery and carrots together on medium heat for 7-8 minutes or until vegetables are soft.
2. Cook the split pea soup cup according to package instructions.
3. Transfer the soup to a bowl and mix in the vegetables, then garnish with parsley.

my daily prayers were that i would regain my health so i could have more energy, be confident in my own skin & have children of my own. my sister would tell me that if i couldn’t have babies that she would have them for me & as sweet as that sounds it would devastate me.

i was able to see a blood specialist who told me my hormones were off & a lot of my problems stemmed from soy intolerance which blew my mind that one food could cause so many issues. when i took ahold of that knowledge, changed what i was putting on my skin, & learned about how to properly fuel my body with what it needed & cut out what didn’t serve me - things began to change fast!

i am amazed at how quickly the body can heal when it’s given the fuel to do so. i can confidently say my life is better because i decided to listen to my body and make the changes i needed to make. change is hard but the outcome far outweighs it. i am an energetic mom of 2 beautiful boys that i didn’t think i would ever have. i’m so thankful i have an amazing husband that helps me make healthy choices, & it has literally been years since i’ve even worried about a breakout!

2 toasted slices of Keto bread (I have had a few of you ask me about this and sadly it’s a local bakery here that makes it but I’m working on getting a similar recipe🤞🏼) topped with @thrivemkt ghee + 1 egg seasoned with Bernie’s Turbo Spice + peanut butter + 1 banana (yes I ate the rest that didn’t fit on my bread 😜)

Let’s talk intermittent fasting 👇🏼
I have been feeling WAY better with this new eating routine! It is NOT a diet. It is NOT restrictive. It is simply planning to eat at a different time in order to give my body/digestive system a break. (For me, I have my last meal by 7 ish and my first at 11/12) With all the digestive issues I have including bloating/cramping/nausea/food allergies/you name it, this- alongside my ACV and lemon every morning has been a miracle worker! Additionally, I have incredible energy during my workouts and the first 4-5 hours of the day when my body is running off of ketones alone! While I am not expert, studies have shown there are many benefits to intermittent fasting such as cellular repair, prevention of disease because of beneficial changes in several genes and molecules, reduces insulin resistance, reduces inflammation in the body, etc. but above any studies, it’s important to listen to how our individual bodies respond and for me personally, I feel much better while doing this.

So while this works for me, it may not work for you. But if you are up for experimenting because you are experiencing digestive issues, DM me and I will let you in on how I’ve been balancing this and making it work for my life!

Travel Essentials ✈️ Over the last couple of years I’ve averaged a slightly ridiculous number of flights. Between continuing education, conferences, training summits, and yes, some killer vacations, I sometimes feel like I’m living out of my suitcase. So, I wanted to share a few of my travel must-haves with you guys. These are just some of my carry-on essentials.

✔Foldable travel yoga mat to keep me moving
✔2 books: Dare to Lead by Brene Brown and You Can Fix Your Brain by Tom O’Bryan
✔Tin case with activated charcoal and digestive enzyme in case of accidental gluten exposure
✔Nrf2 activation because we are exposed to higher amounts of radiation and oxidative stress during a day flight
✔Ear buds for more entertainment options
✔Camera because it’s the 21st century
✔Day planner which is essential because I like to write things down (even though it’s the 21stcentury)
✔Blood Sugar test kit to keep an eye on my levels while traveling
✔Neck and eye pillow…. Again options.

Happy Saturday! I’m happily home, already played some tennis this morning and about to go play some golf, happy about finally getting some movement in after finals week! 💪🏻

So as many of you have experienced, the holiday party season is upon us and that used to mean a lot of pressure and fear for me: either to eat it all because I won’t be able to eat that for a while, or eat none of it to “stay on track”. My advice and the one I’m going to heed this holiday season is simple: don’t think about it. I used to spend so much thinking trying to plan out what I’d be eating and trying to no think about that dessert table, thats what I ended up eating. I’m all for making sure you get enough protein/ drink water/ eat some veggies, but also taking the complexity out of it and going back to basics: do you want it? yes, then eat it. Then stop when you’re full. 🤤

Thats what I did last night, and I didn’t even touch the dessert table at the latke/ Chanukah party (they’re seven days late but still celebrated😂!). And I’m okay with myself. Just thought y’all needed a lil’ reminder🤗

Also had to show you my first attempt at making the lazy way to make jam, which turned out pretty tasty! All I did was mash some raspberries together, warm them up on the stove, add some stevia and @zenbasil basil seeds (instead of chia!) and voila, it was done! I’ll be working on them more for sure, this one was paired with some @erewhonmarket bread, @costco pb, and @suncorefoods coconut chips😋

There’s always something about taking pics of my kids that’s so freeing. I don’t know about you but I don’t have a ton of photos of myself and my siblings when we were kids. Cameras were expensive and developing film was even more costly.

Growing up with limited means really taught me to appreciate moments. It’s probably why I’m so driven and ambitious. It’s probably why laziness and inconsistency frustrate me.

The coolest part about being a mom is how the kids love me without judgment, condition, or terms. They are unaware of my flaws and even with the flaws they do know about, they love me anyway. They’ve loved me through the failures and the successes, which is more than I can say about quite a few grown-ups I’ve had in my life.

THE TRICKIEST THING ABOUT DEPRESSION: A lot of the time you know what will make you feel better, but the depression robs you of the desire or motivation to get up & do it. So what to do if you can’t muster the energy to turn things around?

One thing that has always helped me:  start with the smallest, simplest version of what you know helps. If the great outdoors always boost your mood, start with a short walk instead of making yourself plan a weekend camping trip. If you know social interaction gets you going, instead of pressuring yourself to organize a big get together, just pick up the phone & call your dad. If you know proper nutrition keeps your mind clear & motivation up, instead of committing to some fad diet, start with one meal using the formula that you know supports your mental health. •
I’ve found I’m MUCH more likely to pull myself up out of the trenches when I don’t overwhelm myself with huge prescriptive goals. Simple, baby steps towards the light have a magical way of helping you gain momentum without tripping you up before you’ve even put your pants on. Depression can sneak up on the best of us this time of year. Take care of yourselves & reach out if you need support. #misfitwellness
