I topped my spinach and fruit salad with a super easy tangy dressing made by blending a kiwi with fresh lime juice.
And, to keep me full until lunch I made a nice batch of pumpkin pie steel cut oats in the Instant Pot.
TO MAKE THE OATS: *1 cup steel cut oats. I use Bob's Red Mill organic quick cook variety. If you use old fashioned oats, use the same cook time. If you use regular steel cut, add 2 minutes. *2.5 cups water *1 cup pumpkin, plain
*1 mashed banana, feel free to add more. I only had one on hand. *1/4 cup raisins
*1 T pumpkin pie spice or to taste
Cook in Instant Pot on Porridge setting or Manual High for 5 minutes. Use natural release

Thousand Island Dressing 🏝
Three parts vegan mayo to one part kethcup. Toss in some pickles, garlic, and onion and you’re all set 👍🏽
The secret to good tofu is pressing and freezing it! I use extra firm tofu, wrap it in a kitchen towel, and put a cookbook on it to press out the water. After 30 minutes I cut it and freeze it for a minimum of 3 hours (if you want to make the best tofu ever). From the freezer, I fry them up in about a tablespoon of oil. Season however you like (I used salt, pepper, paprika, cloves, allspice, and garlic powder) 🌶
Gotta be that vegan swiss! Lots of brands have a swiss flavor, so find the one you like most. You can find these in the meat and dairy alternatives section of most grocery stores. Or make your own vegan cheese if you’re a badass 😎
The Assembly 🙌🏽
Fry up the kraut in a pan and throw the cheese on top. While frying, toast your bread. Once toasted, lather each side in thousand island. When the cheese is melted, put the kraut-cheese mixture into the sandwich and top it high with your fried tofu 😋 Job well done!

A couple days ago I was gifted 10 lbs of local, organic produce 🙌🏽 It was a weekly share from @GreenThingsFarm (thanks Logue family!!) 👩🏽🌾 With the produce, I put together a meal of braised beet greens, stovetop baked beans, and a Cajun-spiced brown rice!
Today was strictly an experimental day, so I don’t have any recipes to share 😅 I will say, hard cider is an awesome addition to baked beans and pickled jalapeños are a definite upgrade to beet greens!
As far as meal planning goes, this is what an average dinner looks like for me. I like to have a legume, grain, and green with each meal! It makes me feel full and is nutritionally dense 👌🏽

This week, I’m cooking meals entirely from @nikkivvegan Today would’ve been a perfect day to throw in the towel on cooking and just get takeout, resulting in some really bad decisions. I was running some errands, Aiden didn’t take a long enough nap for me to meal prep and i was tired. But instead I made these chickpea tacos 🌮 from @nikkivvegan ! I started cooking at 4:45 and was done by about 5:15! I was so impressed that the entire meal (sides and all) came together so quickly. On top of that, the chickpeas and sauce were so flavorful that I didn’t even feel like i was taking any shortcuts! You have to check out this quick recipe! 😋

I’m so terrible with having any sort of cadence when it comes to posting these 🤦🏼♀️ I did two weeks’ worth of @frommybowl recipes, but ate out a lot 😬 and took a lot of components from her recipes to use with some store bought items! I love FMB so much. Caitlin is one of the first youtubers I found when I began my plant-based journey. Almost all of her recipes are oil-free, refined sugar free and many are gluten free. Most of all, they are insanely delicious, easy and affordable. She caters a lot of her recipes to students and people who work... which works out for me as a stay at home mom with limited time to cook! I highly recommend checking out her channel and blog. You won’t be disappointed!
Vulnerability post: I haven’t posted a progress picture in awhile. Why you might ask? Because my progress has slowed over the last six months and I didn’t feel proud of it. I think I expected to always see a drastic difference in a few months period, and as I lose more weight, the more difficult it becomes.
Since making drastic life changes regarding work and where I live over the past six months, my entire routine has been shaken. I work out less per week than I have in two years. If I make it to the gym 3 times, it’s been a good week. I, too, get down on myself like anyone. For the first time in two years, I gained 12 lbs over 6 months. Instead of obsessing about it though, I had to remind myself, I am still over 100 lbs lost. I am still improving muscle mass, and can lift heavier than ever. I, still, have made a drastic transformation than where I was two years ago. Weight gain is also a side effect of a medication change I made. I also made it through a major heart break this summer. On top of all the change, I also had to figure out a new way of eating since moving away from the Detroit vegan scene proved difficult. And with all the pressure and all the changes, I’m still killing it at a brand new job 👌🏼. The point to this post is, don’t feel discouraged, ever. Victories don’t always show on the scale. Take a step back to see how far you’ve come. And just appreciate where you are. I feel like I’m in the prime of my life right now. And that’s an amazing feeling.
