The popular intro-only Japanese restaurant “Kimoto” has relocated from Kobe to Tokyo. (It’s no longer intro-only and can be booked via OMAKASE)

The style is the same as it was in Kobe and many of the dishes showcase Kimoto-san’s grilling skills. The grilled beef was, as always, spectacular.

We’ll see how the local foodie scene takes in yet another high end Japanese restaurant that many point out is very similar in style to some places already popular in Tokyo. La genèse du Domaine La Suffrène prend racine sur plusieurs générations, qui ont su cultiver et transmettre un trésor modelé par la nature au cours de milliers d’années. 
Le domaine s’étend sur 60 hectares de l’AOC Bandol, qui comprennent un nombre de parcelles variées quant à leurs caractéristiques géologiques.  L’aire Bandolaise est réputée pour la valeur de son climat, soit 3000 heures de soleil par an, l’influence vivifiante de l’air marin, une pluie qui dépasse rarement les 650 mm répartis sur l’automne et l’hiver. Un sol essentiellement argilo calcaire, la réverbération intense des rayons du soleil sur les coteaux, l’influence maritime qui met à l’abri des gelées hivernales, les reliefs du paysage, tous ces éléments qui donnent des conditions idéales pour mettre du soleil en bouteille. 
C’est ici que le cépage phare de Bandol, le Mourvèdre s’exprime dans toute la richesse de sa matière. Il apporte structure, finesse, et une palette aromatique déclinée sur les épices et la réglisse pour les rouges. Calling it a 'Culinary Extravaganza' would be a big understatement. Last night I followed an invitation to a private dinner for 8, experiencing the cuisine of one of the most prominent figures of his generation in the gastronomy scene around the world,  Chef Brian McKenna. 
He got his culinary start at the age of 14in the kitchens of a three-Michelin-starred restaurant in Mayfair, London, and is best known for becoming head chef at the Michelin-starred Le Poussin at the age of 21.

Chef McKenna treated us to an unbelievable 16-course journey for the senses. From Asian Spiced Crab Rice, a Lobster Bisque, Pork Belly Ramen to Grass Fed Wagyu Beef, the presentation was second to none and the quality of the dishes was something I have not seen before in Vancouver.

The evening gave us a first glimpse into what Club Versante, a revolutionary dining and lifestyle club, will be. Club Versante will be a private dining experience where members can savour in the sublime menus of three restaurants and bars, and enjoy the services of a member’s only lifestyle concierge.
Opening in spring 2019, Club Versante is the vision of Brian McKenna, and it will redefine exceptional dining in Vancouver.

The popular intro-only Japanese restaurant “Kimoto” has relocated from Kobe to Tokyo. (It’s no longer intro-only and can be booked via OMAKASE)

The style is the same as it was in Kobe and many of the dishes showcase Kimoto-san’s grilling skills. The grilled beef was, as always, spectacular.

Kimoto-san makes it a point to source most of his ingredients directly and starting next year, he’ll most likely bypass Toyosu altogether.
