Whenever I’m asking about my gut journey I take a deep breath and a huge {sigh} because it’s sooooo much to explain and I feel like I’ve been on this never ending journey for as long as I can remember. It’s all in my “Gut Healing” highlight ☝️ but after yearssssss of pain & extreme fatigue I was diagnosed with a gut full of toxins & bacteria which was causing tons of other adrenal & hormone issues.

One change (in addition to so many others) that my holistic doctor 👨‍⚕️ encouraged me to make was limiting meats 🥩 and this initially broke my heart 😞 to think of life without meat. I implemented everything else right away like the natural herbs 🌿 & supplements, celery juice 🌱, limiting toxins & plastic etc but the limiting meats was one that I’ve slowlyyyy 🐛 (very slow lol) have started to make. Let’s be honest, change is HARD AF when it’s something that you’ve done/known all your life BUT staying in the pain/misery/unhealthy/unhappy is also hard. I just had to choose “my hard”. It came down to what was harder, staying the same or easing into the change. I REFUSE to ever live like I lived for those years of pain, fatigue, heartache and I’m willing to do what I need to do to get better and live a better, healthier, and happier life.

So here I am easing into this change for my health and to do my part to do what I can to never experience those symptoms again. Here’s the thing with change, you don’t have to jump full in right away, you can EASE into it like I am with this whole meat thing. I started with #meatlessMonday then added #meatlessWednesday and now I’m up to meatless Friday too. On the other 4 days I limit meat to 1 meal. I don’t think I’ll ever be fully vegetarian 🌱, but for now I’m being very intentional about limiting it and just doing my best for my health. Small daily changes overtime compound into bigger rewards. You can ease into change just like in your fitness journey and one small change becomes two then three and so forth. Change is hard for sure, but staying the same is harder.

✅ Lentils: contain antioxidants & tons of fiber, which is good for gut bacteria as well as gut motility. Rich in folate, manganese, iron.

✅ Green Peas: rich in fiber, vitamin A, C, K, thiamine, folate, & manganese. Good source of iron, magnesium, phosphorus, zinc, copper and several other B vitamins

✅ Tempeh: made from whole fermented soybeans. Contains all 9 essential amino acids. Tempeh has more protein, fiber, and vitamins compared to tofu, as well as a firmer texture and stronger flavor. It’s also less processed than tofu and is considered healthier overall.

Chicken Rillettes from @yvettevanboven #homemadechristmas .
To be truthful, I’ve already made these Rillettes twice. First time, last month as part of a dinner party starter and my dear friends Lindsay and Ben @growwildorganics loved these to bits!
Second time, last weekend and, again, big thumbs up around the table.
Made with fantastic @gartmornfarm chicken thighs from @growwildorganics , these Rillettes are so easy to prepare and so tasteful. They can also be made with rabbit (which I’ll have to try at some point, as we love rabbit). Served along toasted bread and cornichons (not pictured), these are very quickly becoming a favourite here at home. 
This is another of my entries for this month’s #rainydaybitescookbookclub .
I still have lots of comments to reply and I’ll do it soon but now I’m in bed with a big cold and feeling very down.

One of my favorites for lunch today
Butternut squash chili - Super comforting and ready in under 30 minutes! 
Ingredients
1 large yellow onion, chopped
2 celery stalks, chopped finely
3 cloves of garlic, minced
1 large red or green bell pepper, chopped 
4 large ripe tomatoes, chopped
1/2 cup butternut squash, chopped into tiny pieces, fresh or frozen 
1 jalapeño, seeds removed and chopped finely
3 tbsp tomato paste
1 tsp ground cumin 
1/2 tsp cayenne pepper
1 tsp dried oregano 
1 tbsp unsweetened dark chocolate
1 can unsalted red kidney beans
1 can unsalted pinto bean
Salt
Chopped fresh cilantro (optional)
Sriracha (optional)
2 tbsp oil of choice
1 cup veggie broth .
Add oil to a large saucepan, bring to medium heat and add minced garlic and sauté for a minute
Add chopped onions, salt and sauté for 2 mins
Now add the celery, stir well
Add the chopped squash and sauté again for about 3-4 mins 
Add the chopped tomatoes, tomato paste, ground cumin, cayenne, oregano and cook for about 2-3 minutes
Add water and bring to a boil
Add the chocolate, stirring to melt
Next, add the canned beans, reduce heat and gently simmer, covered, for 10 minutes. 
Garnish with cilantro, if using

No se imaginan el sabor tan poderoso de esta crema! La ahuyama y la leche de coco combinan a la perfección.

• 1/2 cebolla blanca picada en trozos pequeños

• 1 ahuyama pequeña picada en trozos pequeños (aprox. 4 tazas)

• 1 zanahoria mediana, picada en trozos pequeños
.
• 2 dientes de ajo
.
• 1 taza de leche de coco
.
• 1 taza de caldo de verduras
.
• Cúrcuma, pimienta, jengibre en polvo y sal al gusto
.
• Sofríe la cebolla con los condimentos (excepto la sal) en un poquito de aceite, hasta que se vea un poco transparente.

• Agrega la ahuyama, la zanahoria y el ajo, y saltea por unos minutos.
. • Agrega la leche de coco y el caldo, y deja hervir hasta que todo esté blando.

• Licúa hasta que se vea bien cremoso, llévalo nuevamente al fuego y agrega sal, y ajusta los condimentos de ser necesario.

🍪 1)Chocolate chip-possibly one of my favourite combinations. A subtle vanilla flavour, with decadent chocolate chips
💛2)An absolute classic-Cinnamon, sugar and a squeeze of lemon. Takes me straight back to my childhood
🥥 3)Vanilla coconut- Where are all my coconut lovers? These are absolutely delicious, especially topped off with some toasted coconut!
🍫 4)Double chocolate-For all my chocolate lovers out there. Chocolate base and chocolate chips, you just don’t get anything more decadent!
🍯 5)Honey blueberry- Light, fresh and fluffy. Delicious topped with honey and ricotta cheese
🍏 6)Apple cinnamon- warm apple cinnamon pancakes are always a winner. Even better topped with some pecans and honey!

Weekends made better with the @jus_rol Cinnamon Swirls. THIS was our breakfast on Saturday - I managed two and my fiancé obviously had to eat the remaining four 🙄

They are honestly incredible and so easy to make. They come rolled up in the tube and you just have to chop them into 6 pieces, pop them in the oven then drizzle some icing on top! Usually only £1-£1.50 too. Not bad for 6 homemade cinnamon swirls 😍
