How to feed 2 people for $6? Fajita tofu! Baked tofu topped with fajita veggies (twp types of peppers, onions, garlic, corn, beans, sauce). Made roasted carrots and sweet potatoes in the side. Total cost was probably about $5. Also I eat off paper plates to not do extra dishes.

My friends @epstiensmeat convinced me to buy their new pastrami rub ribs they are selling now for Chag. I decided I really want them soft and falling off the bone and done quickly... so in cake the instant pot. Let me say... brilliant move on my part. •
Now personally I have a strong dislike for pastrami spice... I find it very strong. Sometimes too strong. But I do love the flavor of pastrami. After rinsing the spice off before I cooked it and adding a Dijon coconut sugar mixture to cook it in to..
I hit on the perfect combo of super tangy, with a slight sweet note on melt in your mouth ribs. 
For the ribs
5-6 lb Pastrami ribs, slightly rinsed off
1 cup water
1/2 cup Dijon mustard
1/2 cup coconut sugar 
Mix the mustard and sugar together and slather over the ribs. 
Add the water to instant pot and then add the ribs. 
Put on the pressure cooker setting for 60 minutes.

Tuesday’s Esalen wisdom: “WHAT YOU PRACTICE GROWS” 🙌🏼✨ it is the truth 💕 @drshaunashapiro shared this with us the first day of the Loving Awareness workshop. It made me think of SO many things. In relation to food, I couldn’t help but think of when I first eliminated processed sugars and gluten from my diet. Nothing tasted sweet or as good as I remembered it to... Over time, I began to notice my taste buds changing 😋 peaches, nectarines, watermelon, tomatoes, they all started tasting sweeter on their own. The longer I continued to eat this way, the more I enjoyed food on it’s own AND less sugary things! .

I have always been a sauce kind of girl — ranch, ketchup, aioli, mustard, etc. 🥫 as I started paying attention to the foods I ate, I began to appreciate my mom’s homemade sauces more and more. The amount of additives (especially sugar) used in sauces is cRaZY! .

#MyFoodPractice started out as a necessity. My autoimmune disorder left me at rock bottom. I was sick as I had ever been. Simply by changing my diet, I was able to heal my gut and restore my immune system. I practiced making conscious choices every time I ate and everything in my life changed 🌞🌟🌻 .

Roasted Tomato and Pepper Sauce:
<< INGREDIENTS >>
1/2 of each: red, yellow or purple bell peppers, seeded and medium rough chopped
2-3 lbs. heirloom tomatoes (1 box of cherry tomatoes plus a couple large heirlooms)
1 medium red or sweet onion medium rough chopped
3-4 cloves garlic, rough chopped or 1 shallot
1 bunch basil leaves, stems removed
1/2 cup olive oil (1/4 cup for roasting veggies & 1/4 for the sauce)
1 1/2 tsp. Celtic sea salt

<< METHOD >>
-Pre-Heat oven to 350°-400°
– Parchment lined baking sheet
– Rough chop all the peppers, whole tomatoes, red onion and half the cherry tomatoes.
– In a bowl add the tomatoes, peppers, red onion, chopped garlic, olive oil and sea salt.
– Roast the vegetables for 30 minutes until just tender and browned.

What does a beef and pork raising heirloom bean evangelist eat for late supper on Meatless Monday?  A brothy bowl of @RanchoGordo beans with tomato, garlic and crumbly Romano. Some for now, and some for the freezer.  I have a trick that turns beans and their broth into something comfier, richer and more extra. It’s the liquid! After cooking the beans to the desired doneness, I remove the beans to a bowl, turn the heat up to Med-high and bring the liquid to a simmer. How long it takes depends upon how thick you want your bean gravy to be. When the liquid has reduced and thickness is right, salt to taste (I don’t add salt or acid to beans until the end), and add a generous pat of butter. Stir until the butter is melted, return the beans to the pot, stir, then dish up into a bowl with lots of gravy, and top with chopped fresh onion, herbs, tomato, bread crumbs and/or grated cheese. And maybe some cracked black pepper. Drizzle with good olive oil, and enjoy ❤️ #peasantfoodisthebestfood #meatlessmonday #batchcookinglikeaboss

In 2018 we have access to a plethora of resources and knowledge quite literally at our fingertips. If you still consume animal products, wear animal products, attend entertainment venues which abuse and exploit animals, or use cosmetics tested on animals, it’s likely because you are not aware of how immensely cruel these industries are, of how sentient, conscious and aware animals are, or of just how much they suffered so humans can have that specific product. These industries are incredibly secretive for a good reason.

But it’s likely you’ve seen glimpses into this hidden world, and it’s likely you’ve chosen to turn a blind eye as to prevent yourself from being inconvenienced or from being exposed to unpleasant images and thoughts. “Don’t tell me, you’ll spoil my dinner,” goes the famous quote from the animal rights documentary Earthlings.

It’s up to us to overcome these slight inconveniences and step out of our immediate comfort zones for animals. As consumers it is our responsibility to be informed of the consequences of our actions. As good as it might feel to be blissfully ignorant it feels one thousand times better to not have to lie to yourself about where your food comes from, or to have to invent reasons why you are “still an animal lover”. After all, ignorance is only bliss to the ignorant one- to the animals, the victims of our ignorance, it is not blissful at all- it is nothing but violence and suffering.

It comes down to this: if you intentionally turn a blind eye to the suffering of animals for your own use and consumption, you are fully responsible for their plight. You can say you didn’t want to be inconvenienced. You can say you didn’t care. But you can’t say you didn’t know. If something feels wrong, there’s a good chance it IS wrong. Follow your heart. Do your research. Don’t be afraid to see those harsh images of animal suffering, as you’ll feel so much better when you stop participating in it. Take responsibility for your actions as a consumer.

After all, ignorance is only bliss to the ignorant one- to the animals, the victims of our ignorance, it is not blissful at all- it is nothing but violence and suffering. ••• It comes down to this: if you intentionally turn a blind eye to the suffering of animals for your own use and consumption, you are fully responsible for their plight. You can say you didn’t want to be inconvenienced. You can say you didn’t care. But you can’t say you didn’t know. If something feels wrong, there’s a good chance it IS wrong. Follow your heart. Do your research. Don’t be afraid to see those harsh images of animal suffering, as you’ll feel so much better when you stop participating in it. BUTTERNUT TACO RECIPE:

3 cups cubed butternut squash
2 cups diced orange cauliflower
juice from 2 clementines
1 tbsp olive oil
1/2 can black beans, rinsed and drained

for the sauce:

3 tbsp diced chipotle peppers in adobo sauce
3 tbsp honey
3 tbsp diced clementines

for topping:

cojita cheese, red cabbage, and pickled onions

DIRECTIONS -- in your @theoriginalgreenpan everyday pan over medium high heat, combine the cubed butternut, cauliflower, clementine juice and olive oil. Cover and saute for 10 minutes, stirring intermittently. Then, remove lid and stir in black beans --- sauteeing for an additional 5 minutes for the butternut and cauli to get lightly browned. 
In a small bowl, combine the sauce ingredients. Then stir it into the butternut mixture. Then, assemble your tacos! •

Super flavorful and creamy. 😋. Recipe⬇️ 🍃🍃🍃🍃🍃🍃🍃🍃🍃🍃🍃🍃🍃🍃 🍅Cook your pasta of choice according to package directions. (For this dish, I used organic whole-wheat bow tie pasta.) 🍅Coat bottom of saucepan with avocado or extra virgin olive oil, let warm, then add 1 cup of halved cherry tomatoes, 1 cup frozen spinach and 1 cup chickpeas. 🍅Season with sea salt or #himalayansalt to taste. 🍅Once the spinach has thawed stir in 3-4 tablespoons of #homemade basil pesto, or more if you so desire. These hot (and smokey) days do not have us wanting to turn on the oven when we get home from work. This Spicy Tomato Watermelon Salad is the PERFECT option this time of the year. Be sure to put it on your dinner rotation this week! 
Ingredients: 
Dressing: 
1 tablespoon tamari
2 teaspoons fresh lime juice
2 teaspoons rice vinegar
1 small garlic clove, minced
½ teaspoon minced ginger 
Salad: 
3 heirloom tomatoes, sliced into wedges
5 cups cut watermelon (about 2-inch triangles)
1 thinly sliced jalapeño and/or a few Thai chiles
2 tablespoons Thai basil or regular basil
2 tablespoons toasted cashews
½ avocado, diced
Sea salt, to taste, if desired
Lime wedges, for serving 
Instructions: 
1. Make the dressing: In a small bowl, combine the tamari, lime juice, vinegar, garlic, and ginger.
2. Arrange the tomatoes, watermelon, and jalapeños on a platter or in a shallow bowl. (This salad should not be served in a deep bowl because the flavorful juices will sink to the bottom.) Drizzle with the dressing and top with the basil, cashews, and avocado. Season to taste and serve with lime wedges.

Then turned into my lunch today 😊 My stir fry had tempeh, onions, sweet potatoes, broccoli, kale & mustard greens, zucchini and crispy green beans. Today is chilly out so my body wanted some warm food. Heated up my stir fry leftovers and added smoked jalapeño kraut, avocado & salad sprout mix. Meatless Monday strikes again with these ginger sesame tempeh lettuce wraps! First time cooking with tempeh, and it was the easiest thing (omg so much easier than dealing with raw chicken 🐔). I bought the @traderjoes organic 3 grain tempeh. It’s affordable and really not overwhelming at all! I cubed it and marinated it in a sauce with sesame oil, organic tamari, lemon juice, maple syrup, garlic, fresh ginger, and chili paste. Added carrots and shiitake mushrooms after cooking the tempeh in sauce for about 10 min and then added to romaine lettuce cups. I encourage everyone to try this delicious, protein packed food!

My first time trying jackfruit and I decided to make manicotti, my filling included jackfruit, spinach  and a few spices,herbs onion, garlic and cheeses,they came out pretty good.
