I dont know what it is about people, but we fucken love divisive issues, anything that let's us pick a side and I'm not even talking about the big political hot button issues like taxes, immigration, the death penalty or why it's not legal to punch stupid people. I mean anything... now believe it or not, I'm just as guilty as anyone when it comes to this, I've nearly gotten into a knife fight with close friends over which is better, a hard shell or soft shell taco, and fuck you Rick, soft shell is better. Uggghhh, see what I mean, terrible.
Literally anything... I guaran-dam-tee that somewhere, right now on Instagram, theres a picture of a Burger King Whopper getting a death threat from a crazed McDonald's fan (I'm looking at u, Grimace). Why do we do this? Cant we all agree that a tasty burger is wonderful? Same with cat people and dog people. Who cares if one person may prefer a slobbering, leg humping dog or the other, a miniature, serial killing tiger that lives in your house? They're both terrific little companions and so is any pet for that matter... unless you own a pet tarantula, then you're just a fucking weirdo and I wouldn't trust you in any environment outside of a prison gang, tattoo parlor or Halloween store.
What I'm saying is that unity is best even among groups you would think have little in common except for 1 small thing that links them together, like vegetarians and this weeks category inspired by 2 of my best friends, @shutupandlaugh and @mrs_dib with a recipe based off @anne_lheureuxocr and #spartaneats . I'm talking about, LESBIANS!!! For them, every
day is #meatlessmonday so to honor this category, I decided to make these Sexy, Spicy, Veggie, Spaghetti Squash topped with crushed red pepper flakes, basil, mushrooms and parmesan cheese. Perfect right inside the squash to just eat right out with only a little wipe of your mouth for clean up afterwards 😉.
this MAPLE PUMPKIN SPICED OATMEAL is topped with warm CINNAMON APPLES and TOASTED PECANS. I just heated 1/3 cup quick cooking oats + 1/2 cup pumpkin puree 🎃 + 1 tbsp @earthlychoice flaxseeds + 1 tsp cinnamon + 1 tsp pumpkin pie spice + 1/4 tsp nutmeg with 1 cup water on a stove for 15-20 minutes on med/low heat. Topped it with my cinnamon apples 🍎 (slice an @imperfectproduce apple, toss in cinnamon & microwave for about 30 - 45 sec) + toasted pecans + maple syrup drizzzzz

VEGAN FRIENDS—I need your help. Where do you go for good vegan food?? Sometimes the fake meat‘s got this weird taste that I can’t place. It kinda ruined the nachos for me 😞 We were supposed to have dinner at @jajajanyc, & I LOVE their vegan nachos, but the wait was sooo long! Laatst werd het eens tijd voor iets anders dan mijn geliefde havermoutje dus gooide ik wat vanille sojayoghurt in een kommetje en bedekte deze met alle toppings die ik kon bedenken.

🐭 warm zomerfruit met chiazaad
🐭 gepoft spelt
🐭 eigen muesli mix van grove havermout, lijnzaad, rozijnen en pittenmix .
Gelukkig bestaat er niet zoiets als te veel aan toppings 🙆🏼♀️

Good grief this was easy! It’s basically a dump and stir lasagna. Google “dashing dish gluten free no boil pasta bake”. @dashingdish .
I used @eatbanza pasta and subbed ricotta for the cottage cheese. It was so good that my husband didn’t even realize that we had a dinner without meat (the horror 🙀🤣 #meatlessmonday#yesitsthursday ). I’ve been trying to convince him to have one dinner a week with no meat purely for the budget 💰. .
This sauce came about because, the other day did not go at all as planned and among other things, a trip to the grocery store did not happen. So I was left resorting to the pantry and freezer once again! Here’s what I came up with👩🏻🍳
Ingredients: • 1/2 yellow or white onion, diced
• 2 cloves garlic, minced
• 1 zucchini, diced • 1 can corn • 1 can diced tomatoes • handful of fresh chopped herbs(not necessary but, having a garden on these nights definitely comes in handy, 🙌🌱I used fresh oregano, thyme, basil, and parsley) • 1 jar @classico_sauce Classico Vodka Sauce • 1 handful of arugula (about 1 cup) • whatever pasta you have....I found a @traderjoes spinach ricotta ravioli and a three cheese tortellini and threw them both in the pot, what the hell!👌plain spaghetti noodles would have been fine too! • 1/4 cup pine nuts • cheese to top, goat cheese would have been 🙌 but I had Parmesan👌
Cooking Directions: •sauté onion and garlic in 2 Tbs olive oil on medium heat, until onion becomes translucent •add zucchini, sauté until golden
•add canned corn
•add can diced tomatoes •simmer about 7-10min
•add fresh herbs if you have them
•add Vodka Sauce •add handful of arugula •cover and simmer about 5min. •get pasta water boiling (I always add a little salt and olive oil to the water
•while Sauce simmers, add pine nuts evenly to a dry pan (do not add oil) and stir once they start to brown on both sides, remove from heat. •sprinkle with cheese of choice, toasted pine nuts and fresh cracked black pepper. So yummy and fresh tasting, now what should I call it? 🤷🏻♀️🍅🌱🌽🍝👌
