Went for a one pot wonder with mexi flavours tonight. I wanted chili, but also wanted more veg than the average chili. So ended up with this concoction.
Rehydrate TVP in "beef" stock while you saute onion, red capsicum & sweet potato. Add in tin tomatoes, red kidney beans, butter beans, brocolli, TVP & quinoa + more stock. Flavour with paprika, cumin, chilli, oregano, stevia and s&p. Cover and bring to the boil then let simmer til quinoa is cooked through.
Healthy, quick, cheap, tasty AF. Ticking all the boxes.
Today’s meat-free dish Keema, takes its inspiration from India. Traditionally, this dry curry is made from minced beef, lamb or chicken. My version has vegetarian ‘beef’ crumbles from Beyond Meat, which is perfect for soaking up all those fragrant spices. Here I’ve topped my Keema with a sunny side egg and served with toasted sourdough bread. ..

Vegan chilli pasta
Prep: 10 mins; Cook: 15 mins; Serve: 2-3
200-300 gr pasta, cook according to instructions
2 medium size carrots, peeled and sliced
1 can of red kidney beans, drained
1 can of plum or chopped tomatoes
1 pepper, chopped
1 large onion, chopped
3 cloves of garlic, finely minced
1 handful of coriander leaves, chopped
1 tbsp tomato puree
1 tbsp (smoked) paprika powder
1/2 - 1 tbsp chilli flakes/powder
1 tbsp ground coriander
1 tbsp cumin
salt and pepper
1 tbsp olive oil
Heat up oil in a wok or frying pan over medium high heat. Add the onion, carrots and garlic, cook until the onion is soft and fragrant. Add the red pepper and tinned tomatoes, stir. Add the tomato puree, paprika powder, ground cumin, ground coriander, chilli flakes (powder), salt and pepper. Mix well and cook for 5 mins until the pepper and carrots are tender. Season to taste. Add the kidney beans. Mix with the sauce well. Turn down the heat and let the chilli simmer for 5 mins until the the vegetables are equally soft. Add the coriander leaves, mix and cook for another 30 seconds. Stir in the cooked pasta. Remove from the heat and serve.

THAT’S NOT MEAT!! Impossible you say? Well, yes, you’re correct, it’s The Impossible Burger. 100% meatless burger. All plant based. It’s so much like meat in texture and even flavor that you can’t tell the difference. It’s uncanny. So much so you’ll feel like asking if they made a mistake and actually brought you a meat burger. Strange but good.
Mushroom Spinach One Pot Vegan Pasta from the lovely @thetastyk —•—Ingredients—•—
250g/8.8oz whole wheat spaghetti
2 cups portobellini mushrooms, sliced
2 large portobello mushrooms, sliced
1 medium white onion, sliced
3-4 garlic cloves, minced
3 cups baby spinach
1 cup plant-based milk (I used soy)
2 cups vegetable stock
1 tsp dijon mustard
1 Tbsp soy/tamari sauce
⅛ cup nutritional yeast
2 Tbsp fresh rosemary
chili flakes, black pepper, lemon juice (about 1 Tbsp) & thyme, to taste
1. Prepare the veggies as instructed.
2. Heat a large non-sticking pan on the stove and add the sliced onions. Add some veggie broth so it doesn't burn.
3. Add the garlic and rosemary and sauté until golden brown.
4. Add in the mushrooms and soy sauce, stir and let cook until soft.
5. Add the veggie broth, milk, spaghetti, nutritional yeast and mustard, cover the pan with the lid and bring to a boil.
6. Stir it up once in a while so that the spaghetti won't stick.
7. Once it's boiling, lower the heat and let simmer for 10-12 minutes (depending on how al dente/soft you want the pasta to be).
8. 2 minutes before it's done, add in the chili flakes, lemon juice and spinach and continue cooking until it's done.

Buen provecho mi gente! Aquí les dejo esta delicia! Hummus de garbanzo clasico🌿💚uno de mis favoritos con mi spicy twist
🌿 ✅2 tazas de garbanzos pre cocidos
✅1/2 taza aceite de oliva
✅1/4 taza tahini ✅1-2 dientes de ajo
✅3 cdas zumo de limon
✅1 cada de paprika/pimentón
✅sal rosada al gusto ✅1-2 cdta pimienta de cayenna 🌿Llevar todos los ingredientes al procesador o licuadora hasta llegar a textura deseada. Y si quieres experimentar más puedes colocarle 1/2 taza de remolacha cruda o pimientos rojos crudos y darle un giro colorido y más nutritivo🌿🙌🏻
