Easy weeknight dinner! Takes 30ish mins to complete!

Ingredients :
3 Zuchinni, halved and seeded
2 cups spaghetti sauce
2 cups shredded rotisserie chicken
Handful of grape tomatoes, halved
Sprinkle of shredded cheddar cheese
Olive oil
Salt and pepper

Directions:
Preheat oven to 400 degrees 
Put zuchinni in 9 x 13 pan, drizzle olive oil, sea salt and pepper, put in oven for 20 mins.  Mix spaghetti sauce, tomatoes and chicken in a Bowl. Put sauce mix evenly on top of zuchinnis, top with cheese, and put back in oven for 10 mins or until cheese is melted. Enjoy!

Freezing fall nights call for creamy cozy soup. This came together pretty fast, well, by my standards. All total I think it was done in about 45 minutes. First, I put some rice on to cook. As that cooked, I also boiled some cashews for about 10 minutes and I sautéed some onion with earth balances and about 1-2 Tab of maple syrup, 1 Tab onion powder, 1 Tab garlic powder and black pepper. Once the onion was translucent, I added 2 cups of hot water along with 3 Tab of Better Than Bouillon Vegetable Base, 1 can chickpeas, 1 can great northern beans, broccoli, lima beans, 2 Tab tahini and the cooked rice. Once the cashews cooled a bit I added them plus 1 teas garlic salt, juice from 1/2 lemon and the water the cashews boiled in (3/4 cup or so of the cashew water)to the vitamix and blended until smooth. Added to the soup with a handful of fresh ribbon cut basil and served it with heated sourdough bread. Even though I am not a fan of the cold weather I do love hot soup. Fall seems like the perfect excuse to indulge. 🌱💚🍴

CAULIFLOWER AND CHICKPEA CURRY RECIPE
Ingredients:
2 tbsp olive oil
1 onion, finely sliced
2 tbsp yellow vegan curry paste
1 clove garlic, minced
1 dried or fresh small red chili, sliced
1 pound cauliflower florets
1 (15 oz) can chickpeas, drained and rinsed
1 (15 oz) can whole cherry tomatoes or 1 (15 oz) can diced tomatoes
1 pound spinach, washed
1 (15 oz) can full fat coconut milk
1/4 cup chopped coriander leaves or to taste
2 cups cooked brown rice

Directions:
1. In a large pot heat 2 tablespoons of olive oil over medium heat. Add the onion and yellow curry paste and mix well.

2. Cook, stirring occasionally, until the onion is soft about 10 minutes. Add the chilli and garlic and cook for 30 seconds. Stir in the cauliflower florets, chickpeas and tomatoes.

3. Add 1 cup of water and bring to a boil. Reduce the heat, cover with a lid and simmer for 15-20 minutes.
Remove the lid and stir in the coconut milk.

4. Cook until the sauce thickened. Stir in the spinach and cook until wilted. Remove from the heat.

5. Divide the cooked brown rice between 4 food containers. Top with cauliflower and chickpea curry. Sprinkle with chopped coriander.

6. Serve immediately or store in refrigerator for up to 4 days.

Meaning when at the grocery store or farmers market I’ll most often buy whatever local produce is available, then what’s in season and anything extra that might strike our fancy then figure out what I’ll make from those ingredients later. This combined with trying to avoid food waste has resulted in lots of yummy experimentation. Take tonight for instance, I had no plan going into today what we’d be eating for dinner so when it came time to come up with something menu prep turned into a game of “what do I have in hand?” There were tomatoes from the garden and kale that needed to be eaten ASAP plus an acorn squash that could play a big part. I’ll sometimes head to Pinterest for some general inspo when I have a few ingredients I’m not sure what to do with but usually end up creating my own recipe from there. And that’s how this delicious thang happened. 👇🏻👩🏼‍🍳

It has rained for days. And since it’s soupy outside it may as well be soupy inside too.  So roasted butternut squash soup with coconut milk and gnocchi. 🌱💚🍴

This super easy homemade marinara sauce starts with sautéed onions, peppers, and minced garlic. Then I added a pack of Italian @montereymushrooms Let's Blend, minced eggplant and sautéed a few minutes more.

Finally, I added a large can of crushed tomatoes and cooked until it was warm. I added a pinch of ground rosemary, then put int salt and pepper to taste. So easy and it is my new favorite last minute dinner! 
The Let's Blend can be frozen so you can have mushrooms on hand anytime!

Ingrediënten:
- 50  gram linzen
- 50 gram (volkoren)rijst
- 1/2 komkommer
- 50 gram alfafa
- 4 bosuitjes
- 5 takjes munt
- 5 takjes koriander
- 25 gram geroosterde cashewnoten
Dressing:
- 2 eetlepel chilisaus
- 1 eetlepel miso (natuurwinkel)
- 2 cm gember
- sap van 1/2 limoen
(470 calorieën)
Bereiding:
1. Kook de linzen indien je ze gedroogd hebt gekocht (15-20 minuten koken). Gewoon uit blik kan natuurlijk ook (geen bereiding nodig).
2. Kook de rijst
3. Mix de ingredienten van de dressing met staafmixer/blender/keukenmachine.
4. Hussel alle ingrediënten (exclusief de dressing en cashewnoten) goed door elkaar.
5. Serveer met de dressing en cashewnoten.

Kook de linzen indien je ze gedroogd hebt gekocht (15-20 minuten koken). Gewoon uit blik kan natuurlijk ook (geen bereiding nodig). 2. Kook de rijst 3. Mix de ingredienten van de dressing met staafmixer/blender/keukenmachine. 4. Hussel alle ingrediënten (exclusief de dressing en cashewnoten) goed door elkaar. 5. Serveer met de dressing en cashewnoten.
