Simple and easy vegan burrito bowl for dinner tonight! Been working lots of 12 hour days, and when I’m not, I’ve been running around doing all kinds of other errands. This is the first time all week I’ve been able to cook at home (mind you it was at 8:30 at night) but I did it!!! I just threw together whatever I could find and ended up with this lovely, healthy meal in less than 10 mins!

I used @unclebensusa original ready rice (cuz who has time to cook rice at 8:30pm?) seasoned it with Adobo, topped it with some corn, black beans, diced avocado, tomatoes, and shredded lettuce and finished it off with a drizzle of @ortegataco green tomatillo sauce and red taco sauce! 👌🏼

Oh my goodness!  Another amazing creation here tonight!  Piri Piri Chicken Pizza!  My base on some Naan bread was made with Epicure’s Roasted Garlic Aioli, used a vegan mayo and some lemon juice.  Cooked up nice bite sized pieces of boneless skinless chicken breast tossed with Epicure’s New Piri Piri Dry Glaze in the Perfect Pan!  On the side made my drizzle for the pizza base with Piri Piri Mix, apple cider vinegar and oil.  Jack Cheese to top! Omg so good!  And fast!  Dinner in under 20 minutes!

Glad I made extra tomato sauce last night. All I did to make this Amatriciana pasta was pan fry some @daylesfordfarm organic bacon and, once cooked, add the sauce to heat through (along with a sprinkle of chilli). Cooked some @glutenfreebarkat gnocchi and added it to the sauce. The perfect midweek post-work dinner! I’m kind of obsessed with chives. Which is weird because I hate onions. If you decide to plant an herb garden this summer (it’s still not too late), chives are the best. They require so little attention and they’re perennials, so they will actually grow back every year ✔️

- 1½ table spoons olive oil
- 3 boneless skinless chicken breast, cut into ½ inch cubes
- 1 370ml bottle Baron Coconut Curry Paste
- ½ to 1 cup of water
- 1/2 teaspoon of masala
- 1 medium onion, chopped finely
- 2-3 cloves garlic, crushed
- ½ cup basmati rice 
Steps 
1. In a large pan, heat olive oil.
2. Add onion and garlic and cook until tender. 
3. Increase heat and add chicken breast cubes; stir until cooked. 
4. Add 3-4 tablespoons of Baron Coconut Curry Paste. 
5. Add ½ teaspoon of Salt and Black pepper; or to taste. 
6. Add ½ teaspoon of masala
7. For desired amount of gravy; add water and allow to simmer for 5-7 minutes or less 
8. Prepare rice as per package instructions. 
9. Serve Coconut Curry mixture over rice with a hint of cilantro (optional).

Steps 
1. In a large pan, heat olive oil.
2. Add onion and garlic and cook until tender. 
3. Increase heat and add chicken breast cubes; stir until cooked.

5. Add ½ teaspoon of Salt and Black pepper; or to taste. 
6. Add ½ teaspoon of masala
7. For desired amount of gravy; add water and allow to simmer for 5-7 minutes or less 
8. Prepare rice as per package instructions. 
9. Serve Coconut Curry mixture over rice with a hint of cilantro (optional).

I got a bottle of @chosenfoods’ cold-pressed then naturally refined avocado oil and I wanted to play around with it so I subbed the olive oil and made this avocado pesto pasta. Want to try it? Full disclosure, I kind of winged it but here’s my recipe! 👇🏽

⠀⠀⠀⠀
~**Avocado Pesto**~ (Yields 2-3 servings)
⠀⠀⠀⠀
• 1-2 large avocados
• 1 bunch of fresh basil
• 1/2 cup pine nuts
• 2-3 cloves of garlic
• avocado oil
• salt & pepper
• lemon
⠀⠀⠀⠀
Lightly toast pine nuts in a dry frying pan on medium heat then put them aside. Remove basil leaves from stems. Add pine nuts to a food processor then lightly pulse until nuts are finely chopped. Add basil leaves, drizzle a tablespoon of avocado oil and  pulse. Remove the pit and scoop avocado into the food processor. Use half a lemon and squeeze juice as well as salt and pepper into the mix. Drizzle more avocado oil then blend all ingredients together. Add more avocado oil if mixture is too thick but keep in mind it will naturally be thicker than a traditional pesto. Add more salt, pepper and lemon juice to taste, if need be. In a frying pan drizzle a little avocado oil, throw in minced garlic and once that begins to cook, mix in the pesto. Once heated, toss in some cooked pasta then serve! Enjoy!

So, dinner was good. A slightly over ripe avocado only meant one thing: guacamole had to be made. So a quick and simple guac over shrimps 🍤 marinated in paprika,  cumin, dried herbs and salt and pan fried to a nice brown, all wrapped up comfortably in a roti, coz I had no tortilla and I don't like tacos! Chicken Marbella never gets old to me! It’s one of those relatively recent-to-the-party classics that I prepare and relish time and again. To the original recipe, I vastly reduce the quantity of sugar and add several long strips of orange or tangerine zest before the patient braze; I also increase the called-for quantity of prunes, which so wonderfully thickens the sauce, and use strong brown stock instead of sad, watery broth, as was used in the original receipt. I will use this saucy dish to recommend a truly superior rice that I’ve come to prepare regularly as a deliciously simple go-to side, always cooked in the oven to reduce stovetop clutter and cleanup. This is Dunbar ‘Elonga’ Extra Long Basmati Rice, which I urge you, without either receiving compensation or harboring reservation, to try. I find this product at my local Indian market and hope you too will search for it. Once you’ve plunged into this fragrant cascade of delicate individual grains, and to the miracle of cooking rice so perfectly in your oven, you will nail closed the coffin’s lid on the atrocities of grocery store rice, on stovetop rice cookery, and on our collective shame for having suffered and choked through all these decades of culinary horror before coming to enlightenment with proper rice!  I say this as no great credit to myself but, rather, to attract attention to this genuinely exquisite agricultural product!
