Inspired by @meowmeix awesome salad jar preps, I wanted to share with you 4 quick & easy mason jar meal ideas to add to your routine.

A general rule of thumb for building mason jar salads: put your dressing on the bottom first. Then you want to start with ingredients that are harder/more solid first because they hold form better, then finish with your protein & greens on top. Itโ€™s just like building a house๐Ÿ’๐Ÿปโ€โ™‚๏ธ๐Ÿ

Meal 1: Overnight Oats โ€“ oats (base) + whey protein powder (added protein & flavour) + chia seeds (crunch, texture, fibre) + banana + blueberries + Greek yogurt (protein & creaminess). Then fill the jar with your favourite liquid. I like to use almond milk.

Meal 2: Turkey Zoodle Jar โ€“ yellow zucchini noodles (base) + broccoli (Vit C) + bell peppers (Vit A & C) + edamame (protein, fibre) + corn (I like corn) + ground turkey (protein)

Meal 3: Chicken Salad Jar โ€“ chickpeas & black beans (base & fibre) + cherry tomatoes + grilled chicken breast (protein) + baby arugula. I make my own homemade dressings thatโ€™s 50% oil, 20% balsamic vinegar, 10% amino soy, 10% maple syrup, 10% mustard.

Snack: Yogurt Fruit Jar โ€“ pineapple + strawberry + Greek yogurt (protein) + peanut butter (added protein, creaminess, healthy fat) . You can eat this as is chilled as a dessert, or add whey protein to it and make it a smoothie. I like to add pb for flavour and creaminess. You can swap it out for avocado and make it a greener smoothie if youโ€™d like.

Inspired by @meowmeix awesome salad jar preps, I wanted to share with you 4 quick & easy mason jar meal ideas to add to your routine.

A general rule of thumb for building mason jar salads: put your dressing on the bottom first. Then you want to start with ingredients that are harder/more solid first because they hold form better, then finish with your protein & greens on top. Itโ€™s just like building a house๐Ÿ’๐Ÿปโ€โ™‚๏ธ๐Ÿ

Meal 1: Overnight Oats โ€“ oats (base) + whey protein powder (added protein & flavour) + chia seeds (crunch, texture, fibre) + banana + blueberries + Greek yogurt (protein & creaminess). Then fill the jar with your favourite liquid. I like to use almond milk.

Meal 2: Turkey Zoodle Jar โ€“ yellow zucchini noodles (base) + broccoli (Vit C) + bell peppers (Vit A & C) + edamame (protein, fibre) + corn (I like corn) + ground turkey (protein)

Meal 3: Chicken Salad Jar โ€“ chickpeas & black beans (base & fibre) + cherry tomatoes + grilled chicken breast (protein) + baby arugula. I make my own homemade dressings thatโ€™s 50% oil, 20% balsamic vinegar, 10% amino soy, 10% maple syrup, 10% mustard.

Snack: Yogurt Fruit Jar โ€“ pineapple + strawberry + Greek yogurt (protein) + peanut butter (added protein, creaminess, healthy fat) . You can eat this as is chilled as a dessert, or add whey protein to it and make it a smoothie. I like to add pb for flavour and creaminess. You can swap it out for avocado and make it a greener smoothie if youโ€™d like.

TEMPEH SUSHI SANDWICH using Organic Village Chickpea Tempeh. (makes 1 sandwich or two halves) โ €โ €โ €โ €โ €โ €โ €
โ €โ €โ €โ €โ €โ €โ €
Ingredients:ย 
1 cup cooked brown riceย 
Sushi rice seasoningย 
1 sheet noriย 
1 x chickpea and linseed tempeh sliced through the middle then cut to make a 10cm square (or whatever organic Non-GMO tempeh you can source locally)ย 
and shallow fried in olive oil until golden brown (1 tsp is all you need or bake if you want to go oil free). 1/3 cup thinly sliced grated carrotย 
ยฝ cucumber slice thinย 
ยฝ avocado sliced thin
โ €โ €โ €โ €โ €โ €โ €
Method:ย 
1. Cook brown rice until well cooked then add sushi seasoning and allow to cool.ย 
2. To assemble sandwich place nori sheet shiny face down on a piece of glad wrapย 
3. Place ยฝ of the rice onto the centre of the nori sheet in a 10cm square at a 45 degreeย 
angle.ย 
4. Place Tempeh on top of rice then layer remaining ingredients.ย 
5. Fold corners of the nori sheet into the centre to create a square.ย 
6. Gather plastic wrap around sandwich and place seam side down in fridge for 10-15 min.ย 
7. With a sharp wet knife slice through centre of the sandwich

Iโ€™m a huge fan of salad. Iโ€™m also a huge fan of tacos and burritos! This is my version of taco salad. I added a  few tortilla chips for the crunch...letโ€™s be honest, if I donโ€™t portion it out, half the bag might easily be eaten! And, yes, that is sour cream. I use Light sour cream, and again, portion it out. Iโ€™m a โ€œtaco packetโ€ kind of lady, so I use the Lawryโ€™s seasoning on my lean ground beef or turkey.

So proud of my self for meal prepping every sunday 3rd week today.. ๐Ÿ˜Š๐Ÿ˜๐Ÿค— I really like meal planning & prepping my meals for the week cause I'm still weak at controlling myself on what & how much I should eat. Though I actually don't know what I cooked, I just cooked, seasoned then done.. ๐Ÿ˜‚๐Ÿ˜‚๐Ÿ˜‚ FYI I also don't know the taste but I think they taste good. I just sense them by smelling.. All I know is that their not salty & bland. Just right for me. When I was working full time, Sunday was my favourite day of the week! Sunday morning would be spent going to the markets and grocery store to do the weekly food shop (I thoroughly enjoy discovering new products and ingredients to cook with, walking the aisles at the grocery store and reading the nutrition labels on all of the products.  I know not many people share this same view ๐Ÿ˜‚). Sunday arvo (approximately 2 hours of it) would then be spent preparing my meals for the week ahead.  I would usually prepare breakfasts, lunches and snacks for Monday - Wednesday for my partner and I (I would usually do a mini meal prep mid week for Thursday / Friday because I donโ€™t like freezing cooked meals). Preparing my meals for the week ahead made me feel organised and in control of the food that I was going to consume that week.  It made me content knowing that the food I was going to consume would fuel and nourish my body and leave me feeling full for longer, instead of spiking my blood sugar levels and leaving me hungry in a few short hours (I have been guilty of succumbing to a bagel or savoury muffin every now and then when buying my morning coffee ๐Ÿ˜). Working in an environment that was demanding, often hectic and unforeseeable with varied working hours meant that sometimes it was too easy to eat unhealthy foods.  Preparing and bringing my meals to work gave me the comfort of knowing I always had healthy food readily at hand ๐Ÿ’๐Ÿปโ€โ™€๏ธ and made it easier to walk away from the lolly jar ๐Ÿฌ๐Ÿญ! Home-made, no added sugar!

Just keep the pitted cherries on a tray covered with paper in the sun for 3 days, turning them over 1-2 times per day. Choose the most sunny window sill or other place with direct sunlight. 
It is one my favorite ways to preserve berries. I like to pit them in muesli or porridges.

ยฝ cup red bell pepper, finely diced

For the sauce:
ยฝ cup light sour cream
ยผ cup green salsa
1 teaspoon honey
salt and pepper to taste
2 tablespoons cilantro leaves 
4 cups shredded purple cabbage
1 can black beans, rinsed and drained
1 avocado, thinly sliced

For the shrimp: Heat the olive oil over high heat in a large pan. Season both sides of the shrimp with chili powder and salt to taste. Place the shrimp in a single layer in the pan and sear for 2-3 minutes per side, until shrimp are pink and cooked through.

For the mango salsa: Combine all the ingredients in a bowl, add salt to taste. Cover the bowl and place it in the refrigerator for at least 15 minutes, up to 4 hours.

For the sauce: Place all ingredients in a food processor and blend until smooth.

To assemble: Divide the cabbage between 4 bowls. Top each bowl with ยผ of the avocado and ยฝ cup of black beans.
Divide the shrimp and mango salsa evenly among the bowls. Drizzle with sauce and serve. #regrann
