This week of #healthylunchesforapril is going to focused around this veggie burger. It is super flavorful with a bit of a kick and did not fall apart at all. Just go to @cookieandkate and look up sweet potato black bean veggie burger on her website. So yummy guys. And filling too. Today I served it with a side of roasted Cauliflower and avocado. I made a couple changes to her recipe using what I got from the farmers market. ◽Red potatoes instead of sweet potatoes ◽Zucchini, yellow squash, and eggplant mixture

The best part of this recipe and the reason I LOVE roasting veggies so much is that you just chop everything and throw it in the oven. Super delicious, low effort, less kitchen cleanup, more time doing things you love.🤸🏾💕

If you prefer your dressings sweet, like me, add some honey or maple syrup to the dressing mixture.🍯 And if you are meal prepping this for lunches, separate the ingredients and assemble the day of!

The internet is rife with sooo much information now that it can be overwhelming to wade through it. Plus, we love to overcomplicate things when it comes to nutrition (& training too, really). Simply: get enough protein in to help your body repair and recover, get some fats in to help your body absorb essential vitamins, eat carbs to energise you & get a variety of veggies/fruit in too.
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Essentially the bottom line is consistency. Eat in a way that doesn’t deprive you, that you enjoy, that keeps your soul happy, that you can see yourself keeping up with over a long period of time, that doesn’t make you feel like you’re ‘on track’ or ‘off track’.. you’re just fuelling your body. 🤷🏻‍♀️

Going beyond the ramble here’s some savoury breakfast muffins I whipped up for the next few days 👩🏻‍🍳 Simple ingredients, 5 mins to prep & 20 mins in the oven.
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
I used:
👉🏻 4 @clarence_court eggs
👉🏻 6 tbsp @twochicksproducts egg whites ⠀⠀
👉🏻 Splash of milk of choice ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
👉🏻 3 tbsp reduced fat cheddar cheese
👉🏻 8 chopped up @merchantgourmet sundried tomatoes ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
👉🏻 A few slices of chopped ham
👉🏻 A large handful of chopped kale
👉🏻 A few sprays of @frylighthq ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
The ingredients you can incorporate are endless though; bacon, feta, mushroom, spinach 🙋🏻‍♀️ Simply mix together and pop in the oven on 180C for 20 mins. They keep in the fridge for upto 3/4 days (mine never last that long tho 🐷) AC🐨

This week, we’re eating: ham, cheese, and leafy greens omelette, steamed veggies with a pat of kerrygold butter, broccoli & cheddar casserole, and marinated chicken breasts. In the fridge I’m marinating my favorite rosemary and garlic pork loin. 👊🏼FYI, we feed the babies the same meals we’re eating (I use salt sparingly or none at all and don’t add anything 🌶).

Fathead pizza 🍕 Have you heard of it?

It’s an easy homemade low-carb, high-protein pizza crust. I was initially skeptical but figured I should test it out, and it WAY exceeded my expectations! This pizza is really filling, and it’s simple and quick enough to make on a weeknight. We made two batches of the crust for two pizzas (one is probably not enough for two adults). Recipe and directions below.

Ingredients:
Crust
• 1½ cups shredded mozzarella cheese
• 3/4 cup almond flour
• 2 tbsp cream cheese
• 1 tsp white wine vinegar
• 1 egg
• olive oil to grease your hands

Toppings (anything you want!)
• I used mozzarella, marinara sauce, oregano, baby spinach and baby kale, turkey pepperoni, and ham

Instructions
1. Preheat the oven to 400°F.
2. Heat mozzarella and cream cheese in a bowl in the microwave.
3. Stir until they melt together. Add the other ingredients and mix well.
4. Cover your hands with olive oil and flatten the dough on parchment paper, making a circle about 8 inches in diameter.
5. Stick the crust with a fork (all over) and bake in the oven for 10–12 minutes until golden brown. Remove from the oven.
6. Spread a thin layer of marinara on the crust. Add toppings and bake for another 8-12 minutes or until the cheese has melted.

I also mixed about half a can of vegan tomato soup into the stuffing to hold everything together. Seasoned with cumin, smoked paprika, and Italian seasoning. -Fresh cilantro chopped (as much as you’d like!) Toss with lemon juice, balsamic vinegar, a spritz of olive oil, salt and pepper 😍 
This made 4 generous servings

Put green beans in boiling water leave for 6 min remove from boiling water rinse with cold water let sit. 
Add 2tbsp olive oil to pan put on the stove on Med heat add 1/2 tspn finely chopped ginger & garlic stir for a min add whole onion cut into big Chunks, stir for 2 min add sautéed green beans, 3 tbsp soya sauce, 1 tbsp rice vinegar 1/2tsp sriracha hot sauce, 1/2tsp garlic powder, 1/2tsp salt, 1/2tsp sugar, chili flakes stir add 1/4 cup water let simmer 
In a small bowl mix  1/2tbsp corn starch with some water add to pan to thicken the sauce and it’s done ♨️ 🍗🍗 Crispy chicken drums 
Heat oven to 425. Place drums with salt,pepper, garlic powder, onion powder, paprika, olive oil,oregano I don’t measure this part I just add based on my personal preference 😅 mix well. Line drums on baking rack bake for 60min turning mid way. 🍗🍗 If u try this let me know what u think

Was craving a huge smoothie bowl and since I’m still trying to do more research regarding oatmeal and the upsetting amount of glyphosate (a possibly cancerous herbicide) that has been found in oats, this smoothie bowl had to do.. but who am I kidding, I probably would have gone for it either way. EXTREMELY refreshing on a hot summer day AND it’s not PACKED with sugar (unless you’re like me and want to stuff your bowl with more fruit toppings 😋🙌). .

Bourbon Chicken Meal Prep!! This one is so delicious and super simple! The chicken is left in the marinade over night and then ready to pop in the oven and bake to perfection!!

I have basically been on my ass the last few days fighting some sort of sinus infection/cold. Meal prep this week had to be simple but still good & flavorful food so I could, y’know, taste things. Go go gadget crockpot - basil coconut curry chicken. It all gets tossed in the crockpot, coconut rice goes in the rice cooker, and I sit my butt on the couch. 
Spinach, dried cranberries, sunflower kernels, and a super easy teriyaki vinaigrette so I have some greens.
