super easy mealprep 🍽 (and I think lunabear approves 😉 she stole some chicken 😭) I marinated the chicken in lemon, a little extra virgin olive oil (I use spray!!) & the Herbs de Provence overnight, seasoned the sweet potatoes & asparagus with the same. Then, I baked it all together in the over at 375F for 35 minutes! It came out PERFECT!👌 this seasoning blend is one of my favorites to use I really recommend trying it out ❤️ -

I wasn’t in the mood for plain broccoli today, so I hit it with a little 0 calories nacho cheese popcorn flavoring. This stuff is amazing. Sometimes I’ll mix it with Greek yogurt to make “cheese sauce”. It’s the little things like this that make me happy ☺️

Anyone else way more productive this time of year? Summer is chaos around here lol. I’m back to meal prepping. Got all of my veggies chopped up and put together and will just add the meat and liquid ingredients day of. Cuts way down on prep time and cooking day dishes. I also prepped veggies and hard boiled eggs for the week. And salad mixings. 🙌

Muffin making on repeat 👏🏼 so thrilled to finally create a muffin recipe from scratch that actually tastes good and looks good! .
CARROT CAKE MUFFINS 🥕🥕🥕
1/4 cup applesauce
2 T honey
2 T almond milk
1/2 tsp vanilla
1/2 cup finely chopped/shredded carrots
1 cup almond flour
1/2 tsp baking soda
1/2 tsp cinnamon
Pinch of sea salt
Mix wet ingredients first. Slowly stir in dry ingredients into wet mixture. Poor batter into muffin pan. Sprinkle muffins tops with more cinnamon. Bake at 350 degrees F for 15 minutes. Makes ~10 muffins.

Confession: I was totally unprepared for my day today. I woke up later and only had time to prep breakfast (thanks hubby!). I had no time to run home for food after teaching today so a quick stop to whole foods salad bar it is!
If you dont have a whole foods near you, your local market salad bar can sometimes be a great option for quick and health meals to stay on track. Fill your salad with different veggie options, plenty of protein, and there is usually an olive oil and balsalmic option!
- Chipotle salad with meat, veggie, gauc, and pico
- Applegate, boars head, or wellshire deli lunch meat with some organic berries and grab and go veggies

🍳 Sweet Potato Breakfast Cups
⏲ 10 mins Prep Time | Yields 9 Cups
It’s all about the breakfast this week! “Meal prepped” (on a Thursday 😂 hence the air quotes) these egg cups which are perfect to store in the fridge/freezer & eat throughout the week for a quick breakfast. It’s Thursday guys, so close to the weekend with Beyoncé 💃🏼
▫️1 small Sweet Potato
▫️4 Cage Free Eggs
▫️3 tbsp each for 5 Egg Whites
▫️1 tbsp Olive Oil
▫️Salt & Pepper
▫️Cherry Tomatoes & Avocado
▫️Onion & Spinach
Using a grater or mandolin sliced, shred the sweet potato. Then in a bowl, mix together olive oil, shredded cheese, salt & pepper. Divide into 9 muffin tin cups & press the mixture down to the bottom. Bake at 400 degrees for roughly 15 mins.
Meanwhile, chop up all your veggies. Once the sweet potato has baked, add in the desired veggies to each.
Now time to add in the eggs! I try not to eat too many whole eggs a week due to the yolk being high in cholesterol, so I used a combination of egg whites & whole eggs. So I’m random cups, I added the egg whites & in the rest, I cracked in a whole egg. Again, bake at 400 degrees for roughly 15 mins.
