Delicious smells in my kitchen right now! The bread is done and here is the recipe.
Whole wheat carrot bread
Makes 2 loaves and can easily be doubled
1 1/4 c. warm (not hot) water
2 tsps of active dry yeast
1/2 c. milk
2 large eggs
1 small or 1/2 large carrot peeled and cut into large chunks
1 tbsp brown sugar
2 tbsp vegetable oil
2 c. whole wheat flour
1/4 c. oatmeal
1tbsp ground flaxseed
2 c. white flour
2 tsps salt
Pour water into bowl of standing mixer, sprinkle yeast evenly over water. Let yeast do it’s thing for at least 5 minutes until dissolved, and in the meantime pull out the blender.
Add milk, eggs, carrot, sugar and oil to blender and purée.
Pour carrot mixture into bowl with yeast. Mix liquid mixture with a dough hook and then add whole wheat flour, mix and add remaining ingredients. Mix until a sloppy dough forms (about 1 minute). Let sit for 20 minutes for fluid to be absorbed.
Turn mixer on and mix on low for 7-8 minutes until mixture forms a soft doughy ball. Add more white flour if dough is sticking to sides of bowl.
Cover bowl with a clean tea towel and leave to rise in a warm space until doubled in size. This should take about an hour. Then punch down and knead on a floured surface for 2-3 minutes. Divide into 2 and roll into logs a bit shorter than the pan. Place in oiled bread pans or make buns on a cookie sheet or muffin tin. Cover with a tea towel again and leave to rise for 30 minutes. Turn oven to 425F. Just before putting bread in oven, make 4 slashes diagonally across the top of each loaf. This last step is crucial, first of all its fun and it helps the loaf to rise in the oven. Place in oven and decrease temp. to 375F and bake for 25-30 minutes or until golden brown and top is hard to touch. Cool on rack. Do your best to stop yourself from eating the whole loaf in one sitting!
