I forgot how good steel cut oats are 😍 I cooked 1/2 cup of sprouted steel cut oats in 1.5 cups almond milk, cinnamon, ground flax & 1/2 a mashed banana. The banana makes it thick n creamy & is a natural way to sweeten it. Cooked for 25 min over low heat, poured into a bowl & added organic blackberries & Brazil nut butter on top. Yum!

Yesterday Ritch and I had the BEST date day at our favorite place in Utah, @deervalleyresort {check out my stories}! They arranged an amazing day for us! Ritch enjoyed skiing while I cozied up by the fire in the lodge {because 🤰🏻}. We sat and talked for hours before enjoying the most beautiful dinner at the Mariposa restaurant. Every part of our day was absolutely perfect, and it was such a great little escape for us before this baby girl is in our arms in a few short weeks. We’re so grateful for Deer Valley’s hospitality, and our awesome friends who watched our kids do we could get away! 💕🏔⛷

Y’all know pizza is my obsession and @pupatellarva opened another location🍕in Innsbrook and I went for lunch last Friday and it was as good always 🤩 I got the pizza with the best name aka the Mimosa (Italian cream base with roasted corn🤤prosciutto and motz) and DJ got the Diavola (spicy salami, fresh motz and basil)

Who else never skips out on breakfast? We know we sure don’t! We love starting our day off on a healthy (and filling 😉) note by loading our plate with a balance of healthy fats, protein and carbs. These paleo waffles topped with our apple cinnamon bar did the trick!!

Hi everyone! I’m Mary, the natural foodie and Holistic Health Coach behind the posts.  I’ve never formally introduced myself here, so thought it was time to share a few random facts about me. •

I’m 33, living in Minneapolis, married to my best friend Ryan and mom to Emma & our angel Mac. •

We’re minimalist in the making that recently sold our home and downsizing to a duplex in our more desired neighborhood where we plan to rent out our top unit. It needed a major renovation, so we’re currently living at my parents house! •

I’ve been a vegetarian for 17 years, the thought of eating an animal just totally weirds me out (I do eat eggs and just try not to think about how that’s weird too).• I was known as ‘shy Mary’ for a majority of my life. I’m still pretty introverted until I’m comfortable with someone, but I’m always working on trying to get out of my comfort zone. •

When I was 17, I traveled to Egypt with my family where we meditated inside one of the Great Pyramids, and then went on to spend a week at Sai Baba’s Ashram in India.  It was a once in a lifetime experience that I will never forget! •

I was introduced to the principles of #acourseinmiracles when I was 13, I am forever grateful for learning such valuable teachings at such a young age. •

Almond butter, @hukitchen chocolate & @gtskombucha trilogy kombucha is the way to my heart. •

I’m obsessed with @barre3 and love how it’s equally mentally & physically rewarding.  I’m honored to be the @barre3edina ambassador. •

welcome to the magical world of the MAPLE CARAMEL BUCKEYE. or bullseye? 🎯 i’m a first time buckeye maker over here, and i don’t know what i was waiting for bc these bad boys are balls of heaven! 😂 so go make them stat:
1 jar @georgiagrinders maple caramel almond butter (12 oz)
1/4 cup @themapleguild maple syrup 
1/4 cup melted coconut oil 
1/2 cup almond flour
splash of vanilla extract 
pinch of salt 😉 
1 1/2 cups @enjoylifefoods chocolate chips
in a medium bowl, whisk together the almond butter, maple syrup, coconut oil, and vanilla. i like to use a hand beater to make sure everything creams together well. line a baking sheet with parchment and form balls. freeze for one hour. remove from freezer. melt chocolate in microwave in 30 second intervals until melted. dip each ball, 2/3 of the way. place back on parchment paper. repeat. freeze for 30 min and EAT. get ready to die bc your tastebuds are gonna be on 🔥

Thank goodness for prepping some baked @traderjoes gnocchi this week and for this CILANTRO-SESAME-CASHEW pesto and HONEY SOY glazed salmon. If you saw my stories, I’m working on a blog post compiling all of my sauces and pasta sauces...damn there’s A LOT. So why not add one more 🙈 Recipe below. Happy Wednesday all, hope you’re having a fantastic day. •

Deets: @salmonandsable wild salmon glazed in honey soy (coat @salmonandsable in a glaze made of 2 tablespoons of honey and 1 tablespoon of tamari soy sauce and sear in 1 tablespoon of oil on medium heat for 3 minutes per side.) Greens, sautéed sugar snap pear in sesame oil/salt/pepper, watermelon radish, cauliflower gnocchi baked on 450 tossed in oil and using cast iron shaking every few mins for about 15 mins until crispy. Pesto: 1 head cilantro, 2 tablespoons olive oil, 1 tablespoon sesame oil, 1 tablespoon cashew butter, 2 cloves garlic, 1 tablespoon coconut aminos, 2 tablespoons lime juice, salt and pepper. Process until smooth (I used my @mealthy immersion blender).

Cookie Dough Protein Bites
2 C Vanilla Life Shake Protein
1.5 Cups Oats

Steel cut oats don’t have to be boring or taste like plaster (sorry Mom 😬🤭). And they certainly don’t always have to be sweet. In fact try adding some shredded cheddar, pepper and scallions to a batch and serve them with an egg or some roasted vegetables or a grilled chicken breast. Or you can do like we did today and make a yummy play on shrimp and grits 🙌
Either way, don’t be afraid to think out of the box. There are a lot more uses for this incredibly healthy food than we realize!

Cheddar Chive Steel Cut Oats with Spicy Shrimp and Bacon

Bring 4 cups of water to a boil (or you use 2 cups of milk and 2 cups of water). Add 1 cup of oats and reduce to simmer. Simmer uncovered for 30-35 minutes. Remove from heat and add salt and pepper to taste, 1 cup shredded cheddar and 1/2 cup chopped scallions. Optional to add 1/4 tsp red chili flakes. Served with cooked and chopped bacon and spicy sautéed shrimp, which I seasoned with salt, pepper, smoked paprika, cumin and garlic powder and cooked for 2-3 minutes in each side. (You can also cook the shrimp in the bacon drippings. :

At the beginning of the month, a client told me his office was doing a “weight loss challenge” leading up to Christmas. Meaning at the end of the month, the individual who lost the most weight (as a % of starting weight) would win $1000 🙈 thankfully, my client was privy enough to decline entering (he was actually the ONLY person in the office to not participate). I don’t think “weight loss” is a dirty word at all, but here is my opinion on why a weight loss scheme that is financially incentivized is not a good idea....
1. People will do anything to win that 1k prize. This is not a lifestyle change motivated by health. This is a competition to see who can loose the most weight for money. This leads to extreme behaviors, such as starvation and intentional dehydration, to produce the desired number on the scale 
2. The changes made during this time are most likely not going to stick at the start of the year. The challenge has an “end date”, meaning at the end of the 31 days, if they did not win the prize, they will most likely revert to their previous eating habits. This might also lead to bingeing after the competition is over 
3. December is a month that tends to have a higher number of social gatherings, usually centered around food and booze with friends and family. Someone trying to compete in a weight loss competition may sacrifice their social life to drop the weight. Skipping out on evenings with friends and family due to fear of food/drinks is not healthy. This competition can actually instill food phobias and foster a negative relationship with food 
4. Weight is not a measure of health. I have mentioned this many times on my page, but the number on the scale does not dictate whether you are healthy or not. The lifestyle you live indicates health - not a number. .
I actually like the idea of a community coming together and focusing on health, encouraging each other and supporting one another. BUT, that is not what this office is doing. Instead, they are putting all the focus on a single variable (weight) and not taking anything else into consideration. And with such a prize as $1K, people will do extreme things to win (cough cough biggest loser 🙈)

A little bit creamy, a little bit tangy, tender chicken and flavorful asparagus. This one dish recipe has all the right flavors and bakes up into a perfect weeknight dinner!

Ingredients

2 lbs boneless, skinless chicken breast, thin

1 lb thin asparagus stalks, woody stem broken off

1/2 cup freshly grated parmesan cheese

1/4 cup fresh lemon juice

3 cloves fresh garlic, pressed

1 tsp dijon mustard

1/4 tsp salt

1/4 tsp pepper

1 tbsp olive oil

1/2 cup sour cream or Greek yogurt

Garnish (optional)

Italian Parsley, chopped

Instructions

Preheat the oven to 375˚F

In a small bowl whisk together the lemon juice, garlic, mustard, salt, pepper olive oil and sour cream

Chop the asparagus into bite sized pieces. Place the chicken breasts flat in a single layer in a large casserole dish. Place the asparagus over the chicken.  Pour the lemon dressing over the whole dish. Top with parmesan cheese

Bake uncovered for 40-50 minutes or until the chicken is cooked through (internal temperature of 165˚F). If the cheese starts to become brown, loosely cover with foil for the remaining cook time

Garnish with parsley if desired.  Enjoy!

Notes

You can cut the chicken in half, chunks, or use chicken tenderloins in lieu of full chicken breasts to make serving easier. Cooking time may be reduced

Leftovers can be stored in an airtight container for 3-4 days in the refrigerator or in the freezer for up to a month.

i’m going to go ahead and say it. i freakin’ love lasagna!!! i mean, how could you not love thick, chewy semolina noodles (i don’t care what people say about white flour, i like my pasta!), rich and savory marinara, and of course, the soft, creamy, velvety cheese. it was my first time ever making and eating a lasagna and oh boy this 🥫 VEGAN SPINACH TOFU RICOTTA LASAGNA 🥫 has become my go to food when i’m feeling like i need a big italian hug. i fell in love with the dairy free cheesiness and comfort food feel. be warned, you’ll probably have a moment when you ask yourself, wait, how is this vegan? like, how? not even joking 😁// blame it on the tofu, mmmkay? tofu ricotta, that is. i’ll admit, i haven’t always been tofu’s biggest fan. it tastes bland and needs a lot of help in the flavour department. it has a strange texture. it takes an extra 30 minutes to prepare 😩 and it’s slightly processed, which i try to avoid. but… let me tell you a little secret. this recipe has since washed away every single one of my tofu complaints. the extra 30 minutes of prep? doesn’t even phase me. the bland taste? gone with all the fresh, savoury ingredients being mixed in. the strange texture? what strange texture? gone because it was prepared right. the fact that its slightly processed? don’t even care because this is good vegan comfort food and we all need it from time to time. this recipe is so worth all of it 🙌🏻// best. damn. lasagna. it really, really is. and i didn’t name it that way, omma did. i actually hesitated because it’s such a trendy thing to do, to refer to a recipe as the best ever, or ultimate, or whatever. but this. this is vegan lasagna nirvana. not only that, but omnivores love it too 😋! i also find the process of making lasagna extremely relaxing. i love working on the sauces and fillings and carefully assembling them all in a casserole dish before baking. i’ve served it to three people so far, none of them vegan eaters, and all of them have given this recipe rave reviews 👍🏻 (recipe in comments)

I’ve been so blessed with hubby taking 2 weeks of paternity leave, to stay at home and helping me out when our baby got discharged from the hospital 2 weeks ago, so as a ‘thank you’ gesture I made him one of his favourite dishes - Cơm Tấm Sườn Chả Trứng - I soft-boiled the eggs instead of frying for a healthier option 🥚🍳

Made some comfort food for lunch today 🤩it took about 15 min. It was well deserved after a good gym sesh and lots of grocery store shopping. I had a nice relaxing weekend and needed it (especially this time of year when the social calendar gets packed🎄!)

Creamy Spinach Mushroom Pasta to make those weeknight dinners nothing short of delicious. If you’re not one to meal prep at the start of the week and prefer to be a little spontaneous, ideally a quick and nutritious dinner is what you want when you get home from work. Here’s what you’ll need:
⠀⠀⠀⠀⠀⠀
Ingredients:
- 25g dried mushrooms
- Whichever type of pasta you wish to use but here I used wholewheat spelt fusilli
- 100g chestnut mushrooms
- 1 tbsp olive oil
- 1 medium white onion
- 2 large cloves garlic
- 30-50ml single soy cream
- 2 tbsp free from cream cheese
- 30-50g spinach
- Salt & Pepper
⠀⠀⠀⠀⠀⠀
Instructions:
- Leave the dried mushrooms to soak in boiling to water and cover for about 20-30 minutes
- Whilst the mushrooms are soaking, put the pasta on to boil and cook until it to your liking
- Add olive oil to a medium-high heat and cook a finely chopped onion until it starts to soften, adding in minced garlic and chopped portobello mushrooms. Season to taste.
- Add the chopped now full hydrated mushrooms to the pan and give a good stir. Leave to cook for 5-10 minutes and follow by adding the cream and cream cheese. Lower the fire so the cream does not boil and further season to taste
- Follow on by adding the pasta to the pan and gently mix this in and finish by adding fresh spinach in which will start to gently wilt from the heat of the food, which’ll now be ready to serve. Should be enough for at least 2-3 servings depending on how much pasta you cook.

Salt. This thing I used to be so terrified of. I wouldn’t eat anything that had more than 0mg of sodium listed on the nutrition facts (besides the natural sodium found in produce). Salt can lead you to retain fluids, which can lead to bloating, which would obviously make me gain weight aka get fat. How crazy was I?! I hated eating out because I was afraid of eating too much salt and when I had to, I would follow it by chugging several glasses of water to dilute the salt. This behavior eventually lead me to the hospital because my Sodium and Potassium levels were so low, they thought I’d have a seizure. Looking back, how did I make a stupid little thing like salt become so big? Food obsessing takes up way too much headspace and is exhausting. I honestly think that the stress of stressing about food leads to more weight gain than not giving a fuck and listening to your body and eating intuitively 🤘🏻💕

- 50gr de fromage blanc
- 2 blancs d’œufs

- 1/2 cuillère de bicarbonate
- 50gr de framboises surgelées

That said, I’m pumped to get involved with an organization that encourages people to get in the kitchen to save money and eat better!

I think a balanced meal looks like this... ✅ plenty of leafy greens (arugula)
✅ lots of veggies (roasted cauli, eggplant, and brussels)
✅ protein (soft boiled eggs, hummus)
✅ healthy fats (avocado)
✅ a few wholesome carbs (roasted sweet p)
✅ a touch of fruit (pomegranate)

Everyone has their own opinions, but I think we can all agree that spending more time in the kitchen prepping your own food will lead to better, healthier meals! 🙌

Skillet Sunday 🍳 This clean out the fridge skillet hit the spot flavor-wise, was easy to make {instructions below} AND used up all the random ingredients I had left in my fridge before I go grocery shopping today. All you need is eggs, tomato sauce, oil, some veggies. How I did it👇

Heat avocado oil in a small skillet, add some chopped veggies. I used celery & red onion. Sautée until fragrant and slightly browned (2-3 minutes). Season with salt, pepper, garlic powder. Then add tomato sauce and greens if using. I used about 3/4 cup @raoshomemade tomato sauce (but I just eye balled so you can do the same). Cook for another minute or 2 until everything starts to sizzle then make a little hole(s) for your egg(s). I cracked 1 @vitalfarms egg into a small bowl and poured it into the hole and waited until the whites were opaque. Sprinkle with some @traderjoes EBTB seasoning, @kitehillfoods “ricotta” and add a slice of your favorite toast to sop it all up, I used @simplekneads_gf gluten-free sourdough.

The beauty of this recipe is that it’s flexible, so you can adjust it to what you have on hand. It also fits my PFFP formula for a powerhouse meal. If you want a more exact shakshuka recipe, check out @veggiesandchocolate cookbook, her recipe is very easy to follow but has more precise instructions than the ones I eyeballed above. .

Perfect snack for all the family to share and they fit nicely in our @nomnomkids small and large snack bags.

I love scotch eggs but I like festive spiced ones even more, the allspice and sage in this recipe really compliment the sausage meat nicely.
. 
Now, I cheated a bit here and used our airfryer to make them super crispy, everyone loves a cheat to help you in the kitchen, right?! any other airfryer lovers out there?
. 
I am a huge fan, I find them a great healthy alternative to deep frying food but tastes just as naughty.
. 
If you don't have one I recommend baking the scotch eggs at 200 degrees for 30 minutes, cooking times may vary depending on layer of sausage meat. . 
Ingredients.
🥚5 medium eggs.
🥚8 sausages, I opted for morrisons own reduced fat.
🥚1/2 tsp sage.
🥚1 tsp oinon granules.
🥚1/2 tsp all spice.
🥚4 slices of wholemeal bread.
🥚1 additional egg whisked together.
🥚Plain flour. .
.
Method.
. 
1)boil the eggs, I boiled for 8 minutes to keep the yoke from drying out too much.
. 
2)add 4 slices of wholemeal bread straight on to the oven shelf, cook low to dry the bread out, should take around 15 to 20 mins, transfer to a food bag and beat with a rolling pin until the bread turns to crumbs.
. 
2)whilst the bread and the eggs are cooking  remove the sausage meat from the sausage skins into a bowl.
. 
3)add the onion granules, allspice and sage and mix together, I found it mixed better with my hands.
. 
4)set out the sausage meat, flour, whisked egg and bread crumbs in to separate bowls.
. 
5)once the eggs are pealed coat each egg one at a time with a layer of sausage meat, whisked egg, flour then breadcrumbs and so on.
. 
6)either cook in the oven for around 30 minutes or the airfryer for 12 to15 minutes, cut one in half to check the sausage meat is cooked before eating. .

Good morning 👋🏻 Nothing makes me happier than a big bowl of chia pudding plus topping 😋 So for breakfast I have made myself this yummy bowl of chia pudding topped with banana, apple, granola, a cookie, white chocolate, cocoa nibs, peanut butter and cinnamon.

Made some tasty borekas filled with eggplant and peppers last week from the #israelisoulcookbook from @mikesolomonov. Even though there were about 40 of them, @adamjonady refused to take them to work bc he claimed he would eat every last one. It was a commitment, he ultimately lost.

First day of summer and it's.... RAINING☔😲 Tomorrow were gonna go get a Christmas tree (we cut one down off the side of the road) and I'm so excited🎄 I love the smell of Christmas trees,  and the atmosphere of the holidays.... It's my favourite time of the year🎉🎁😇

As for this pizza, it's one of my chickpea pizzas bases* with tomato sauce, mushrooms, roast pumpkin, tomato, cheese and fresh herbs😋

*to make the pizza base combine 50g chickpea flour with 1 tsp baking powder, salt, and any desired herbs and spices (eg. cumin, dried rosemary, garlic/onion powder, etc).mix together then add 1/2 cup minus 5 tsp water. Heat a approx 24cm nonstick pan with a little oil and pour the chickpea mixture in (it should sizzle) spread evenly over the pan and cook until the bottom is brown crispy. Transfer to the oven and cook at 175° until slightly dried out on the top. Top with desired topping and bake again in the oven.
