Let’s break the myth that you can’t have carbs after 6pm 😜
.
💫 First off here’s a reminder of what you need to hit your goal: 
Calorie deficit - to lose weight
Calorie surplus - to gain weight. 
Calorie maintenance - to maintain weight.
.
So at the end of the day if you’re hitting your calorie goals, primarily from quality nitritious food (some fun too) that’s what matters most!
.
🥔 Second off there are some benefits to having some carbs at night: 
1 - Increase serotonin levels: Carbs trigger insulin which reduces amino acid levels so that tryptophan can cross the blood brain barrier & get converted to serotonin. When serotonin is elevated at night, it enables a restful sleep.
.
2 - Lowers stress levels: Carbs reduce cortisol levels aka the stress hormone so having them at night can help put you in more a relaxed state
.
3 - A 2011 study showed that over a 6 month period the group that ate carbs at dinner/night had greater weight loss, abdominal circumference, and body fat mass reductions

Now I’m not saying you should definitely eat your carbs at night! You should experiment, find what time feels right for you & as long as you’re hitting your calorie goals, you’re on the right path ❤️ Source:

On a more exciting note, my baby brother Luke surprised me this weekend in Boston and I can’t tell you how happy it made me! Cason asked me to go out for a “date night” Friday and right after we were seated he waltzed right into the restaurant. I of course screamed and cried and really annoyed the people sitting next to us and probably the entire restaurant but I just couldn’t hold my excitement in 😭

Chocolate orange crunch cups ✨ A chewy, crunchy base topped with rich dark chocolate and a kiss of refreshing orange zest. My craving of the moment 💙. No gluten, dairy, eggs, soy, or refined sugars. You'd never guess these treats were loaded with nourishing ingredients, fiber, and natural vitamins. Here's how to make them yourself...
Ingredients:
- 1/2 cup pistachio butter
- 1 cup dried fruit (figs/dates)
- 1 + 3/4 cup puffed millet or quinoa
- 1/4 cup chocolate chips
- 2 TB orange juice
- 1 tsp maca (optional)
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Method
Combine all ingredients with a food processor, using only 1/2 cup of the puffed millet/quinoa. Once combined, add in the remaining millet/quinoa by hand. Press the mixture into a lined muffin tin. For the topping, I used a combination of melted chocolate chips, coconut oil, and orange juice. Pour the melted topping on top of each base and dust some extra orange zest on top. Refrigerate until hard and enjoy. These also store very well in the freezer.

WHAT YOU NEED:
🍁 1 cup old-fashioned rolled oats, 1 and 3/4 cup Ripple Unsweetened Vanilla Milk, 1/4 cup pumpkin puree, 1/2 tsp pure vanilla extract, 1 tsp ceylon cinnamon plus more for topping, 1/4 tsp ground nutmeg, 1/4 cup chopped/whole pecans and 1/4 cup or so maple syrup or agave nectar.
🍁 Optional: more milk as needed for topping/cooling.

HOW YOU MAKE IT:
🍁 In a medium-sized saucepan, combine your oats and milk. Mix together and bring to a boil; reduce heat and simmer, stirring occasionally, approximately 4- 5 minutes.
🍁 Next, stir in pumpkin puree, vanilla, cinnamon and nutmeg until well combined and warmed.
🍁 Serve immediately, dividing between 3- 4 bowls, adding a splash or two of milk as desired. Then, top with pecans, syrup/nectar and another dash of cinnamon if desired.

• 1/3 cup sesame seeds
• 1/3 cup sunflower seeds
• 1/3 cup toasted coconut
• 2 tsp. honey
• 1 1/2 tsp. vanilla extract .

You’re a human being, you only live once and when you look around life is pretty wonderful, so eat the goddam chocolate cupcake •
Although it is hard to push past the anorexic rules and thoughts that have been planted in my brain for many years, I don’t want to look back on my life and think ‘I could have eaten that but I didn’t because I was scared of x, y & z’ •
I don’t want to refuse a treat for afternoon tea on a girls day with my mum, I don’t want to pass on experiencing new cultural foods while traveling the world, I don’t want to deprive my body of not only nutrition but also the happiness and joy food brings us all. 
Basically, I don’t want to reduce my life to stay within the limits of my eating disorder because you know what, the limits continue to get smaller and smaller until you’re no longer living. 
If there is anything I have learnt throughout my recovery it is that fear thrives in a place of inaction. To overcome your anxiety you must do it one small step at a time. If you wait for ‘tomorrow’ it will never come and before you know it, tomorrow is the end of your life! 
With that said, yesterday afternoon I enjoyed this chocolate cupcake along with a peppermint tea from @vegbarhobart for afternoon tea! It was absolutely incredible- the best cupcake I’ve ever had in fact! 
I’m so grateful I had this because this is what life is all about 😌

Just had such a fun morning blending up smoothies for everyone who came out to Hip Hop for Breast Cancer Awareness, hosted by @ryu_apparel on Abbot Kinney. Thanks to the amazing @kylevandemark and @bittyrae for leading an awesome class, and @fitdesignermom for bringing us all together. On the menu was this Strawberry Coconut Smoothie, a mix of 100% plant-based ingredients with anti-inflammatory and antioxidant superpowers. Here’s the recipe if you’d like to try it too!

🍓🥥Strawberry Coconut Smoothie🥥🍓
~
1 cup unsweetened coconut milk
1 serving vanilla @vega_team Vega Sport Performance Protein
1 cup frozen organic strawberries
1/2 frozen banana
1 tsp chopped fresh ginger
1 tsp each @navitasorganics hemp + chia seeds
1/4 cup organic microgreens
1 serving superfood booster powder of choice (optional)
optional garnishes: flaked toasted coconut and/or grain-free granola

Combine all ingredients in a blender, then blend until completely smooth. Add ice to thicken if needed. Pour, garnish and enjoy! 🍌🍓🥥

And, if you’ve followed me for more than 2 hours, you know I will take any occasion to make a dish into a giant salad. These breakfast tacos are one of my favorite ways to eat all of my favorite veggies, and even green peppers (not usually my fav). Breakfast tacos were my go to hangover food in college so these hit the spot!

When you can’t decide between lunch and breakfast... breakfast salad? 🤔🥗🥚🍅 The sun is finally out in Dallas today 🌞 so I kept this fresh and light to go with the theme. I’d just like to note that I boiled these eggs the usual bring-to-boil-then-rest way, and peeling them was a B**CH. Never again. I will always use the pressure cooker. Quick and the easiest peeling EVER.
When you can’t decide between lunch and breakfast... breakfast salad? 🤔🥗🥚🍅 The sun is finally out in Dallas today 🌞 so I kept this fresh and light to go with the theme. Bed of arugula drizzled with lemon, @cholulahotsauce, and s+p. Topped with @barrelcreekprovisions sauerkraut, @applegate turkey sausage, soft boiled eggs, tomatoes, and EBTB seasoning. With a seasonal apple on the side, of course. 🍎 • • • I’d just like to note that I boiled these eggs the usual bring-to-boil-then-rest way, and peeling them was a B**CH. Never again. I will always use the pressure cooker. Quick and the easiest peeling EVER.

Weeknights are pretty crazy come dinnertime, but lately, our weekends are even busier. The name of the game for me is EASY. Honestly, anything that gives me more time to do all the things weekends are about - hikes, naps, holding my babies close - is going to be a winner is my book. SHEETPAN GINGER SHRIMP and veggies comes together in about 12 minutes, total. I’ll be spending my extra time (finally) getting the garlic planted! What are your plans today? ⠀

Sheetpan Ginger Shrimp & Veggies (Whole30)⠀
Ingredients:⠀
1 lb. large shrimp, raw, peeled & deveined⠀
1 lb. snow peas⠀
1 red bell pepper, thinly sliced⠀
1 Tbsp. olive oil⠀
1 tsp. sesame oil⠀
1/2 tsp. minced ginger⠀
2-3 Tbsp. coconut aminos⠀
1/2 tsp salt⠀
1/8 tsp. garlic powder⠀
1/2 tsp. sesame seeds⠀
1 lime, sliced⠀
⠀
Preheat the oven to 425. If your shrimp are frozen, place them in a colander and run cold water over it for 5-10 minutes or until thawed. Pat dry with a paper towel. Mix the oils, coconut aminos, and seasonings in a bowl, then add the shrimp and veggies. Toss to coat, then spread on a parchment lined baking sheet. Bake for 10 minutes, turning once halfway through. Sprinkle with sesame seeds and squeeze lime on top.⠀

Brunch at Fayuca was everything I expected and more. Amazingly delicious, the flavours, the ingredients, everything was incredible!

I ordered the avocado toast- no toast, but SOPES delicious corn sopes that tastes like home 🇲🇽 the avocado was so fluffy and creamy, the whole dish was extraordinary. I almost ordered another one. But I was like ok come on, and I had a client to get to so I decently only ate one dish like a normal person. (And good thing because I was full)
Jugo verde! It’s my favorite juice, you see it everywhere in Mexico. I ordered it here and ahhhh another dose of home. And very nutritious I have to say.
Their menu is so different but also so accesible (if you have any dietary restrictions but still want to eat delicious), and their salsas hit the spot just right.

I was dreaming about this bowl while i was at work yesterday. This afternoon, I got a chance to treat myself! It is probably my top 3 fave oatmeal bowls I have ever made ( and I have a lot of oatmeal bowls). ⠀
I’m using up left over oats banana bread crumbs. Ugh. This entire combo is so good I want to slap it 😂😂. Think of a short cake, but wit bread crumbs and a sweet mango flavoring: yeah, exactly. That’s what this tastes like! MAKE IT! 🙌🏾🙌🏾⠀

Ingredients:⠀
~ 1/3 cup rolled oats⠀
~ 1/3 cup water⠀
~ 1/2 cup flax milk (or nut milk of choice)⠀
~ 1 pouch @sproutliving pea protein powder (or about one serving of your fave protein powder)⠀
~ 1/2 cup diced fresh mangos 😋⠀
⠀
Pour everything (except the protein powder) in a small pot and cook on high for until thickened. Turn heat off and then stir in protein powder! Mix very well! Done!⠀

Top with: ⠀
Banana bread crumbs (or crumb bread, or muffin- anything of that consistency), add some coconut flakes and a dash of coconut shuga to top! ⠀

Juiciest, crunchiest chicken cutlets ever and they're BAKED and GLUTEN-FREE. 🤤 This voodoo magic is all thanks to the roasted chickpea crumb coating.  You have to try it to believe it!  Done in less than 30 minutes (chicken takes a mere 15 min to bake). I just made this and without fail, family goes kuku-bananas 😋

One of my favorite soups my mom made growing up was 🌽CORN CHOWDER 🌽.
I have so many memories of being at the pumpkin patches in October and then coming home to a big bowl of chowder. So cozy! .
I decided I definitely wanted to keep this tradition alive in my own family so recreated her chowder to make it dairy free. 👌

The family is digging it and this soup is giving me all the feels! Nothing better than nostalgic foods that remind us of our childhood. 💗

🌽 CORN CHOWDER 🌽
2 TBL of olive oil
1/2 large white onion, chopped
4 cloves of garlic, minced
2 medium carrotts, chopped
1 jalepeno, diced (optional)
1 red bell pepper, chopped
8 medium red or gold potatoes, quartered
1 bag of @traderjoes frozen organic corn or 3 ears of corn (kernels off)
3/4 to 1 carton of broth, depending on if you like less liquids or more. (I used chx but veggie would work also)
2 cups of unsweetened plain almond milk
1 TBL nutritional yeast (optional)
2 tsp. Garlic powder
2/3 tsp of smoked paprika
Sea salt and ground pepper
1 tap fresh thyme
1 bay leaf
Chopped green onions or chives for garnish

Method: 
Heat oil in large pot on medium and add carrot, onion and garlic • stir and add garlic powder, paprika, thyme, bay leaf and salt & pepper • saute until onion is translucent • add bell pepper, jalapeno, potatoes and corn • add all liquids and bring to a gentle boil • reduce to low medium and add Nutritional yeast • cook for about an hour until potatoes are tender • for a creamier consistency, take a few ladelfuls out and blend in high speed blender and add back in • garnish with chopped chives or green onions •

Brussels Sprouts with Lemon Turmeric Sauce and Pomegranate Seeds!! Put a little flair to the usual roasted brussels, the pomegranate seeds add in some sweetness and make it a great side or dish to bring to a friends🤗 
dEaTs:
Preheat oven to 425. Toss halved brussels on a sheet pan in olive oil, salt, pepper. Roast until browned about 20-25 minutes. *When they’re cooking.. squeeze about 3 tablespoons of lemon juice in a small bowl with 1 tsp of garlic, 1 tsp of turmeric, 3 tbs of cold water and about 2 tbs olive oil and a pinch of sea salt - mix all through. *Once brussels are done spread on a dish and drizzle your sauce and scatter the pomegranate seeds! enjoy the crunchy and sweet mix of goodness😋
