Granola can be SO SIMPLE & you most likely already have the necessary ingredients!
• • •
Look through your pantry for a combination of the following ingredients, which can be combined or swapped out within each category or “line”.
• • •
I generally try to do a combination of the seeds for a power-punch of nutrition & will do 1/2 cup of a “wet” sweetener + 1/4 cup of a dry sweetener.  BUT if you only have one of those - then that will totally work!
• • •
Preheat oven to 300* F & mix the following in a large bowl:

* 1 cup total of cashews, almonds, walnuts, macadamia nuts &/or pecans
* 1 cup total of pumpkin seeds, sunflower seeds, chia seeds &/or hemp seeds
* 1/2 cup Unsweetened coconut flakes
* 1 Tbsp Cinnamon or 🎃 🥧 spice
* 1 tsp Sea salt

In a saucepan, slowly warm sweeteners, nut butter & oil/butter, stirring occasionally until combined. Remove from heat and add vanilla.

* 3/4 cup Coconut palm sugar, maple syrup or honey (or a combination)
* 1/4 cup Nut butter
* 1/2 cup Extra virgin coconut oil, ghee or butter
* 1 tsp Vanilla extract

Pour wet into dry ingredients and stir until evenly coated. Spread out evenly onto a cookie lined with parchment (not necessary but helps with cleanup).

Place on the middle rack in oven and bake for 25 minutes, stirring every ten minutes to evenly bake.
Remove. Cool. Eat!

If you’re jonesing for some Baskin Robbins, this will absolutely satisfy the craving and it’s all WHOLE FOOD & PALEO ingredients.

No, it’s not necessarily “low-carb”, but it’s definitely LOWER CARB!
• • •
For 1 serving:

🍦 1 Frozen 🍌
🍦 A splash or 2 of 🥛 (almond, coconut, cream, etc.)
• • .•
Your flavors &/or toppings of choice (mix & match, if you so choose!):
🍦 1 Tbsp. Nut butter
🍦 1-2 tsp. Cocoa
🍦 1 Tbsp. Dark chocolate chips
🍦 Toasted (unsweetened) coconut
🍦 1/4 cup frozen fruit
🍦 1/4 tsp vanilla or any other flavoring
🍦 1 Tbsp chopped nuts
🍦 A drizzle of maple syrup

1. Mix 🍌 & 🥛 in a blender or food processor.
2. Start with a splash of milk & add until you get your desired consistency.
3. Add flavorings & blend.

I’m embarrassed to tell you how much I deliberated in posting that video of me singing (HUGE step out of my zone!)...I’m still unsure about it. WHY?

At the ❤️ of the answer is why we struggle to move forward & find ourselves stuck. We’re afraid of losing something. But...

* Who cares if I don’t sing like Sia (wish I did)?
* Who cares if you fumble with the weights at the gym?
* Who’s really judging you (other than yourself) if you imperfectly make a new recipe?
* Why does it matter if you’re trying, yet again, to get your life “in order”? AREN’T WE ALL????

For EVERY act of bravery & every shift of our edges, we peel off another layer that’s holding us back.

Best quality and taste, cheaper than the supermarket. @toothcrushco - 2 bamboo toothbrushes a month. @smartasstp 48 rolls of toilet paper 6 weekly. These are all NZ companies that are doing their bit for sustainability too so you’re supporting local business buying from them. All the packaging is either recyclable (cardboard) or compostable (the loo paper wrap). And it means I never have to worry about running out!!

* Can of black beans (or any bean - leave out if you have issues with legumes)
* Chopped onion & bell 🌶 (use ‘em before they go bad!)
* 4 cups Stock or broth
* 🧂 & pepper
* ~1 tsp or so Chili powder
* ~1/2-1 tsp or so Cumin
* Extras: 🥑 or guacamole; sour cream; shredded 🧀; tortilla chips if you don’t have an issue with 🌽

I sautéed my onions & bell peps a little and then dumped everything in except the toppings & cooked til it simmered!

Bulk cooking, meal prep 101

I personally am not a meal prep for the week kind of cook. I prefer to cook fresh for that day and make a larger amount to allow for 2+ left over meals. These meals are largely eaten for lunch the following day. It makes it easy to keep balance in the meal. By balance I mean adequate protein, carbs and veg/ plant matter for that evenings meal and in the left overs portions.

There are many reasons people meal prep for every meal everyday or 4+ days of the week. Time management, dislike of cooking are possibly the top two. For others it is controlling what you eat - which always rings alam bells for me (disordered eating / orthorexia). My main gripe with it is NOBODY needs the same amount of energy or balance of macros (carb/protein/ fat) each day so making the same meal just doesn’t match what is happening within each different day. 
If you do bulk cook for the week here are my tips or things to keep in mind...... 1. Cook more than one type of meal so you still enjoy a variety of flavours across the week - keep enjoyment of food a priority.

2. Be flexible with how you use the meals you have prepped. If you only did a source of protein  and veg then make sure to add carbs from fruit, grains or dairy as sides or dessert. (Carb volume should match your activity level). 3. Veggies, veggies, veggies! Colour variety and 5 serves per day so make sure main meals have half a plate of veg OR add salad to your meal as you reheat / plate up. 
4. Cool, store and reheat your meals safely. Bugs can grow quickly especially if a meal has a reasonably neutral pH, moisture content or protein source. 5-60 degrees C is the bug growing range! To reheat your meal make sure it reaches 72 degrees for at least min 2 1/2 minutes. Be careful of hot pockets / cold pockets when reheating in the microwave, stir regularly.

5. If you are immune compromised be very careful processing through temperatures as you cook, cool and reheat. I’d often recommend avoiding this style of meal prep in these groups. Pregnant, elderly, those w Diabetes or having oncological treatments are some of the high risk groups.

Monday’s are meat free - eg quiche, Mac n cheese, fried rice 
Tuesday’s are for Tacos 🌮 
Wednesday’s - our little girls (6&9) choose a meal and help cook
Thursday’s - Teenagers (14&16) choose a meal and cook for me! 😉 
Friday’s - seafood night eg fish and chips
Saturday’s - are always homemade pizza 🍕 and movie night as a family 
Sunday’s - it’s summer time so BBQ & salad, kebabs & salad, burgers 🍔 
So far this week everyone is excited by the new meal plan and there’s been no arguments at dinner with negotiations over how much they have to eat 🙌 
Hoping this brings the food bill down too!
