It’s cream and it’s dreamy. It’s pumpkin spiced themey. The @eatenlightened #pintparty *snap snap* 🎶 DIY seasonal pint was a cold brew coffee pint topped with @creativesnacksco pumpkin yogurt coated pretzel + @littlesecretsco pumpkin spice candies which I’m in love with and a swizzle of @nunaturals to top it off. And I’m just realizing I forgot the whipped cream 🤦♀️ #rookiemistake
Anyway, happy Sunday! I went Apple picking and had a nice “cold” run this morning. It’s kinda strange how so many things can happen in a day, so many emotions, etc. It’s easy to take the good moments for granted and focus on the bad which is why gratitude is so important. Three things today I’m grateful for: sunshine ☀️ family 👨👩👧 and God’s loving kindness ❤️ What are you grateful for today? (Besides ice cream duh)

moving to New Zealand, it only felt natural for me to create a KIWI based smoothie now that I’m officially/sort of a kiwi 🌿🙊🥝 getting back into routine, I’m including lots of brain boosting foods in my diet to help me stay focused, happy and clear-minded. Brain health is so overlooked yet SO important, so let’s break it down today with an EPIC yum smoothie recipe
1 frozen banana
1 kiwi, peeled if not organic
3 handfuls baby spinach
1 cup unsweetened coconut milk
1 handful of ice
2 tbsp @nutiva organic MCT powder
1 tbsp rolled oats
2 tsp spirulina
Banana & kiwis contain properties that work with the brain to help to support mood regulation, spinach helps to reduce inflammation, coconut milk and spirulina are great sources of healthy fats which are the perfect brain food, oats help improve mood and MCT powder is my new BFF (more on that below👇🏼) WHY MCT POWDER?

One of those frantic 🏃♀️👩🏻💻 🚗 Mondays ahead of me, and as I was rushing to get lunches ready and teeth brushed this morning, I quickly through this quick grab n’ go brekkie together. Currently parked outside kindy, taking 10 to eat it in peace before racing to my desk. Never throw away leftover porridge and this yum breakfast will be super quick and easy for you too.
Leftover porridge 🥣 mixed with natural Greek yoghurt, goji berries, shredded coconut 🥥 and ground cinnamon, layered with blueberries 🍓 , seeds, nuts and a drizzle of raw honey 🍯 in a jar and ready to go. Really yum! 😋 and I am so cherishing these 10 nourishing minutes. Don’t have leftover porridge? Just soak your oats in non dairy milk of choice overnight and same-same 🙌🏼😋 Happy Monday all, K xx

Stir-fry bar (choose your veggies)
• PROTEIN: Tofu
• BASE: Brown rice
• SAUCE: Shanghai ginger garlic mushroom sauce (light on the sauce) .
• VEGGIES: cauliflower, broccoli, shiitake mushrooms, yellow squash, water chestnuts, and red bell peppers .
*my favorite part is that you choose your own veggies and fill the bowl as high as you can! We all know I’m a veggie lover, so the more the better

They are FULL of antioxidants (raw cacao), healthy fats (chopped almonds, almond flour, coconut oil), quality Vegan chocolate chips, and fibre (flax egg). I got the recipe off the back of a Kirkland almond flour bag and messed with the recipe a little putting half the sugar in and using coconut sugar instead of white or brown sugar and used a flax egg (1 tbsp of ground flax mixed with 2.5 tbsp of water). Put the batter in a mini muffin tin instead of a square pan.
