Ngl feeling a little miserable this morning bc my foot is sore and the pain woke me up in the night so I slept crappy and I was unable to do my usual Tuesday 10 miles 😩 so I decided to swim instead but even that started to hurt and I stopped after 5 mins... I’m sad in case I didn’t say that 😞 trying to manage feeling guilty about missing a session, feeling so upset im not hungry and a busy morning 😕 so I have just managed to finish a plain simple overnight oats w/ fresh raspberries and found time to make sure I see a doctor about my foot later 🤞hope everyone else is having a better Tuesday!

Curry! 🌶 Saturday night in after a day of sorting out so many life things (like a new phone yay cos I haven’t been able to receive phone calls only make them for like two weeks y) 💁 also I wanted naan and didn’t have any so improved with @warburtonsgf sandwich thins and it worked like a charm ✌️

Friday night is slowly becoming pizza night for me 😊 so happy to see so many others also having pizza last night, everyone deserves pizza at the end of the working week 😁 I used the @scharglutenfreeuk gluten free pizza bases again and added tomato passata mixed the basil seasoning, mozzarella, tomatoes, olives, prawns and homemade low fodmap pesto, omg it was so gooood! 😋

ngl two days of a low fibre diet and a weird breath test this morning and all I wanted when I finally got home was just vegetables. tonnes and tonnes of vegetables. I managed to make a sweet and sour style sauce and make some rice too. but the point is vegetables. 🙌

Who loves lemons?? 💕 Our apartment here in Italy has an orchard FULL of lemon trees! I’ve been picking lemons and using them to flavour my water, tea, rice, pasta, salads, soups and avocado smash everyday! I really want to make a #lemon tart or lemon meringue pie, but we don’t have an oven here 😭. Lemons are so versatile and can lift the flavour of any dish or drink! Recently my dad has been advised by my gastroenterologist to start a low FODMAP diet after a few months of gut problems. Like most, my dad (who is 55) has never had but problems before in his life and navigating a new diet to work out food triggers is a difficult task to manoeuvre.
I remember when I was told for the first time that a lot of my favourite foods I couldn’t eat anymore, and was given a list and told I was limited to only those few foods handed to me. It’s scary and it’s intimidating and definitely leaves you feeling helpless.
But having survived a FODMAP diet for over a year before introducing many foods back in, I hope to show that FODMAP is doable and achievable and it can still be delicious!
Inspired by my dads own recent struggles, I’m going to make an effort to post more delicious FODMAP friendly foods that are also wholesome and comforting to show that it doesn’t have to be boring and plain.
Here I have buckwheat soba noodles, with diced salmon, green beans and a little bit of broccolini cooked with garlic oil, tamari, ginger and rice-malt syrup 😋

During my recent travels to Split, Croatia, we were exploring the old town when we stumbled across a Chinese restaurant. (You may, or may not, know that I’ve been travelling Europe for nearly 2 months now and I’m craving Asian food badly!!). We stopped to look at the menu, which was rather confused with an assortment of dishes of different Asian origins 🤔. I had my reservations about the restaurant, but in the end decided to order a katsu chicken sushi #burger 🍔... which turned out to be the BEST DECISION EVER 🙌🏽. I had never had a #sushi “burger” before and was surprisingly pleased about the one I was served. The rice bun was lightly crispy on the outside and soft and fluffy on the inside and held together perfectly (surprisingly, the rice was not loaded with added refined sugar). In between the rice bun was a piece of deep fried katsu chicken, a chilli mayo and some salad leaves. It was a quick on the go meal which allowed me to continue to explore the beautiful city of Split. Who thinks that I should try to recreate this at home and share my recipe?? 🤷🏻♀️ #nourishwithkim

Ok so I’ve done something a bit weird here but my accident has turned out amazing ☺️ the curry is a mix of a tonne of spices, garlic infused oil, mashed potato, cod fillet and basa fillet. ✌️ mash as curry is weird I know but trust me omg so good carb on carb dreams are made of this 🙈 also I miss vegetables roll on Friday and the end of this low fibre crap. Also FOOTBALL STRESS GAHHHHHH
