THIS IS A HAPPY STORY ABOUT CHRIS AND HIS LOVE OF PIZZA... Chris has always loved pizza. However as he reached his late 20’s his gut began to protest. Abdominal cramping, bloating, irregular bowel movements, unexplained weight loss and a general feeling of being unwell raised some red flags. After a lot of prodding, poking and testing, Chris was diagnosed with Crohn’s disease (an inflammatory bowel disease). .
Initial dietary advice (from an Accredited Practicing Dietitian!!!) consisted of toasted cheese, oats, Ryvita, bananas, wraps, rolls, and an occasional pasta dish. Thankfully it was at this point that our paths crossed. Contrary to the initial dietary advice, Vicky got Chris to adopt of whole real food diet, low carbohydrate, healthy fats, good sources of animal proteins and loads of veggies. .
It’s been 9 months and Chris has recently been diagnosed as being in remission from his Crohn’s disease. .
Best of all, Chris still gets to enjoy eating Pizza. He sent this picture to us this evening of his dinner. All the usual delicious toppings on a “fat head pizza base” (ingredients = mozzarella, almond flour, cream cheese, egg).

Meal prep done ✔✔✔ kids lunches packed, 2 days bento style 'keto' boxes packed for me, the husband takes a protein shake (more on that soon) so he is sorted now I just put school bags out and get the kids to get there clothes out and we are organized ☺ This foodie has ANXIETY issues and it totally manifests in OCD type behaviors like over the top organization and routines so before you scroll through my page and think this chick has her shit together I am here to tell you I definitely don't and in the spirit of keeping it real I have no shame in putting it out there that I take medication for it which makes a massive difference for me. It's that time of a Sunday......SMONDAY 😂 lucky I love going to work
Found this at Coles so decided to try it out. It’s like milk, but it’s not lol. Sounds like a good idea lol, but have only used in cooking so far, and it’s been fine. Much darker and browned in colour than milk lol, but I will try it out with my tumeric latte mix soon too. Not too sure on the macros, but I think it’s 1.9carbs for 250ml as opposed to milk being 12 carbs.
On the road again 😁 #allcardsonthetable : if you've ever doubted that clean eating could improve your quality of life then I challenge you to eat clean for a month.
This past month I focused on getting my eating right. I went back to a low carb-high fat way of eating which is known to reduce the amount of inflammation in your body, promote weight loss, and improve gut health. Some observations during today's run:
*my pace is faster than at my last two races, despite the fact that I haven't been training
*no back pain 😁 which has been plaguing me for almost a year
*easier breathing (always a plus)
All in all I'm happy with how today's run went. And I'm seeing the benefits of a healthier diet. Happy Sunday ☀
Quick Sprouts haul!
I was able to go off to sprouts all by myself (no kids or hubby) and took my time scanning each isle for keto friendly products and checking out each nutrition label. I have to say that sprouts is the most keto friendly store I’ve been to. I was really surprised by how many things they had.
I found “keto protein powder” which I did not purchase, but thought I was neat to see the words KETO in a store 😂
I got the ingredients to make @mrsceo_j chia seed pudding, which I’ve been drooling over for weeks now. I’m stoked to see how good it turns out!
I’ve been on the look out for a good protein powder that is keto friendly. I really have had a tough time eating meat lately. So I stumbled upon sprouts brand vegan protein powder that isn’t bad at all! It’s only 2g net carbs per serving, and 1g sugar which comes from stevia and monk fruit! So I bought individual packets for me and hubby to try before we spend a good chunk of change on the whole canister 💡
FINALLY got my hands on some Lily’s chocolate 😌🤤
THEN I found a probiotic drink that I consider to be keto friendly. I miss kombucha so much, and really tried to find a kombucha that was keto and really came up empty handed.. I was disappointed. Right next to the boucha I found the probiotic drink, and with only 1g carb and 1g sugar (which is stevia) per serving I had to pick it up to try! Maybe it’ll cure my want for kombucha 🤷🏻♀️ Of course I picked up the usual bacon, steaks, heavy whipping cream, avocados and veggies.. but I just had to share some of the not so regular scores! 💃🏻💃🏻💃🏻
confused on what sauces you can have at a poke restaurant?
rule of thumb is to ❌ anything sweet.
limes are higher in carbs but are still acceptable in small quantities.
luckily @pokiliciousofficial posted the ingredients in their sauces.

Totally almost forgot to post tonight's dinner. Chicken fajitas using our own seasoning blend, avocado, @bobbysalazarsalsa medium salsa, cheddar and avocado on a mission low carb tortilla..
We also got the chance to sample @oooflavors low carb flavor concentrates. The 2nd and 3rd pictures are our attempt at Patrick's favorite cake - yellow with chocolate frosting. We used the Vanilla Cupcake flavor from @oooflavors in the cake and topped it with keto ganache. No recipe yet because while the flavor was good, the texture wasn't up to our standards. .

You may not know, but I actually worked at Maccas for 10 years prior to opening my own cafe (which is where I started low carb baking!) I absolutely love and appreciate every day what Maccas/hospitality taught me - the work ethic, attention to detail, striving to exceed targets, resilience and ability to find a solution in any kind of chaos!

it's possible to eat poke and stay keto. crab meat is always an iffy choice because it could be filled with unfriendly keto ingredients. beware! Just pick the salad option. Proteins are 👌🏽. Stay away from anything fried. I will post the ingredients listed in their sauces next.
You guys it’s so amazing to meet more of the #ketofam in person. We really should try to do this more often. @ketobubblyjess came and met us with her husband and kids. They were awesome! Just wish we had more time with them. Thanks Jess for braving downtown Boston to hang with us for even a little while!
