Jason made dinner! And like everything Jason does it was somehow simultaneously really simple and really *extra*. He came up with this skillet chicken with marinated artichoke hearts, tomatoes, and mozzarella, years and years ago and tonight he may have perfected it.
I contributed the Hampton Hills seasoned brussel sprouts from Costco that you can microwave because microwaves are awesome.
I swear there's some chicken under all that cheese! This was a challenging meal to put into mfp because I weighed it but I had to guestimate how much of each thing went into that weight. Whatevs, I was heavy handed with my guessing and I still came out under my calories. This is the first time I've fastidiously tracked my food on both days of a weekend in forever. .
I weighed in at under 190 lbs for the first time in like ten years, I think. It's a big deal but, watch, tmw I'll randomly weigh like 194 or something. .
I'm sharing a video of what Polo does when I talk to him. It's so weird and makes me wonder if he's really listening for words he understands or what.
Keto Cheddar Biscuits!
I always need something to snack on through the day! .
1 Cup almond flower
1T salt,pepper, banking powder, garlic powder
4T Grass fed Butter
1/2 C sharp Cheddar
1/2 heavy cream
Add 1/2 C sausage for extra fun .

Sorry I’ve been M.I.A Took advantage that my boyfriend was home a lot this week and spent some time with him. Anyways.. lost -2lbs this week and I’m so happy about it 😊 7lbs more!! Sorry I’ve been #mia this week. Jordan’s family had a medical emergency that was actually pretty scary. That was way more important that anything on #Instagram . Even though we’ve had a very stressful week things seem to be going in the positive direction now. Thanks everyone who reached out to me for well wishes.
On a happier note, my work Holiday Party was on Friday night and Jordan was my super hot date. 😘 Our photo booth photos are super boring, but on point for us! We don’t need any props to look cute! Mason Jar Double Chocolate Brownies
1 1/2 cups almond flour
1 cup xylitol
1 package of Keto Swiss Keto
1/2 cup cocoa
1 tsp. HimalayanPink Salt
1 tsp. Baking soda
1/2 cup stevia sweetened baking chocolate chips
5 tbs. butter, melted
1 tsp. Vanilla
IN THE MASON JAR: Add the xylitol. Tap the jar several times firmly to get the sugar in one layer. Add the cocoa powder and Swiss Cacao and again, press to get in one firm layer. Add the almond flour, baking powder, and salt and again compress. Add the chocolate chips on top. Seal the mason jar, add a ribbon with a miniature whisk (if desired), and attach the the following directions
Preheat the oven to 350 degrees. Generously grease a 8×8 inch baking pan. Add mason jar brownie mix into large mixing bowl and stir to combine. Add melted butter, eggs, and vanilla extract. Mix well. Spread into prepared baking pan. Bake for 25-30 minutes or until a toothpick when inserted in center comes out slightly sticky. Cool completely in pan before removing.
