CHEESE BREAD SANDWICH
This recipe is for the Cheese version of my bread. I will share the plain version soon.
I kid you not, this particular version tastes like a rich creamy sandwich, fish pie and meat pie all rolled in one.
FOR THE BREAD: These are the ingredients: 🧀 1 1/2 tablespoons of unsalted butter
🧀 2 tablespoons of coconut flour
🧀 1/2 teaspoon of baking powder
🧀 1 large egg
🧀 1/4 heaped cup of grated cheddar cheese
🧀 1/8 cup of grated mozzarella cheese 🧀 A pinch of garlic powder
🧀 A pinch of dry chilli flakes
🧀 A pinch of dried parsley
1. Melt butter in microwave for 20 secs.
2. Add raw egg, baking powder, coconut flour, cheeses, garlic powder, chilli flakes and parsley.
3. Mix all the ingredients together thoroughly and pop into microwave for 3 minutes.
4. Bring out and turn mug over on a flat board and allow to cool.
5. Cut into round slices.
6. slather on sandwich paste on each alternate slice.
7. Pile each slice on top of the other. Cut into 2 sandwiches and serve.
FOR THE SANDWICH PASTE: These are the ingredients... This is how I make the paste for my low carb sandwiches. I've got sardines, cucumber peeled and finely diced. Finely chopped red onion, sausages grilled for 3 mins in the microwave and grated. To it, I add a full tablespoon of healthy mayo, mix and layer it on my low carb bread. You can also prep this mixture and store in the fridge. It comes in handy when you want to make a quick snack.
NOTE: Imagine breaking your IF with this and a tall glass of Greek yoghurt/ frozen berries smoothie or a cup of coffee? Tell me how hunger will near you? Any hunger that nears you after this must be specially composed by your village people and not, Leanation.😂 (Some microwaves can cook it in 90 secs, but I found 3mins to be ideal, so check which timing is better for you.)

1. Prepared BIAM crust
2. Slathered sauce from leftover butter chicken all over it.
3. Topped it with cheese, leftover butter chicken, onions and spinach.
4. Baked until cheese was melted then broiled a few minutes.
So delicious... so quick.

3 tablespoons almond flour or 1 tablespoon coconut flour
1 tablespoon butter or oil
1 medium/large egg
1/2 teaspoon baking powder
Melt butter in a microwave-safe bowl or ramekin. Add the almond flour, egg and baking powder to the butter. Beat with a fork until completely mix.
Microwave for about 90 seconds, until firm. Run a knife along the edge and flip over a plate to release. Slice in half, then toast in the toaster or in a skillet.

My relationship with food has been a rollercoaster to say the least from being 120kg and using food as a comfort to being 78kg and seeing food as the enemy.
Am I happy at my current weight? Not entirely no.
But do I have a healthier relationship with food, with exercise and my body? Definitely!
And part of that relationship has been learning how to enjoy food again without binging. I absolutely still go out and blow out the macros everyone needs a cheat meal! But on the days I want something sweet I try to find ways to get that fix within reason.
Pictured we have @hermanbrot #lowcarbbread turned into delicious french toast by adding 2 eggs, a dash of almond milk, some ground cinnamon, a dash of nutmeg and a sprinkle of @natvianaturalsweetener. I cooked it in a bit of @nuttelexspread then topped it with salted caramel @froproicecream, some frozen raspberries and some #sugarfreeblueberrymaplesyrup
Don't get me wrong this is still a Sunday morning treat, but it's a healthier way to treat myself.
Cause at the end of the day life is all about balance!
I just found a pancake or corn muffin replacement for keto woe. I made macadamia fat muffins with KG butter and Lakanto monkfruit maple syrup! I think I can convince my daughter she won't have to be deprived of her favorite food! Bomb diggity Garlic & Herb Boursin Sour Cream Biscuits. #letthatsinkin
This is my entry for the #ketochristmas2018 side dish. These are light and delicate, yet rich and dense at the same time. They fool you a bit with their delicate crumb, but they are DEFINITELY satisfying and rich. Made much like traditional biscuits, the key is COLD butter and to handle the dough as LITTLE AS POSSIBLE, especially with your hands.
200g blanched almond flour
11g @bobsredmill coconut flour, plus more for dusting
3/4 tsp sea salt
2 tsp baking powder
1/2 tsp garlic powder
1/2 a round of @boursincheese garlic & herb flavor
1/2 cup @daisybrand sour cream
Put the stick of butter in the freezer.
Meanwhile, put dry ingredients into a large mixing bowl, blend and set aside.
Place the boursin cheese in a small mixing bowl and cream it with the back of a spoon to get it softer. Add in sour cream and blend well.
Place a box grater right into the large mixing bowl of dry ingredients, then grate in 4 TBSP of the frozen butter. Mix into the flour just enough to evenly distribute, then add in wet ingredients. Mix until just combined, loosely shaping dough into a flat-ish rectangle. It will be very moist.
Preheat oven to 400 degrees.
Turn dough out onto a piece of parchment paper dusted with coconut flour, then dust top of dough with coconut flour as well. Quickly pat down so top is flat, then bring up sides of parchment paper to cover the top. Make sure parchment is snug, then use the side of the palm of your hand (pinkie to wrist side), to gently push dough into an 8" x 4" rectangle. I go from the center out to the sides.
Cut into 8 squares, place on parchment lined cookie sheet, then bake for 13-14 minutes. Top and bottom edges should be golden brown.
and to break my fast at 4:50pm I had cheesy scrambled eggs pan cooked, 2 rashers of bacon and 2 slices of my bread from @thelowcarbandketobakery 🍞🥓🍳 such comfort food when you’re ill 💙
I’m down 1lb this week even though I wasn’t aiming to lose anymore weight but I guess that’s a perk to being ill! 🤣
The last few days I haven't had a huge appetite and have been under calories... Today, I was sooooo hungry so I made all the things for breakfast. (Well, all the things we had left in the fridge anyway 😂)
-Eggs with sharp cheddar & sour cream
-90 second keto English muffins with cream cheese (swipe to see that gorgeous texture 🤤)
-All sprinkled with everything but the bagel seasoning (Trader Joe's)
Please don't judge the appearance of this plate 😂😂 those who've followed me any amount of time know I'm incapable of cooking eggs. And we're out of butter which made it worse, and we only have brick cream cheese left which isn't exactly spreadable lol.
There's lots of 90 second bread recipes out there but this one comes closest to an english muffin imo:
90 Second English Muffins:
1 tbsp butter, melted.
Mix with 1 egg.
Then add 1/2 tsp baking powder and mix again.
Then 1 tablespoon coconut flour,
and 2.5 tablespoon almond flour.
Mix well and dump into a 4" English muffin shaped dish- ramekin, pyrex, whatever. I use a plastic dish from Amazon that's supposed to be for microwaving eggs (bonus, if I microwave eggs for my sammich after making the bread then they're the perfect size). Bump it on the table a few times to get the bubbles out. Microwave 90 seconds, slice in half, and toast.
🇬🇧 Woke up feeling a lot better! Since intermittent fasting I crave a lot more savory breakfasts. This is one of my favorites: 2 slices low carb bread, soybeans in tomato sauce with italian seasoning, nutritional yeast and garlic 😋 (high protein!) Fijn weekend! 💪
🇳🇱 Voel me vandaag al een stuk beter dan gisteren! (Zou het de kurkuma thee zijn geweest? 🤔) Sinds ik aan intermittent fasting doe, heb ik vaker zin in hartige ontbijtjes. Dit is één van mijn favorieten: 2 sneetjes koolhydraatarm brood met sojabonen in tomatensaus, gekruid met italiaanse kruiden, knoflook en edelgist. 😋 (eiwitrijk!) Fijn weekend! 💪

-2 CS queijo cremoso
-50gr de parmesão ralado
-sal,alho em pó
-2 CS azeite ou manteiga ghee
Acrescentar 1cs de fermento em pó
Polvilhar mix de sementes e sementes de chia por cima
Forno +-30 m

1/4 cup Bake In A Minute mix
1/4 cup chopped almonds
1/4 cup pecans
1/4 cup unsweetened coconut
1/4 cup pumpkin seeds
1 tbsp sesame seeds
2 tbsp of sweetener
1 tsp. of ghee or butter
1 tsp. cinnamon
Mix all ingredients until well incorporated.
Spread on a parchment lined cookie sheet and bake at 350F on the upper rack, for approx. 5 minutes, tossing periodically (to avoid burning), until golden brown.
