Started Sunday in keto and in style 💖😎 getting my dose of antioxidants from 20g of 90% lindt and my micronutrients from 80g of strawberries!
👉🏻 berries and avocados (which are also a berry... never mind 😂) are the most keto friendly fruits! 100g of strawberries gives you an average of 6 net carbs and many many vitamins, specially vitamin C 💪🏻 👉🏻 avocados give you an average of 1.7-2 net carbs per 100g, always remember that apps such as my fitness pal show TOTAL carbs, which includes fibre, not net carbs! You have to manually subtract. 👉🏻I didn’t want to include in the picture so it doesn’t look weird 🙈 but I also have here with be a package of baby spinach and some thin cheese slices, the cheese being a good source of protein for my morning 💪🏻

Food isn’t always visually #instaworthy but to me it always tastes #instalicious . Felt like pizza but without the crap so a quick google & voila. The base is by #yourstruly (butchered a few recipes and it worked), topped with crap free smoked ham & cheese. 👩🏻🍳 Yesterday I finally whipped up a batch of @180cakesau brownies.
OH. MY. GOODNESS - these are a total low carb game changer! Not only are these absolutely decadent and moist, they are sugar free, gluten free, preservative free and grain free and come in at only 1.6g of net carbs for each brownie (decent size too) !! I made these with butter, however you can also make them dairy free!
I also picked up some vanilla cupcake and chocolate cupcake mixes that I cannot wait to try out. Thank you @180cakesau !!
🐥 Weekend weigh in 🐥
A gain this week! This is the 3rd gain I’ve had since starting keto 37 weeks ago and it’s only a small one. I can think of numerous reasons why I didn’t lose this week - but that’s ok!
I’m weirdly ok with this actually - previously if I had a gain, I’d cry and be depressed for days. Not today! I told Dan I gained weight.. he looked terrified about the impending tears.. but then I just casually said ‘that’s cool’ and continued to get ready. Dan looked relieved 😂
I feel that my mental health, whilst it isn’t perfect, it’s in a far better position than it was 37 weeks ago. This little keto life of mine has brought so much than weight loss and it just blows me away constantly.
Also, I’ve been getting a lot of messages and comments from so many really beautiful people telling me that they are motivated and inspired by this little journey I share with you all - which is honestly one of the hardest to believe things for me and I am so humbled by it. So I think it’s important to share my thoughts and feelings on gaining weight (it sucks but it’s ok!) - to show that behind these screens we are real people and we aren’t perfect and you can eat low carb and stick to ‘keto friendly’ foods and still gain weight.. it happens, and even though it may not be as inspiring as a loss, it’s real and I’m only here to be the real me 🙂

If you live in Australia, these are my recommendations for keto friendly products to make cakes, muffins, pancakes 🍩🙈
👉🏻 coles and woolies every week have at least one drinking chocolate powder on special, make sure to always check and compare!
👉🏻 both supermarkets also alternate weeks when lindt is on sales, so you can mostly get it for $3 instead of the original price ($4.25), make sure to always be prepared to go shopping in both places! 👉🏻 I have coconut flour but I find almond meal tastier and it absorbs less water, making the food less dry, and you can use it in the same proportion as you’d use wheat flour (aka 1 cup of wheat flour will be equivalent to almond meal)
👉🏻 almond meal it’s pricey everywhere, I like the macros one more, but you can also find a linseed almond mix in aldi much cheaper
👉🏻 every now and then Natvia goes on special, so I always make sure to stock up 😊
👉🏻 cocoa nibs I get from any health shop (I haven’t found it in a supermarket yet)

KETO 5 MINUTES MICROWAVE CHOCOLATE CAKE 😻🍫🍩
All you need is:
👉🏻 20g of almond meal/flour
👉🏻 20g of erythritol/xylitol 👉🏻 1 egg
👉🏻 15g any sugar free chocolate powder or cocoa powder 👉🏻 1 tea spoon of baking powder • mix all the ingredients in bowl and leave it in the microwave for 2 minutes
For the icing: 👉🏻 melt 10g of dark chocolate (I use lindt 90%) in the microwave for 1 minute 👉🏻mix it with 5g of erythritol and 10ml of almond milk or coconut milk 😊 on the top, I put some cocoa nibs and 2 raspberries!

Some days when I feel like eating something different I grab some portobello mushrooms 🍄 👉🏻 first I fry the filling, I usually use zucchini, tomato, spinach friend in coconut oil and cheese, then I fry the mushrooms on both sides (approximately 2 minutes each side in medium heat) and finally I just add the filling in it 😋
👉🏻 did you know that one whole portobello mushroom has only 3 g of net carbs? 👉🏻 it’s packed with phytonutrients, which have shown to have anti-cancer and anti-aging properties
👉🏻 they’re also rich in CLA (conjugated linoleic acid) which has heaps of anti inflammatory effects, also reducing cancer risk
👉🏻 it’s very rich in antioxidants such as L-ergothioneine (ERGO) which helps fighting chronic inflammation, protecting mitochondrial DNA against neurodegenerative diseases such as Parkinson and Alzheimer’s 🌱 IT’S A GOOD MEAT REPLACEMENT FOR VEGANS/VEGETARIANS, as they’re relatively high in protein for a plant-based low carb source 😊 • REFERENCES: Dr Axe and Dr Mercola websites • However the mushrooms in the pic are my creation 😍
☕️ Home made almond milk latte ❤️ Taking a bit of a mental health day today. After moving house I haven’t really rested and I’ve worn myself out which has effected me more mentally than physically.
I’m a very clean, neat and organised person, so the chaos of moving really made me feel unsettled which has caused a bunch of anxiety over the last few days. I also got my period pretty badly yesterday so that’s just adding fuel to the fire (day before weigh in day too 😞) But I’m ok! I just wanted to let y’all know that old smiley over here has not so smiley days - I think it’s important to share my happy times with you along along with the not so happy.
I’ve made sure I’ve rested all morning, had a late shower, slathered some rose Hip oil on my face, popped on some comfy clothes and I’m about to bake some brownies (stay tuned for that - I’m excited!) - I’m already feeling better.

I’m not a big red meat fan, but every time we dine out (and it’s not a special ocasional when I wanna have a keto-free food) I always stick to meat (including chicken and finish) and salad/veggies. 👉🏻 I always make sure they don’t add any bread crumbs
👉🏻 as I said, if it’s not a day you wanna be keto free, make sure the sauce doesn’t sugar/honey/maltodextrin (which is just sugar with a fancy name).

😍 CAULIFLOWER PIZZA 😍
This was the easiest recipe I’ve ever tried! All I did was:
👉🏻 cut around 200-250g of cauliflower into tiny pieces 👉🏻 put all of it inside of a dry kitchen cloth, close it and squeeze until you get a lot of water all of it.
👉🏻 put it in a bowl, add 1 egg and 1 cup of shredded cheese 👉🏻 if you wanna make it more solid, add a bit of almond meal until you reach the ideal consistency 👉🏻 mix all of it with salt and the spices you like (recommended: oregano, parsley, thyme, black beber) 👉🏻put the dough in the oven for around 10-15 minutes around 200 Celsius degrees, until it gets consistent
👉🏻in the meantime, start deciding what you’re gonna use as a filling (in my case, I fried zucchini, asparagus and mushrooms 👉🏻once the 10-15min is finished, put the filling on top, then a layer of shredded cheese 😋 put it back in the stove and leave it till it melts! ❤️
Cauliflower, asparagus and mushrooms give you plenty of micronutrients to help signaling satiety levels, plus the fats and proteins of the egg and cheese will also help you get full! Very filling and nourishing meal 👏🏻

Very simple and delicious lunch! Fried veggies with chicken, portobello mushrooms with cheese and egg sandwich 🤩
To make the egg mushroom, I mixed:
👉🏻 2 raw eggs with spices 👉🏻 25g of shredded cheese 👉🏻 placed them all in a little tray and put it in the oven 180 degrees for 5 to 10 minutes (make sure to check till they are in the consistency you want) 👉🏻 after it, cut it in a half and put a slice of cheese and tomato in the middle 👉🏻 to finish, I put the sandwich in a frying pan with a little bit coconut oil (you can alternatively put it in a toaster!) • this is a very easy alternative to original scrambled eggs in case you get a bit tired of it! 😊 #lowcarb#lowcarbaustralia#ketoaustralia#lowcarbhighfat#ketogenic#ketoaus#ketoaus#eggs#eggsandwich
MY KETO EGGPLANT LASAGNA MADE SIMPLE 😋
Very easy recipe and keto friendly to make for you and your whole family! 👉🏻 cut 2 or 3 eggplants (depending on the size of your tray into very thin slices) and fry them with coconut or avocado oil until it’s a bit roasted
👉🏻 make your tomato sauce/paste or get a low carb one. I make mine by putting 2 tomatoes in the mixer with 1/2 cup of coconut cream, lots of salt, pepper, rosemary, parsley and oregano, with a bit of stevia (optional) to remove the acidic taste :) 👉🏻 put on the tray one layer of eggplant, then one layer of tomato sauce, one layer of thin cheese slices. Repeat it 3 times 👉🏻On top, I put shredded cheese, spices and pistachios 😍💖

After doing crazy diets for years, the best thing I’ve learned was to always leave your leftover foods for you to bring when you go out! This will prevent you from eating things out of your diet when you are out of home or in a rush and making you feel frustrated for sabotaging your goals😫

👉🏻 one thing that really made me start having veggies was to fry them a little bit with coconut oil and spices 😫 I used to hate having all sort of “green foods”, that was the only way I started eating more of them! 👉🏻 Zucchini specifically when you cut it into little wheels and fry them they turn VERY crunchy, like chips! 👉🏻🏩 HEALTH FACTS ABOUT ZUCCHINI: 1 zucchini gives you on average 33 calories, providing you with precursors of vitamin A (such as carotenoids and lutein) with will help prevent • cell aging • vision disturbances • increase antioxidant capacity of your body
👉🏻it’s also rich in Vitamin C (great antioxidant, needed for immune system collagen synthesis, etc) and Magnesium, which is a cofactors for more than 200 reactions in your body and most people are deficient on it!

👉🏻 add 1 cup of almond flour
👉🏻 1 tea spoon of baking powder
👉🏻pre heat the oven at 180 degrees and leave it there for 18-20minutes

😝 I found a way of replacing it with KONJAC NOODLES 👉🏻 they are sold under heaps of names in all countries, it could be as miracle noodles, shirataki pasta, Konjac rice, etc
👉🏻 just make sure to read labels to avoid wheat and other preservatives 😋
👉🏻 some people find it too “plain”, in my case I always add salt, cayenne pepper, parsley and oregano to give it some taste! Plus a low carb tomato sauce (that I can post here later on) 😍
• Did you know that Konjac is a Japanese plant mostly made of soluble fiber and water? 100g of it gives an average of 10 calories 🙊 and it’s keto friendly!! 👉🏻here in Australia I find them in the healthy section at Woolies, Coles and IGA
Keto porridge for breakfast this fine Thursday morning 🤗
This was so delicious I actually inhaled it, after having porridge for breakfast on Sunday morning at a friends place I wondered if there was a way to make it keto. There was of course by using hemp seeds and shaved coconut chia seeds and some almond flour. Topped with a dark chocolate fat bomb and strawberries 🍓 this was so yummy and I’m extremely full after that. I don’t normally eat breakfast I feel like fasting has speed up my already fast metabolism but hey I’m not complaining when I get to eat delicious food like that 🤗💞🙏🏻

I’m feeling pretty awesome today after completing my fast. Today I’m making sure I fuel my body with a whole bunch of goodness. This morning for breakfast I had smashed avocado with red onion lemon juice salt and pepper sliced cherry tomatoes and baby spinach. Keto Macadamia and Orange Cookies
I used @fatforweightloss delicious chocolate chip cookie recipe but I swapped the choc chips for macadamia nuts and I added a couple of drops of @doterra wild orange to give it a refreshing orange taste. Delish 👌
Now I’m off to the park with my munchkins 🤩
